Honeysuckle, peach, jasmine. Ripe, perfumed and exotic, viscous and heady – but, at its best, with a mineral, saline line and phenolic grip that keeps its hedonism in check. Condrieu is a wine like no other – and one that couldn’t be much less fashionable if it tried.  And yet, its top bottlings are incredibly hard to find. The likes of Georges Vernay’s Coteau de Vernon or Guigal’s La Doriane fly out on release. Chapoutier’s Coteau de Chery is absorbed effortlessly by France’s finest restaurant wine lists. The iconic Château-Grillet has almost vanished from the world of retail since it was taken over by Artémis. Production might be limited – but it’s also clear that there’s more than enough demand for these very special wines from the Northern Rhône.  The appellation and its unique expression of the Viognier grape has a rocky history. The Romans were the first to cultivate vines in this corner of the Rhône Valley – and they’ve been there ever since. By the 17th century, the wines from the steep slopes around the village of Condrieu were renowned throughout France. In 1853, there were 143 hectares of vines in the region – but then plague and pest arrived: powdery mildew swept through the vines, swiftly followed by phylloxera, decimating vineyards across Europe. With two World Wars, as well as the industrialisation of the valley, the workforce fled the vines for more stable, salaried factory work: looking up at the back-breaking angle of its slopes, entirely unmechanisable, it’s easy to see why the region’s vineyards were almost entirely abandoned. When the Condrieu Appellation d’Origine Contrôlée (AOC) was created in 1940 (encompassing the villages of Condrieu, Vérin and Saint-Michel-sur-Rhône), just six hectares of vines remained.  Only eight of the potential 170 hectares were planted in the 1960s and Condrieu’s future looked uncertain. But one vigneron was quietly working to change that.  Georges Vernay – whose father Francis Vernay had helped create the appellation after planting his family’s first vines on the Coteau de Vernon in 1937 – believed in the alchemy between Condrieu’s biotite granite slopes and the Viognier grape. At the time, the region was best-known for its stone-fruit – with a kilo of peaches worth significantly more than a kilo of grapes. (The area is still known for its fruit today, Jean-Marc Roulot sources the apricots for his eau de vie and liqueur from the Rhône.) When Georges Vernay uprooted orchards to plant Viognier, people called him a fool.  “No one believed in Condrieu anymore, or in Viognier anymore,” Philippe Guigal – the winemaker and third-generation at the helm of his family’s company – tells me. Philippe’s father Marcel was another pioneer of the region, persisting in making fine wine from the region’s uneconomically steep terraces.  Vernay kept his faith too – championing Condrieu, but also Viognier. Almost all the Viognier in the world was planted in Condrieu at the time, and Vernay supplied cuttings to those outside the region – encouraging others to plant this distinctive grape. At the same time, he championed the region with his age-worthy wines, especially the now-iconic Coteau de Vernon.  By 1986 there were still only 19 hectares of Condrieu planted, but Vernay’s battle started paying off – wine-lovers fell for Condrieu’s rich, textural whites and plantings rocketed. There were 38 hectares of vines by 1992 and 217 by 2024. But it wasn’t just in the Rhône that Viognier finally found its footing – plantings appeared in the Ardèche, the Languedoc, Australia, California (especially with the wave of Rhône Rangers, led by Randall Grahm) and beyond. Viognier’s lustre had been restored.  Although now much more widely planted, it’s only in Condrieu that Viognier reaches such heights. Here, on steep terraced slopes in this hallowed corner of the Rhône, the vines sit almost directly on the granite bedrock – a specific type of granite laced with biotite, an iron-rich black mica. It’s this biotite granite that defined the original Condrieu appellation created in 1940 – encompassing vineyards around the villages of Condrieu, Vérin and Saint-Michel-sur-Rhône. The monopole appellation Château-Grillet (sadly unable to comment for this feature) sits within Condrieu, classified four years prior, and sharing the same biotite granite. The iron in the soils is key, lending much-needed tension to the potentially flabby Viognier.  Finding – and keeping – that tension is key to the best Condrieu. And it isn’t about acidity per se, but a sense of freshness.   For Emma Amsellem – who works alongside her mother Christine Vernay at Domaine Georges Vernay, “It’s a combination of different things.” She attributes much to their farming (which is both organic and biodynamic), as well as working with old vines and low yields (normally around 27-30hl/ha). Maxime Chapoutier – who works alongside his larger-than-life father Michel Chapoutier at the eponymous empire – echoes how important vine age is for Viognier, much more so than Syrah or Marsanne, he says. He finds Viognier starts to produce fruit of significantly more complexity at 20-30 years of age, but the vines can also lose interest if they’re too old.   “The beauty of the balance of Viognier comes from its dry extract – from its bitterness,” he explained. It is, Chapoutier says, the hardest grape to pick – harvest too early and you won’t have the necessary dry extract, but harvest too late and the aromatics are too much. Ansellem also emphasised the importance of picking date: although you want to retain as much natural acidity as possible, you also need Viognier to be sufficiently ripe – and the window is getting smaller and smaller with climate change.  The challenge, as Philippe Guigal puts it, is to keep the richness, the full expression of Viognier, as well as its drinkability and salinity. He introduced a Champenois-style cycle, very long and slow, for their Condrieu – something that helps bring out the grape’s aromatics and structure, a concept echoed by both Ansellem and Chapoutier, working with Viognier’s natural thick skins. Chapoutier also highlighted the importance of oxygenising the must and then racking as little as possible, retaining the lees to help build on the grape’s “noble bitterness”.  Guigal is also particularly careful with fermentation temperatures, feeling it is key to keep ferments under 12°C to avoid any potentially heavy aromas.  It's that dry extract that allows top Condrieu to age so beautifully too. Chapoutier explains how he likes to wait at least five years before opening their Coteau de Chery, but it can age for 25, developing more layers of complexity – with notes of honey, lanolin, gingerbread and dried citrus peel. “A great Condrieu is a wine that doesn’t taste of Viognier,” he says.  Tasting through a flight of the region’s top wines last week was fascinating – from Chapoutier’s remarkably fresh, floral Coteau de Chery to the decadent yet mineral Coteau de Vernon from Georges Vernay. More than anything was perhaps seeing the response from those tasting – the wines far surpassing their stereotypical expectations. Not all the haters left lovers, but they certainly had a newfound respect for the style; and those that were already fans fell even harder for its charms.  There’s next to no room for further plantings in Condrieu, largely thanks to Georges Vernay’s efforts championing the region, and quality in the appellation is higher than ever before. The style of its heady wines will always be divisive – and perhaps that’s a good thing given how limited production of the best wines is. Its cool credentials may not quite have caught up yet, but it’s time to open up to the region’s opulent embrace – you won’t regret it.  