“It’s difficult when you don’t have vines, a winery, any equipment or money,” Stéphane Dief – co-owner and winemaker at Clos Manou – tells me. “You say you want to be a winemaker, but it is complicated. Our advantage, however, was being able to do exactly what we wanted.” Over the last 25 years, he and his wife Françoise have slowly grown their tiny estate in the northern reaches of the Médoc, beyond Saint-Estèphe, where they make wine that offers some of the best value in the region.  Saint-Christoly-Médoc – the miniscule village that is home to their domaine – is where Stéphane grew up, while Françoise is from less than 15km away. Although Françoise’s family had vines, neither she nor Stéphane were working in the production side of the business, but they fell in love with wine. Via his brothers-in-law – who worked at Ch. Mouton Rothschild and Ch. Rauzan-Sègla – Stéphane started tasting some special wines, buying older vintages at auction – and was soon determined to give it a go himself.  Together, the couple bought a mere 12 ares and produced their first vintage in 1998, 600 bottles that they labelled as Clos Manou – “Clos” because they felt it wasn’t grand enough to use “Château”, and “Manou”, Stéphane’s nickname. It was such a success that their hobby rapidly became a full-time gig and the duo left their day jobs in 2000.  In some ways it doesn’t sound like they were doing anything remarkable. They wanted to make attractive wines that reflected their site, and to do so with precision and care. Their ambitions were modest. And yet, for Bordeaux, their small-scale, hand-crafted approach was – and is – atypical.  They sought out specific parcels of old vines, those planted before clonal material became commonplace, favouring the natural complexity of massal selection. They chose to work only with high-density vineyards – around 10,000 vines per hectare, a point at which Stéphane feels the vines self-regulate, meaning there’s no need to green harvest and often less de-leafing required.  In principle, they are close to organic – however, in a bid to avoid dependency on copper, they use bio-controls that aren’t permitted under organics, specifically phosphonic acid. They don’t use any herbicides, insecticides or chemicals – but believe that copper, as a heavy metal that kills soil’s microbiome, is best used minimally, and they prefer to use something that doesn’t leave trace levels in the final wine.   Almost everything is done by hand, with 12 full-time employees working on the estate. There are no protocols or routines. “We do things by watching, observing our vines and drawing conclusions and echoing those conclusions the following year,” Stéphane says.  The 2003 vintage was a turning point. Robert Parker gave the wine 93 points – an incredible score for such a modest Médoc, writing that it was “better than many of the vintage’s ‘big’ names”, “drop-dead-gorgeous” and a “prodigious effort”. Given the critic was at his peak, his influence was significant – and suddenly Clos Manou was in enormous demand.  “C’est notre métier, mais notre passion aussi," Stéphane says – “It’s our profession, but it’s our passion too." That explains perhaps why, for 11 years, he didn’t take a day off. “My wife wasn’t very happy with me,” Stéphane tells me, laughing cheekily.   Today they have 18.5 hectares of vines, scattered between Saint-Christoly-Médoc and Couquèques, all within a three-kilometre radius. They sit across three different soil types – gravel over clay, limestone-clay and sand, with some sitting very close to the estuary itself. Stéphane thinks of them as three children – one of which, the gravel over clay, is naturally gifted. But just because the other two need a bit more work, doesn’t mean they are any lesser. There is, he says, no such thing as “un petit terroir”. One special parcel dates back to 1850. Planted before phylloxera swept through the region, it’s managed to survive thanks to its sandy soils. In certain vintages they make a special “Cuvée 1850” from the block.  Despite the vines averaging 45 years in age, the yields are generally good – sitting at around 50hl/ha. Stéphane emphasises that low yields don’t equate to better quality, necessarily – the balance of your vines is what matters most.  It’s undeniable that climate change has been a benefit here, beyond Saint-Estèphe, where once it was a struggle to ripen fruit. In 2018, Clos Manou had 15% alcohol – but, thanks to their clay soils, the pH was a vibrant 3.52, bringing great freshness to balance the wine. He’s still thinking about the long-term impact of the rising mercury, however, and experimenting with small portions of whole-bunch, inspired by the likes of Guillaume Pouthier at Les Carmes Haut-Brion. Stéphane feels that it can add tension and make the wines feel more dynamic, even on just 5% of the blend. “On est des vrais vignerons – comme il y a en Bourgogne," Stéphane tells me ("We are true vignerons – as there are in Burgundy"). Unlike larger properties where there are various directors who influence decisions – it’s just them deciding what to do. Despite looking further afield for their inspiration, he and Françoise don’t want to go against the grain of the region. “We want to be a bit unorthodox, but we are nevertheless Bordelais,” he says.  