Top Condrieu cuvées to look out for  Chapoutier’s Coteau de Chery: From a single parcel of vines between 40 and 80 years in age, this is aged entirely in old oak (larger, 600-litre casks). Production is tiny (often only two barrels) and goes almost exclusively to restaurants in France.  Georges Vernay’s Coteau de Vernon: This is just a stone’s throw (100m or so) from Vernay’s other single-vineyard, Les Chaillés de l’Enfer (literally meaning the terraces of hell, for its steep south-facing slopes). From the region’s most famous pioneer, the vines were planted in the 1930s and 1960s, in a natural amphitheatre, producing a profound expression of Viognier that ages beautifully.  Guigal’s La Doriane: Guigal’s top Condrieu is a blend of their top five parcels across the appellation, averaging 35 years in age, matured in 100% new oak – which is seamlessly integrated with the concentrated and powerful fruit.  Château-Grillet: The tiny monopole appellation covers 3.5 hectares of vines. Owned by the Artémis group (owners of Ch. Latour) since 2011, its wines are some of the most sought-after in the world, largely disappearing into wine lists.  Yves Gangloff’s Condrieu: Renowned for its voluptuous style, in all the best ways, this bottling from this famous winemaker is rightfully prized.  André Perret’s Chéry: Known also for their Clos Chanson cuvée, Chéry also comes from the Coteau de Chery, from a three-hectare plot of 70-year-old vines.  Ogier’s Les Vieilles Vignes de Jacques Vernay: Only 125 cases are made of this wine per year, making it incredibly hard to find.  Marie & Pierre Benetière’s Condrieu: Possibly even harder to find than their astounding Côte-Rôties, Pierre was inspired by and studied under Vernay before making his own wines.   Explore all current listings of Condrieu or read more Editorial 

The epitome of Viognier, Condrieu makes some of the world’s most remarkable wines – yet this appellation in the Northern Rhône came close to disappearing. Sophie Thorpe dives into its brush with fate and how producers manage Viognier’s natural hedonism to create wines that stand the test of time

The 2023 vintage in the Rhône was – like elsewhere in France – hot and dry, but not as hot as 2022. The preceding autumn was wet, but from January through to March 2023 there was practically no rain (indeed, not a drop fell between 21st January and 21st February).  Rain arrived in mid-May and there were frequent, small showers until the end of June, providing just enough water to avoid major water stress. Flowering and fruit-set took place without any issues, but as the rain showers continued, the threat of downy mildew and black rot arrived – and needed managing to avoid damage to the crop.  Late August brought a new challenge, with a heatwave that saw temperatures hit 40-42°C, lasting two weeks. There were reports of blocked ripening and young vines dying, but fortunately the weather cooled off and September offered a substantial diurnal swing in temperatures, helping retain aromatics and acidity in the run-up to harvest. The whites were largely brought in in August, before the heatwave had finished, while the red harvest took place over an Indian summer, with the last fruit in around mid-October.  The Northern Rhône faced additional challenges, with hail in Cornas, Crozes-Hermitage and Saint-Joseph, then on 18th September torrential rain – with over 100mm falling in one night. The northern part of the appellation avoided this deluge, with just 20mm.  Here’s what the critics are saying about the wines.  Jeb Dunnuck  Jeb Dunnuck is gradually releasing his reports on Rhône 2023, starting with Châteauneuf-du-Pape and Gigondas.  In Châteauneuf-du-Pape, 2023 is “another solid vintage”, he writes, offering “a bevy of ripe yet not excessive, pure, charming wines with loads to love”. He finds them darker-fruited and cooler than “the sunny, exuberant 2022s”, with a “soft, plump elegant style, and beautiful overall balance”. They are not intensely concentrated, he says, but “shine for their balanced, layered, seductive style”. They combine freshness and depth, and are “on a par, if not slightly superior to, the 2022s”, says Dunnuck, feeling they’ll also be longer-lived than the 2022s – comparing them stylistically to the wines from 2020, 2018 or 2012. While it may not be “truly great”, drinkers will find “a wealth of beautiful wines”.  As for Gigondas, he finds the wines “pure, elegant, beautifully balanced” – reminiscent of 2020 or 2012, “fresher and more elegant than the 2022s”. The vintage was the first in which whites were permitted in the appellation, and these come highly recommended – “beautifully fresh, focused, yet concentrated whites that show the limestone, mineral-like character of the appellation”.  Explore Jeb Dunnuck’s reports, notes and scores on his site (subscribers only)  Drink Rhône – John Livingstone-Learmonth  So far, John Livingstone-Learmonth has only published thoughts on the Northern Rhône in 2023, where he feels it is “good” if not “spectacular”. The reds have “reasonable levels of tannin”, while the whites are, he writes, “a definite buy”. In Cornas, he writes, the wines have an approachability, but don’t have “great stuffing or structure to match the really long keeping vintages such as 2015 or 2019”. He feels the wines will appeal to a modern audience, balanced with refined tannins and the best set to drink over 20-plus years, although selective buying is advised. In Crozes-Hermitage, this is particularly true, Livingstone-Learmonth advises, highlighting both mildew and hail, even if the best are impressive – with “snug tannins” and “stylish content”, and potential five-star ratings. The 2023s of Côte-Rôtie seem to stand out in the line-up, aromatic with moderate alcohols, even if not overtly structured. The results are, in Livingstone-Learmonth’s mind, “very satisfying”, with “appealing exuberance and plentiful fruit” – wines he expects to drink for a good 25 years or so. Explore John Livingstone-Learmonth’s full report, notes and scores on his site (subscribers only)  Decanter – Matt Walls  Both in the north and south of the region, the vintage earns a modest 3.5 out of 5 rating from Decanter’s Matt Walls. He emphasises how the rain showers that arrived in May and June were “crucial” in the otherwise hot, dry year, even if they also brought disease pressure.   Unlike other recent vintages, Walls highlights how approachable the 2023s are – perfect for drinking while waiting for other vintages (including the 2022s) to come round. He says the wines are perhaps comparable in quality to the 2022s, although are much more open. Both in the Northern and Southern Rhône, he finds the whites more consistent than the reds – offering “intensity, freshness and energy”.  The reds are more mixed in quality. In the south, you’ll find “a clutch of juicy, approachable and early-drinking wines”,  he says, “ripe with soft tannins and gentle acidity”, but “nonetheless displaying detailed terroir expression”. He found that, while Châteauneuf-du-Pape was heterogenous (with some wines lacking in acidity and marked by alcohol), Vinsobres, Lirac, Beaumes de Venise and Rasteau all excelled this year. He advises looking out for wines with Mourvèdre in the blend, bringing “welcome sinew”.  In the Northern Rhône, things were trickier. Hail struck Saint-Joseph, Cornas and Crozes-Hermitage, and there was a huge rainstorm on 18th September – so heavy that it damaged vines and resulted in some dilution. Côte-Rôtie, Condrieu and northern Saint-Joseph dodged the storm (receiving 20 versus 100mm elsewhere) and made some “excellent” wines, according to Walls. While much of the Northern Rhône produced fresh, supple reds, there is some “very fine Côte-Rôtie” and Cornas offers “strict, mineral and refreshing” wines that are “distinctly herbal”. Walls notes that there are many vibrant, fresh whites, particularly in Hermitage – where the whites are set to outlive the reds.  Explore Matt Walls’ full report, notes and scores on the Decanter site (subscribers only)  Wine Advocate – Yohan Castaing  Yohan Castaing hasn’t yet released his full coverage of the 2023 vintage in the Rhône, but has offered two reports on the whites of Châteauneuf-du-Pape and Gigondas, where it is the first vintage for white wines within the appellation rules. Generally, he finds the Southern Rhône whites in 2023 “aromatic and elegant, with bright acidities, a well-defined core and good aging potential”. In Châteauneuf, the aromatic profiles are, for him, reminiscent of 2022 and he considers the wines very good to excellent, with acidity that “balances the natural power and typically high pH levels of Southern Rhône grape varieties”. He attributes this in part to greater precision in the vineyard and winery, although some wines, he writes, still lack “dymanism and tension”.  The first whites to bear the Gigondas appellation name (coming from around 12 hectares of white vineyards) offer “a promising glimpse” of what lies ahead. He favours the pure Clairette expressions of Gigondas’s complex soils, even if the grape still represents a minimum 70% of the blends. Nevertheless, the 2023s, in Castaing’s words, have “remarkable freshness, tension and complexity”, exemplifying “the elegance and purity that Gigondas Blanc strives for, balancing structure with vibrancy”.   Explore Yohan Castaing’s full report notes and scores on Châteauneuf-du-Pape whites and Gigondas whites on the Wine Advocate (subscribers only)  Vinous – Nicolas Greinacher  In Châteauneuf-du-Pape, Vinous’s Nicolas Greinacher finds that 2023 “promises to be a delightful year for both reds and whites”. In his coverage of the growing season, he notes that sites with more clay fared better than sandier soils, able to retain key moisture during the year’s warm weather. He feels the reds in this leading appellation are good to very good, more approachable than the 2022s, and “although generally not set to be as long-lived as the 2022s, the finest 2023s are built to last”. He finds many of them “alluring”, “perfumed” and “juicy”. As for the whites, he finds them generous in style – matching the reds for quality, and offering brighter acidity versus the 2022s.  In the Northern Rhône, the reds are – he writes – “surprisingly fresh, calm and balanced”, with ripe fruit and “gentle tannins”. They aren’t as structured and long-lived as the 2022s, much more open and accessible in youth, but there are “standout wines in every appellation that are sure to endure”. He finds that Côte-Rôtie stands out this year for its “hauntingly elegant” wines, while Cornas offers wines of “granite-based austerity, fleshiness, boldness and elevated flavor concentration” (even if they’re “not blockbusters”). Saint-Joseph is more mixed, while the whites of Condrieu are mostly “lively, fresh and expressive, albeit not as precise and elegant as in 2021”.  Explore Nicolas Greinacher’s full reports, notes and scores on Châteauneuf-du-Pape and the Northern Rhône on Vinous (subscribers only)  jancisrobinson.com – Alistair Cooper MW and James Lawther MW James Lawther MW has covered the Northern Rhône and Alistair Cooper MW the Southern Rhône for jancisrobinson.com. In the north, Lawther finds 2023 “more elegant and approachable” versus the power and concentration of vintages like 2018, 2019, 2020 and 2022. The reds are generally low in alcohol, with a maximum 13%, he says, and relatively high pHs, yet they feel very fresh, with supple tannins and “juicy, gourmand” fruit – offering a much more “classic” profile, he finds. Côte-Rôtie has produced some of the vintage’s best wines, and is more consistent than those of Cornas, Crozes-Hermitage (with hail in both) or Saint-Joseph, full of “balance and charm even if they are not destined for excessively long ageing”. In the south, the story is rather different, as Cooper reports – the year defined by its warm and dry conditions. Although Châteauneuf-du-Pape produced some “extremely high-quality red wines”, selection is key, with some wines jammy and high in alcohol, although the best are excellent, offering power and concentration. The appellation’s best whites offer freshness and minerality, although some drift into flabbiness, with picking dates key. Cooper found quality in Vacqueyras and Gigondas more variable – for the latter, he attributes this in part to its sandier soils (less able to retain water in the dry year). Generally, however, he found the southern crus “largely turned out good-quality wines” – with Cairanne, Lirac and Rasteau in particular home to “balanced and attractive wines aplenty”. The 2023 vintage was far from easy in the Rhône Valley – but has clearly produced some charming wines. As the critics publish their reports on the year, we round up what they’re saying about the vintage and its wines, from Châteauneuf-du-Pape to Côte-Rôtie

Rhône 2023: the critics’ verdict 

When Alain Hudelot retired in 2008, it was his grandson who stepped up to take over the family estate, Domaine Hudelot-Noëllat. Charles van Canneyt – then just 20 years old and fresh from his wine studies – suddenly found himself managing 10 hectares of vines and running a winery. But he wasn’t any 20-year-old.  Gradually modernising the estate’s equipment and tweaking the winemaking (particularly toning down the extraction), he transformed the reputation of the domaine. Rapidly he became known as one of Burgundy’s rising stars, with Domaine Hudelot-Noëllat soon among the region’s most revered names. Not one to be complacent, he started a négoce label in 2012 – offering another avenue for Burgundy-lovers to get access to his winemaking talent.   Now he has – along with his wife Anne-Sophie – taken on a new challenge, having purchased a new estate: Domaine des Chézeaux. It’s unlikely you’ll know the name of this Gevrey-Chambertin property, but you’ll almost certainly know its vineyards.  This history of Domaine des Chézeaux  Domaine des Chézeaux was created by François Mercier in 1982, although the family has had vines in the village of Gevrey-Chambertin since 1928. The estate’s name comes from the Clos des Chézeaux, the walled vineyard next to the domaine. The family were land-owners rather than winemakers, so all their vines were leased out – en métayage – to other producers. This arrangement is common in Burgundy: the vignerons renting the vineyards manage them year-round and make the wine, giving a portion of their production (often around a third) to the vineyard-owner by way of rent.  This historic estate grew from its original holdings and – as of 1994 – consisted of around four hectares. The vines were split between three producers: Domaine Ponsot (and later Laurent Ponsot), René Leclerc and Domaine Berthaut (later Domaine Berthaut-Gerbet).  Ponsot rented the property’s original 0.89-hectare plot of Griotte-Chambertin, as well as Domaine des Chézeaux’s parcels of Clos Saint-Denis*, Chambertin and Chambolle-Musigny Premier Cru Les Charmes. Domaine Berthaut leased the two Gevrey-Chambertin Premiers Crus (Les Cazetiers and Lavaux-Saint-Jacques) as well as the property’s village parcels, including the Clos des Chézaux. While technically the latter is a monopole, because Berthaut didn’t own the land it couldn’t be called as such.  Ahead of the 1994 vintage, the Mercier family purchased another parcel of Griotte-Chambertin, an additional 0.68 hectares that had been owned by Suzanne Thomas of Thomas Bassot, giving them the largest holding of this Grand Cru. The Esmonin family had been farming the vines in this parcel, selling some fruit to Jadot, and the Mercier family then leased it to René Leclerc (although the Esmonin family also continued to bottle the wine, with vintages of Frédéric Esmonin Griotte-Chambertin up to and including 1999 available). A portion of each of the finished wines was bottled under the Domaine des Chézeaux label, but was identical to that under the Ponsot, Leclerc or Berthaut labels – often at a fraction of the price.  