Clos Manou is, in essence, a family business. There’s nothing remarkable about their modest ways, but their freedom to start with a blank page has allowed them to create something that is no longer the norm. Inspired by the Bordeaux of yesteryear, everything is low-tech yet done with great precision. The wines are fresh and pure, yet distinctly savoury and earthy – with a natural intensity that points to their old vines. You can see the addition of larger oak and amphorae in more recent vintages, bringing more vibrancy. They are somehow rustic yet fine. Chris Phelps never really meant to start his own winery. But fate had other plans.  Wine had always been part of life, just in the background. Growing up in Livermore, east of San Francisco, Phelps’s parents would buy a ton of grapes from Napa or Sonoma, and make wine each year for themselves. Phelps even dug out a cellar by hand for them as a teenager. Nevertheless, when he set off for UC Davis, it wasn’t to study wine, but medicine. To pay for university, he took a job as a firefighter in Idaho (“kind of scary but super fun,” he tells me). By chance, he met a wine-geek friend, one who eventually convinced him to switch from pre-med to oenology. At Davis, he happened upon Alain Bertrand – one of the first scientists to use gas chromatography to delineate the different aromatic compounds in wine. The Frenchman didn’t speak much English, and Phelps spoke French – so they ended up becoming friends. Bertrand suggested Phelps attend the University of Bordeaux for a year after graduation. There, Phelps tells me, everything “started to fall into place”. Until then, wine had been intellectually interesting – but, during his time in France, it became much more.   There, another professor pushed him to apply for an internship – just in time for the 1982 harvest, a vintage that would turn out to be legendary. He already had offers from both Ch. Simon (Barsac) and Ch. Beauregard, but then was given the opportunity to interview with JP Moueix (of Pétrus). Unusually Christian Moueix insisted on joining the interview himself, alongside winemaker Jean-Claude Berrouet, and promptly gave him the job. The confident young American, however, said he’d think about it – and set off for a holiday in the south of France with his fiancée. Little did he know that Moueix had just bought a swathe of vineyard in Napa – and was planning for the future.  A few weeks later, Phelps was in Nice and bought three postcards from the Chagall museum – ready to make his decision about the three possible roads that lay ahead of him. He decided to take the position at Moueix, posted his rejections and acceptance, and carried on with his holiday. But, as harvest time approached, Phelps hadn’t heard anything back. He called Berrouet – only to find out that the French postal service had let him down, and the job at Pétrus had been given to someone else. It seemed like his luck had run out, but Berrouet said he might have another idea and would call him back in a few days.   While Berrouet couldn’t offer him anything as prestigious as Pétrus, he found Phelps a job at Ch. des Laurets in Puisseguin-Saint-Emilion – but he wouldn’t just be an intern, he’d be running everything. It was, Phelps said, a “trial by fire”, especially given his only hands-on experience to date had been six months at Louis Martini. He worked non-stop with just one cellar hand to help during the day, and managed to make it through the season.   When the wines were safely in barrel, he went to dinner at Christian Moueix’s house – where, sipping Champagne in the library, Moueix told Phelps about his plans for his Napa project, Dominus – and asked if he’d be the winemaker. “Of course, I said no,” Phelps tells me – recalling how the Frenchman opposite visibly sputtered at the American’s cheek (again). Phelps said he needed more money to live in Napa (and support his bride-to-be) – and more experience. Amazingly, Moueix agreed to let him start from 1984, given the 1983 vintage was set to be just a handful of experimental barrels, and to a pay rise. Off Phelps went, working around California and wintering at Pétrus before returning to lead the team at Dominus.   “We figured it out as we went along,” Phelps says, looking back on the early days of what is now one of Napa’s most prestigious estates. Today they might have the iconic Herzog & De Meuron winery, but things were much more rustic at the beginning – with a small team and little infrastructure. Phelps eventually moved on, joining Caymus in 1996 – but it’s what started happening after-hours, around his day job, that is interesting.  In 1990, Phelps met Larry Bettinelli at a Christian men’s retreat, and hit it off. It was only when they met up for lunch later that they realised they were both in the wine business, with Bettinelli a fifth-generation farmer who was growing grapes. Bettinelli wanted his vineyards to be the best in the valley – but he needed feedback on the fruit so that he could adapt his viticulture. He and Phelps hatched a plan: each year, Bettinelli would give Phelps a ton of fruit, trialling different clones, rootstocks, vine spacing and trellising, harvest methods, and Phelps would make a wine with it. The project was purely intellectual, so the two families drunk the wine themselves, and it also started being used as the altar wine at Phelps’s church (a much higher-grade communion offering than most). For two decades, they kept making tiny batches of their first-class “homebrew”, and Bettinelli became one of the valley’s best growers, working with an increasing number of sites around Napa.  