Domaine des Chézeaux today In 2021, Charles van Canneyt managed to buy the estate and its enviable vineyard holdings. With all the vines under métayage contracts, the next challenge was to reclaim the vines – negotiating with each producer. By 2022 he had secured the monopole Clos des Chézeaux and Premier Cru Les Cazetiers, but sold the fruit. In 2023, having regained a parcel of Griotte-Chambertin, he made his first wines from the property.  By the time 2024 came around, he had managed to recover all the vineyards – adding Chambertin, Clos Saint-Denis and Chambolle-Musigny Premier Cru Les Charmes. As part of the extensive negotiations, the Lavaux-Saint-Jacques parcel, some Gevrey-Chambertin village vines and two small sections of Griotte-Chambertin were sold.  The vines are generally old across the property, and the farming and winemaking is identical to that at Hudelot-Noëllat, with the fruit entirely de-stemmed and seeing very gentle extraction. The first vintages were vinified at Domaine Hudelot-Noëllat (but are being aged in the cellars at Domaine des Chézeaux), and work has started on a new winery that is set to be finished later this year (2025). Interestingly Van Canneyt has already seen the wines maturing differently at Chézeaux, with the particularly cool, humid cellar meaning the wines develop more slowly during élevage and need topping up less. He therefore anticipates ageing the wines slightly longer than those of Hudelot-Noëllat. The estate is retaining its historic name, but with new labels – helping differentiate from older bottlings made prior to Van Canneyt’s arrival. The name has the same origin as Echezeaux: chesaux – plural of chesal (which comes from the Latin, casellum or casalis) – meaning a stone house or building.   The Domaine des Chézeaux holdings   The estate now has around three hectares of vines, over half of which is Grand Cru, spread across six appellations:  Gevrey-Chambertin Clos des Chézeaux: This monopole vineyard covers half a hectare, with some of the vines almost 100 years in age (planted in 1929). Mid-slope and facing southeast, the village site has deep, clay-rich soils with gravel, sitting just below Premier Cru Cazetiers and neighbouring another monopole village site, Clos du Château, farmed and produced by Armand Rousseau.  Gevrey-Chambertin Premier Cru Les Cazetiers: Chézeaux has 0.216 hectares of this Premier Cru split over two parcels: one of 0.1615 hectares in the northern section and 0.045 hectares in the south.  Chambolle-Musigny Premier Cru Les Charmes: Van Canneyt farms around 0.6 hectares in this Chambolle-Musigny Premier Cru, which he also has a parcel of under Domaine Hudelot-Noëllat.  Clos Saint-Denis Grand Cru: There is a plot of 0.3776 hectares in Clos Saint-Denis, which will briefly be appearing in the range for 2024 (with just one barrel), but is now being replanted and out of action until 2029 at least.  Chambertin Grand Cru: A parcel (combining one tiny plot that sits next to their main plot) in the heart of this Grand Cru represents 0.143 hectares.  Griotte-Chambertin Grand Cru: Chézeaux is the largest vineyard holder in this Grand Cru, with an impressive 1.264 hectares of vines, a parcel in the heart of this tiny appellation.  Spotlight on Griotte-Chambertin  Griotte-Chambertin, also known as En Griotte, is the smallest of the Chambertin Grands Crus, totalling 2.69 hectares (and is among the smallest Grands Crus in the Côte d’Or, along with La Romanée, La Romanée-Conti and La Grande Rue for Pinot Noir). It sits below Clos de Bèze on the slope, just below the Route des Grands Crus and sandwiched between Chapelle-Chambertin and Charmes-Chambertin, facing northeast. This aspect is important, allowing the vines here to ripen more slowly, not receiving as much morning sun. The wines made here tend to be more delicate, aromatic and perfumed, less muscular than is perhaps typical for the village of Gevrey-Chambertin, and therefore highly prized. Pebble-rich, chalky topsoil sits over deep, limestone bedrock, with more clay the further down the slope you go.  Domaine des Chézeaux is the largest owner of the site, with 1.246 hectares – almost half of the vineyard. Other producers who own vines here are: Joseph Drouhin (0.53 hectares), Fourrier (0.26 hectares), Claude Dugat (0.15 hectares), Marchand Frères (0.13 hectares), Joseph Roty (0.08 hectares) and Duroché (0.02 hectares), as well as now Laurent Ponsot (0.11 hectares) and an investor who has leased his small portion of the Grand Cru to Cécile Tremblay (circa 0.2 hectares). The origin of the vineyard’s name is disputed. Some argue that it comes directly from “griotte”, the word for morello cherry – tied either to trees that were once planted in the site, or as a reference to the character of wine it typically produces. Most, however, now suggest it comes from “criotte”, the diminutive of “crais”, referring to the chalky pebbles that are found in its soils.    Insider knowledge: Domaine des Chézeaux Griotte-Chambertin Historic bottlings of Domaine des Chézeaux Griotte-Chambertin have been something of an insider’s secret, as some are Ponsot Griotte-Chambertin under a different label. Some were the wine made by René Leclerc, and it’s not always possible to know which.  1982 to 1993 vintages inclusive: Domaine des Chézeaux only had their original parcel of Griotte-Chambertin during this time, and it was leased to Domaine Ponsot  1994: Reportedly, only one wine was produced under the Domaine des Chézeaux label in 1994 – the first vintage in which Chézeaux had their second parcel of Griotte, which was leased to René Leclerc. The wine from both parcels was blended together for the Domaine des Chézeaux bottling.   1995 to 2001 vintages inclusive: Two identical Domaine des Chézeaux bottlings of Griotte-Chambertin were produced during these years, with nothing on the label to indicate which producer made them.  2002 onwards: The producer of the Griotte-Chambertin is detailed on the Domaine des Chézeaux labels from the 2002 vintage. While there continued to be two bottlings up to and including 2004, from 2005 onwards, René Leclerc’s Griotte was only occasionally bottled by Domaine des Chézeaux, with the wine more often sold off in bulk. (The 2010 and 2011 vintages are the exception, with the Leclerc bottling returning to the Chézeaux line-up, but with the producer name detailed on the label still.)   The Ponsot wines also have the Ponsot name embossed on the bottom of the bottles. Laurent Ponsot retained the lease for the vineyard when he left the family domaine, 2017 onwards.   The future of Domaine des Chézeaux  While Domaine des Chézeaux has a surprisingly deep history for such a modern estate, it’s surely only the beginning. With a talented vigneron like Charles van Canneyt at the helm and such enviable vineyard holdings, quality at this address is only going in one direction – and we’ve no doubt the wines will soon be as hard to secure as anything else he produces.  Domaine des Chézeaux’s 2023s 2023 Gevrey-Chambertin, Clos des Chézeaux: This monopole vineyard covers half a hectare, with some of the vines almost 100 years in age (planted in 1929). Mid-slope and facing southeast, the village site has deep, clay-rich soils with gravel, sitting just below Premier Cru Cazetiers and neighbouring another monopole village site, Clos du Château, farmed and produced by Armand Rousseau. Charles van Canneyt noted how managing the surrounding woodland (in particular removing some trees) had totally changed the site – bringing better airflow and more sunlight to the vineyard. His first vintage is scented, with bright and lush dark red-berry fruit, alongside iris and violet florals. The palate is vibrant and juicy, but with a fine-grained grip – nubuck-like tannins that frame the fruit, while there’s a savoury, saline note on the long finish. 2023 Gevrey-Chambertin, Premier Cru, Les Cazetiers: The vines in the Domaine des Chézeaux parcel of Cazetiers are very old, lending additional intensity to this brilliant Premier Cru. The wine is delicate, with chalky minerality and delicate floral perfume that entices on the nose. The palate has an earthy minerality, but that’s complemented by beautifully transparent dark berry fruit. It’s firm in texture, with savoury mineral tannins that balance the wine’s natural juiciness. Effortlessly balanced, long and impressive. Five barrels were produced in 2023. 2023 Griotte-Chambertin, Grand Cru: Griotte-Chambertin is the jewel in Domaine des Chézeaux’s crown, with the largest holding of this small Grand Cru site – renowned for producing gloriously aromatic and elegant wines. Charles van Canneyt’s first vintage is seductive, with sweet spice and just the lightest touch of toast sitting alongside waves of supple red cherry fruit. The wine is bright – offering an instant intensity and fullness, plush and voluptuous, yet with effortless elegance. It’s tight at this nascent stage, but you can see how much more it has to offer, with a structure that deserves time. Smoky tones linger on the long finish. A superb début. *This wine is famously the one that got fraudster Rudy Kurniawan caught, after he was found selling older vintages of Domaine Ponsot Clos Saint-Denis, although the property didn’t produce the Grand Cru prior to taking on the Chézeaux holding in 1982.  Keep an eye out for the first wines from the new Domaine des Chézeaux, which will be released soon; in the meantime, read more about Burgundy

We normally taste Ch. Berliquet at Canon during en primeur, and with a tightly packed schedule there’s never enough time to visit both properties. This year, however, an extended trip allowed us to visit once most of the trade had left the region. On the sunny Monday after the week of en primeur, we arrived at Canon as normal – but, instead of disappearing into a tasting room, hopped onto some of the property’s iconic bikes (which are genuinely used by staff to travel between the two estates), and pedalled across the vineyards to Berliquet – a property that the Chanel team has quietly been transforming.  Ch. Berliquet is one of the oldest estates in Saint-Emilion, with roots dating back to the 1760s. The first known owner was Jean de Sèze, a contemporary of Jacques Kanon (the founder of Ch. Canon). This single plot of vines on the slopes of Saint-Emilion’s limestone plateau has remained unchanged for over 150 years. Southwest of the town, nestled between Ch. Bélair-Monange and Ch. Angélus, it offers much more than meets the eye. The wines were vinified by a local co-operative as recently as the late 1970s and the property only achieved Grand Cru Classé status in 1986. When Chanel acquired the property in July 2017, you would be forgiven for thinking that fruit from Berliquet would go into its more illustrious neighbour, Ch. Canon (which Chanel has owned since 1996); but that wasn’t what they had in mind.   “At the beginning, we took our time with Berliquet. To start with, we had to focus on ourselves,” Axelle Araud, the estate’s Wine Development Director, told me at a recent vertical tasting. The team credits the estate’s progression in part to a better understanding of their surroundings. Not long after their acquisition, the team carried out an extensive soil study which revealed that the estate’s slopes are home to all three of Saint-Emilion’s hallmark soils in equal measure: the vineyard’s plateau is made of limestone, the hillside a mix of limestone and deep clays, while the banks of the Dordogne river are predominantly sand and clay. The unique diversity of the soil helped to underline the estate’s identity.  “Ch. Berliquet is the expression of a specific landscape,” Araud says. One key element of this landscape is a Mediterranean belt that runs across the property (found at Bélair-Monange too), with Mediterranean species of plants naturally growing here – with cypress, fig, pine trees, lavender and laurel all at home. The team has looked to nurture this natural biodiversity, planting over 1,000 hedges, shrubs and trees since 2017, as well as installing nesting boxes for birds (to help as natural pest control). The property is certified organic as of the 2024 vintage.  Alongside this, Nicolas Audebert has embarked upon significant restructuring of the vineyards. At the beginning of Chanel’s tenure, the vineyard was planted with as much as 80% Merlot; but, in early 2018, following their soil analysis, the technical team realised the significant role that Cabernet Franc could play on the property’s clay-rich soils, on the slopes below the limestone plateau. Since then, the vineyard has gradually been restructured, with plots of Merlot replaced with Cabernet Franc. Today, 2.5 hectares of the vineyard have been replanted, taking the proportion of Cabernet Franc up to 40%. The goal in the long term is to bring the blend up to 50% Cabernet Franc.  In 2021, they also decided to plant some Malbec – 0.34-hectare plot of this grape that was – prior to phylloxera – widely planted in the region. Nicolas Audebert and his team believe that addition of malbec will add to the diversity of the fruit, the results of this change will be evident from the 2024 vintage, with its first inclusion in the blend.  While much of the work has been in the vineyard, part of Berliquet’s recent progress can be linked to the winery. Although Berliquet benefits from having the same technical team as that of Canon and Croix Canon, one of the thinks that marks Berliquet out from its stablemates is their use of amphorae. The estate started with just two amphorae in 2019, and today have 12 – deemed a key part of the wine’s character, with 10% of the blend matured in these clay vessels instead of oak. Araud pointed out that the amphora have helped to preserve the brightness of the fruit – carrying through their work in the vineyard to the final wine.  The 2023 vintage also saw the inauguration of what Araud calls “the playground” – their new vat room, complete with 22 stainless steel tanks. “Now that we have all the building blocks in place in the vineyard, we can pay more attention to each and every plot, resulting in greater precision and refinement in the final blend,” she explains.  The 2024 vintage is the eighth under team Chanel and, over that time, the team has continuously questioned their practices, making small adjustments in the vineyard and winery – making gradual but constant progression. And that progression is evident in the wine today, which has shaken off any rusticity it might once have displayed. As Jean-Basile Roland, Commercial Director for Chanel’s three estates, described to us back in April, they’ve been sharpening the wine’s silhouette – a wine that he describes as “telluric” versus Canon’s “ethereal” style. However you describe it, the wine is clearly better than ever before and well worth watching, with more improvements undoubtedly in the pipeline. Berliquet: harnessing the property’s potential

Broad in build and sporting a leather necklace, Mike Ratcliffe looks like a man who would be good at wrangling cattle. But that burly side is countered by an accent softened by time working and studying abroad (not to mention being married to a Brit), and a certain polish – even after an overnight flight from the Cape – that speaks of the business sphere. It’s clear that he’s no-nonsense – a man with ambition, and not one, I suspect, you’d want to get on the wrong side of. But it’s also clear that his savvy brand-building has been key to the success of Vilafonté.  He is a man with a plan – a 100-year plan, in fact. As of December last year, when co-founders Dr Zelma Long and Dr Phil Freese retired, Ratcliffe is the lone man at the helm of Vilafonté – a wine producer that has been attracting increasing amounts of attention. In a recent report for the Wine Advocate, Anthony Mueller wrote, “Vilafonté continues inching toward triple digits with a spectacular array of new releases” – awarding its 2021 Series C 99 points (making it the joint-highest-scoring South African wine to date, sitting alongside Sadie’s 2021 Palladius and an 1800 Muscat of Alexandria from Jaubert). But Ratcliffe’s not resting on his laurels: as he tells me, “If you’re going to do anything, go 100%.”  Ratcliffe’s family owned Warwick Estate – and as the world opened up to South African wine in the wake of apartheid – they realised they needed help developing their wines. Although Warwick was one of the nation’s stalwart names, “We were the big fish in the small pond,” says Ratcliffe – and to grow internationally, they needed outside input. They hired Phil Freese – then Vice President of Winegrowing at Robert Mondavi and responsible for planting the first Opus One vineyards – as viticultural consultant (for a “staggering” fee, Ratcliffe tells me). The investment paid off and after two years, they had made amazing progress – and Freese suggested they use Zelma Long (previously of Robert Mondavi, then Simi) to consult on the winemaking side.  At the same time Freese was working on his PhD, which involved research on the world’s oldest soils – many of which he discovered were in southern Africa. The oldest documented soil in Africa is vilafontes, thought to have originated 800 million years ago – and he, along with Long (whom he later married), started wondering about this soil’s potential for wine. The couple – along with the help of an investor Sydney Back – bought 40 hectares of land in 1996, at the foot of the Simonsberg mountain in Paarl, planting their first vines the following year. Vilafonté was born.  Ratcliffe had been working abroad as a skipper, before heading off to Roseworthy to get his MBA in wine in 1999, but had met Long and Freese through their work at Warwick, and was keeping an eye on their new venture. Soon after he returned back home, Sydney Back – a man Ratcliffe describes as “the Robert Mondavi of South Africa” – passed away, meaning Long and Freese were looking for a new partner. Impulsively, Ratcliffe volunteered – scrambling to get the money together in time for the deal to be finalised in 2001.   The trio made wines in 2000 and 2001 but only to get a feel for the site, planning to make 2002 their first release. Unfortunately, the vintage was tricky and Long told them firmly: “It’s good – but it’s not good enough.” It’s a decision that the bank didn’t necessarily appreciate (“That was a tough year,” says Ratcliffe) – but allowed them to launch with 2003, “arguably the best vintage of the decade” according to Ratcliffe (and a wine that he tells me is still “impeccable”). No one seems to be clear on how “vilafontes” became Vilafonté – whether it was a marketing decision to add a Gallic twist to the name, or just a mistake somewhere along the way – but it stuck.  They had originally planned to make a single Grand Vin, but the site had other ideas – producing two distinct styles, and so they created Series C (a Cabernet-driven blend) and Series M (a Merlot-driven blend). It may not make perfect business sense, having two flagship wines, but repeat experiments have (so far, at least) confirmed it was the right choice. While some plots clearly belong to C or M, the blends are different each year – and younger-vine fruit or anything that doesn’t fit is declassified to Seriously Old Dirt. This latter wine was launched with the 2012 vintage, using purchased fruit from around the Western Cape as well as declassified plots to provide an earlier-drinking entry-point to the Vilafonté brand.   The secret to the wines is the soil – incredibly poor, ancient soils, degraded and nutrient-deficient – meaning the vines really struggle. Even 27 years on, the vines are scrawny little things – producing tiny yields of concentrated fruit. It’s one reason that the site had – to their knowledge – never been planted, and local farmers were puzzled why anyone decided to put down roots here. Combine that with a “deeply pragmatic” approach (in Ratcliffe’s own words), and a long-term team dedicated to doing “the same thing over and over and over”, and you have the recipe for something special. In Ratcliffe’s mind, it’s key that they aren’t trying to create something new each vintage – but continue their pursuit of perfection with Series C and M. They work sustainably but sensibly, with cover crops, high-tech underground drip irrigation and a cellar that operates purely on solar power, but avoid certification or trading on any green credentials: for the Vilafonté team, it is all about the quality in the bottle.  For years, Ratcliffe juggled managing both Warwick and Vilafonté, but eventually sold his old family business to a California-based venture capital fund, allowing him to focus exclusively on Vilafonté. The property has just released its 2021s, the 18th vintage to emerge from the Paarl estate – and its top-scoring wines to date. Yet Ratcliffe is clear that this is just the latest step in his masterplan. The vines are yet to turn 30, and there are a few small parcels on the estate that could still be planted, while the team is constantly running trials – empowered to challenge everything they think they know. Just last December (2023), Long and Freese retired – after a four-year handover period, but will remain loosely involved. Ratcliffe isn’t looking back, though: as he says, “Our greatest wines are ahead of us.”  Vilafonté’s 2021 releases are available now  Read more Editorial

The air is cool and crisp, with the radiant blue skies that only late winter can provide. On the crest of the hill in front of me, a troupe is studiously pruning Ch. Lafite Rothschild’s oldest Cabernet Sauvignon vines, their roots sinking deep into the precious gravel soils that define the First Growth’s wines. Looking over a junior member of the team’s shoulder is Luís Pinto, making sure that no mistakes are being made as they shape the vines for the future, laying the groundwork for not just 2024, but the vintages beyond that. Sporting navy-blue Domaines Barons de Rothschild overalls (vintage, sadly out of production and unavailable for purchase – I asked), Pinto has been working at the estate for over 30 years, and now leads one of the vineyard teams. As you might guess given his name, his family is Portuguese, although he was born and raised in Bordeaux. In fact, his mother even worked the harvest at Lafite, and Pinto has pictures of himself as a child at the on-site nursery the château then had for workers’ offspring – perhaps sewing the first seeds of his future profession. As Louis Caillard, Vineyard Manager at Ch. Lafite Rothschild and Ch. Duhart-Milon, explains, Pinto isn’t an anomaly. Caillard heads up the 80-strong team which works across both properties (and are managed identically when it comes to the vines). The vast majority of this team are extremely local, coming from within a 20-kilometre radius of the château, and once they join the team, few ever leave. Much has changed over Pinto’s many years working these vines – offering an on-the-ground view of viticultural trends. He remembers a time when they would rip out hedges and trees to make room for vines, focused more on yield, now coming full-circle to reinstate the biodiversity that existed before. Today there’s more appreciation of the craft and calling of a vigneron, or vine-grower – a return to traditional vineyard management.  Looking at pruning, for example, Pinto explains how there are no set rules: “Each person prunes a vine as they wish,” he tells me. They respond to each vine, its needs, looking at the sap flow and thinking about its long-term future, rather than just the next season. It’s very Simonit&Sirch in approach – although Pinto is bemused by such a suggestion; for him, it’s how he learnt to understand vines. “All it is, effectively, is that we think,” says Caillard. “It’s always existed; it’s just that we had forgotten it a little.” The challenge is teaching this sort of instinctive approach to managing a vineyard. “I don’t follow a recipe anymore,” says Pinto. It’s not just knowledge he is trying to pass on to his team, but “a way of thinking”, he says, one that inevitably comes from experience, from making mistakes and learning from them. There’s a drastic difference between studying the theory from a book, and standing in front of a vine, secateurs in hand. Of course, the idea of making mistakes when the wine commands the reputation (and price) that Lafite does might seem daunting – but it’s this that sets top addresses apart. Lafite’s scrupulous approach to quality, declassifying any fruit that doesn’t meet its very high standards, is a luxury that not all producers can afford. For Pinto, it’s this dedication to quality and long-term view that has kept him at Lafite all these years. There are plenty of properties that will rip vines out once they reach a certain age, all in the name for better crop loads, but at Lafite, the philosophy is to see “how far we can take the vine”, nurturing parcels into old age. His work might be cyclic, following the vine’s yearly progression, but there are changes every year – an effort to constantly evolve and improve. This, perhaps, is what – for me – is most interesting about Lafite. It’s not just the finesse and elegance of its pinpoint Grand Vin that sets this estate apart, but the way in which it has quietly been changing the way Bordeaux works, pushing forward in its pursuit of excellence. For over a decade, they’ve had Manuela Brando leading their Research & Development; talking to her is fascinating, with trials on everything from biodynamics, rootstocks and treatments to umbrella-like covers as an alternative way to combat mildew. If successful, these trials are transferred to the wider vineyard – with training that means the team never stops learning. Just the other day, Pinto tells me, they had a session on agroforestry – something that he’s clearly fascinated by. Pinto seems relaxed, joking lightly with us, but is also quietly serious when it comes to his work, knowing that every decision they make in the vineyard is critical to the quality of the wine that eventually emerges from the cellar. “Every decision has an impact,” echoes Caillard – “and, in fact, nothing is simple.” Difficult it might be, but Pinto is pleased with the progression he has seen over the years. “You can feel the terroir a bit more again,” he says. The shift to organic, re-introduction of hedgerows and trees to the vineyard, which in turn has brought an array of fauna – butterflies and ladybirds, for example, has transformed the property. As an apiarist, he’s acutely aware of the wildflowers that now blossom and abundant bees they attract. At the end of the day, however, there’s no wizardry, he suggests, to what they do – it’s simple: “We respect the vines a bit more.” With the gloss of an estate like Lafite, a First Growth whose reputation is so immense, it’s easy to forget the work that happens behind the scenes. But, as Caillard knows all too well, “You cannot achieve anything technical without the people; people are key to everything we do.” People like Pinto, so clearly at one with their calling, the place and vines, are what make truly great wine – separating the excellent and exceptional. As our conversation draws to a close, Pinto returns back to his team, his stocky frame receding down the row of vines and weathered face turned once more to the bright sunshine, as deeply rooted in this terroir as the Cabernet Sauvignon that surrounds him. Peat in whisky is divisive – both in terms of its intense flavour profile, but also its sustainability. It has long been used in Scotch whisky, adding complexity to the region’s spirits, but has – over the last two decades – been thrust into the limelight.  Essentially, peat is baby coal – decomposed organic matter, in particular sphagnum moss, that takes thousands of years to form. Historically, these peatlands – wetlands such as bogs and fens – were used for fuel, especially where other energy sources weren’t readily available. Slabs of peat, cut out of the ground and left to dry, were burnt, valued for their ability to (like coal) smoulder steadily. Peat would have originally been used to heat pot stills, giving off intensely scented smoke that distillers eventually looked to capture.  Today, energy sources are largely more sustainable, and peat is used in significantly smaller volumes in the kilning process. After the barley has been malted, it is kilned (essentially dried). For peated whiskies, this is done (at least in part) over a peat-fed fire, so that the barley picks up the flavours from the smoke. This barley is then milled, mashed, fermented and distilled to produce the whisky, with the peat smoke lending flavours that range from soot, smoke and asphalt to seaweed and iodine.   Peatlands have been put in the spotlight with climate change, given their incredible capacity to hold carbon – and release it. As a NatureScot report (2023) states, “Although peatlands cover less than 3% of the world’s surface, it is estimated that they store double the amount of carbon held in global forest biomass and more than 30% of the total global soil carbon store (Bonn et al., 2016). Peatlands make up some 9.5% of the UK’s land area with an estimated carbon store of over 3,200 million tonnes, of which 1,600 million tonnes are estimated to be in Scotland (Bonn et al., 2016).” But while they have an impressive ability to lock away carbon, once peatlands are damaged they release some of that carbon – and the same report estimates that degraded peatlands account for circa 13% of Scotland’s carbon emissions. (It’s worth noting that the same institution – then known as Scottish National Heritage – came under fire in 2020 for its agreement with Diageo, allowing for unlimited peat extraction on Islay.)  Peat accumulates at a mere 1mm a year, so it’s easy to see why peat extraction is a hot topic. Protecting and restoring Scotland’s peatlands are firmly on the national agenda, and in 2020, the Scottish government announced £20 million earmarked for restoration, with a commitment to invest more than £250 million by 2030. Unsurprisingly, it’s put Scotch whisky’s use of peat under the magnifying glass. In reality, a fraction (just 1%) of Scotland’s peat goes to the spirits industry – with horticulture the main culprit.  As Bruichladdich’s Head Distiller Adam Hannett says, however, it has provided “a great lens to look at what we’re doing with peatlands”. For him, “It’s about responsible extraction.” Bruichladdich’s production director is also looking at restoration projects with local farmers. In 2021, two giants of the industry announced significant projects – one from Diageo’s Johnnie Walker, partnering with the RSPB to repair wetlands, and a more ambitious pledge from Beam Suntory, with its Peatland Water Sanctuary Initiative. The project aims to restore twice the volume that the company harvests for use in whisky production, with $4 million invested by 2040. Some producers – such as Nc’nean – have sworn off peat totally, while others are moderating usage, or looking for alternatives.   In Sweden – where peatlands represent up to 20% of the entire land area, Mackmyra’s Blender Lii Johnson explains how there is strict regulation around their usage. They are one of a growing number of producers looking to use peat as another way to explore their terroir. As few producers malt and kiln their own barley today, often this is shipped from Scotland (in turn adding to distilleries’ carbon footprints). At Mackmyra, they instead use Karinmossen – local peat, harvested around 40km south of the distillery – seasoned with juniper twigs. She estimates they use a mere 0.1% of the peat bog, bringing in around 30 cubic metres per year.  Johnson feels that it is the juniper in the Karinmossen, along with the small twigs they add (picked from the woods around the distillery), which give a light citrus, almost medicinal note to their peated malts. In Seattle, Westland has pioneered using local peat, and a process with a backhoe to keep the bog intact and limit their carbon footprint. Co-Founder and Managing Director Matthew Hofmann feels the local peat brings Mezcal-like aromas to their peated whisky, Solum.   This quest for sustainability, combined with emphasis on the concept of terroir in whisky, has had interesting results at distilleries around the world. In Minnesota, Brother Justus sources peat from the Boreal Forest and has trademarked a cold-peating process to produce more delicate aromas. Tasmanian distillery Lark looks to Browns Marsh for its peat (around one cubic metre a year) and has had the International Mire Conservation Group confirm that it is having zero impact on the marsh. Others are looking to use alternatives – New Zealand’s Thomson Whisky uses manuka, while Archie Rose has looked to Australian hardwoods and, perhaps most distinctively, Iceland’s Eimverk sources sheep dung from local farms in lieu of peat.  As we’ve touched on, however, it’s not just what is used to peat malt – but how it’s used, that impacts the flavour of the final whisky. “Duration, in my opinion, is the key,” says Mackmyra’s Johnson, emphasising that it is how long the barley spends in contact with the peat smoke that influences the level of peatiness, while it is only the type of peat (or peat alternative) that will effect the nature of the peat flavour. She explains how whether the barley is peated pre- or post-break is also important: it’s most common to do pre-break, as if it is done post-break, when the barley is largely dry on the surface, it doesn’t pick up phenols – the compounds that produce peat’s smoky flavours. For Mackmyra’s peated barley, it is kilned for one day with peat and then for a second day just with hot air.  There are other factors too however – with fermentation times and cuts often a focus. While longer ferments are generally thought to engender complexity, shorter ferments preserve phenols. There are three factions to a still run – the foreshots, heart and feints. The foreshots and feints, the liquid that runs off first and last, are generally discarded, and the cuts between these determine the character of the heart. Phenols generally come late in the distillation process, so later cuts can be preferential when looking for peat character. For Mackmyra’s Extra Rok 2.0 – an extra-peated malt, they do shorter ferments and a later cut, to preserve the phenols.   It's become fashionable to talk about “ppm” in peated whisky – parts per million (perhaps familiar to wine lovers as the same term that is used for sulphur levels), to measure the level of total phenolic compounds. It’s perhaps unsurprising that the compounds are the same as those for smoke taint, including guaiacol and 4-methylguaiacol, for example, but while in the world of wine these are avoided, distillers of peated whiskies have competed to produce the spirit with the highest. This race to make the peatiest whisky possible was arguably inspired by Compass Box’s Peat Monster (first produced in 2003), building to and culminating with Bruichladdich’s Octomore 8.3 (released in 2017) – a whisky with a remarkable 309ppm, the highest level measured to date (compare this to the first Octomore release which had 131ppm). In this frenzied period, Ardbeg’s Dr Bill Lumsden even buried a barrel of peated whisky in a peat bog (which was released as an NFT in 2022, Ardbeg Fon Fhòid). But while one number is an easy way for whisky drinkers to grasp how peaty a spirit is, not everyone believes it’s helpful.  “We don’t like to talk about those numbers,” says Johnson. She explains how ppms are somewhat farcical, in her view. When the reading is taken varies from distillery to distillery, and therefore provides something that is almost impossible to compare. While most are taken at the mashbill stage, if you are later blending, it’s an estimate at best. Not only that, but the make-up of the phenolic compounds will influence how peaty one 100ppm whisky is versus another 100ppm whisky. For Mackmyra, their pure peated malt sits at around 300ppm, but the mashbill for their peated and extra peated whiskies are respectively around 70 and 140ppm, Johnson reluctantly tells me. The level of phenols can also vary significantly between batches of barley – and at Mackmyra they aim to combat this by doing one kilning a year, distilling all their peated whisky at once and blending the batches to create a consistent product.  It's almost for this exact reason that Bruichladdich created Octomore, Head Distiller Adam Hannett explains. The project’s numbered releases have significantly different levels of peatiness, and were a project inspired by their curiosity to see how far they could push the peat level, as well as their partnership with Bairds maltings, who had batches of barley with irregular phenol numbers.   Although peat is intrinsically associated with Islay’s malts, things aren’t as clear-cut today – and as Hannett says, “You can’t categorise flavour by region”. Islay-based Bruichladdich produces both peated and unpeated whiskies. Originally the distillery made heavily peated malts, switching to unpeated styles in the 1960s, and today makes both. Its Port Charlotte brand was first conceived to capture what Bruichladdich would have been like in the old days, as a heavily peated malt. Intriguingly, Bruichladdich briefly tried using Islay peat, however found that they couldn’t get the phenol levels as high. Hannett highlights that another element in phenol levels is the depth the peat is cut from – with lower levels having more vegetation and therefore more phenols.  For Bruichladdich, when they’re looking for an overtly peated spirit, the quality of the underlying spirit is key – working with the right barley and fermentation times, for example. While peated malts might be thought of as heavy, oily and medicinal, they try to avoid this character. He deliberately won’t delay making a cut in the name of phenols, with that decision based on quality – and the result, he feels, is that, “The essence of the peat smoke is light – it’s barbecued.” For him, it’s about the balance between the peat character and everything else.  For blending specialists, House of Hazelwood, peated whisky “is a tool in our arsenal we can use to build a complex blend”, says Eilidh Muir from their Whisky Blending Team. She emphasises that using peat doesn’t necessarily equate to a smoky whisky, but can contribute something to a blend that is much harder to pin down – but something you’d notice if it wasn’t there. “A whisky dominated by a single flavour is often too one-dimensional,” she says – they too are looking for that fine balance.  Peat is just one element that can be used to shape a spirit – and there remains a certain amount of mystery to its influence. The sustainability question isn’t going away, but – as Bruichladdich’s Hannett says, “I don’t know what the solution is at the moment… but we’re looking for one.” As producers look for an answer, they’re pushing boundaries – experimenting with local sources and alternatives – something that will only benefit whisky-lovers, and the environment.  Browse a range of peated whisky or read more about spirits