Destiny seemed to abandon all subtlety in 2005. Phelps was hiking through the Sierra Nevada, leading a Scouts expedition, when they were struck by lightning. Two of the group died and Phelps was knocked unconscious. Unsurprisingly, it shook Phelps to the core. “Life is our most precious gift,” he says, “and if we use wine appropriately, it can enhance our lives.”  Two years later, Phelps was on top of a tank that had just been filled with crushed fruit from a relatively new Bettinelli site – and the smell was intoxicating. Following pure impulse, Phelps asked if he could – rather unconventionally – buy the tank’s contents, and Bettinelli said yes. Ad Vivum – inspired by the Latin “vinum” for wine and “vivere” to live, combined with “ad” which translates as “to” or “towards” – was born.  The vineyard was Sleeping Lady (previously Reese), the southernmost vineyard in Yountville, at the foot of the Mayacamas and on the southern end of the valley’s famous bench. There’s a flow of underground water that feeds a creek, with sufficient clay under the gravel and sand to retain water during the dry summer – and has, in Phelps’s words, a “beautiful ability” to self-regulate. Various other producers work with the vineyard, but his two blocks (representing a mere 1.5 acres) are right at the top of the vineyard, below a steep slope that aids the flow of cool air through the site at night. For him there was something special about these plots – producing fruit and wine with what Phelps describes as a “grace note”; it’s a whisper of something that takes the wine to the next level.  In a good year, production for Ad Vivum is 450 cases – but Phelps isn’t looking to grow. He makes one wine, from one site – and that’s the way he wants it to be. The wine is undoubtedly informed by his Franco-American roots, with an elegance, freshness and savoury structure that complements the plush Napa style. As he says, “I try to build wines that speak for themselves.”  Phelps’s – and Ad Vivum’s – story is one of happenstance. Or is it? With a man as devout as Phelps, it seems hard for anyone to believe it’s all an accident – and as Phelps himself says, looking back, it feels perhaps like it’s all part of a master plan.  Explore all current listings of Ad Vivum or read more about California

Divine intervention: Ad Vivum

Of course, the reputation and quality of the wines from this estate long predate the modern-day critics. Prior to the 1855 classification, Chateau La Mission Haut-Brion was one of the most expensive wines in Bordeaux, second only to its historic neighbour Chateau Haut-Brion. The two properties are both owned by the Dillon family (Domaine Clarence Dillon) who bought Chateau Haut-Brion in 1935 and purchased Chateau La Mission Haut-Brion 48 years later, in 1983. We caught up with Deputy Managing Director Jean-Philippe Delmas and Sales Director Guillaume-Alexandre Marx to find out what makes this Chateau so special. 
In the vineyard Since taking over the property in 1983 the Dillon family undertook a major effort to upgrade the estate. They initially focused on the vineyards. Substantial investments were made to replant vines on some of the finest gravel soil in Bordeaux. 
Over the years, each and every plot of La Mission Haut-Brion has been replanted with the grape varietal best suited to it. These vines are now an average of 30 years old. The high vine density (10,000 vines per hectare) is conducive to intense wines whose hallmark is their unique charm. Starting with the 1991 vintage, a second red wine was created at La Mission: La Chapelle de La Mission Haut-Brion.  The vines that originally produced the second wine starting in 1991 have since aged, and now
produce a wine of exceptional quality. However, another factor is also of great importance. In 2006, the vineyard of Château La Tour Haut-Brion, another estate belonging to Domaine Clarence Dillon, was integrated into that of La Mission Haut-Brion. Starting with this same vintage, all the grapes from La Tour Haut-Brion’s vineyard, a Classified Growth of Graves in
1953, went into La Chapelle de La Mission Haut-Brion, making the second wine of La Mission a truly fine wine. The Pessac-Leognan terroir
 Wines from the Pessac Leognan have a unique, distinct fired earth, tobacco, spice note that are not found elsewhere on the Left Bank giving the wines an added aromatic complexity. Haut-Brion stands for hillock and the vineyards of both Haut-Brion and Mission Haut-Brion are planted on these raised hillocks with distinct gunzian gravel soils giving the wines good drainage and exposition, as well as retaining the typicity of the aromatic complexity consistent with the Pessac-Leognan region.  The other important elements of Chateau La Mission Haut-Brion is that they are the first winery to harvest in Bordeaux, picking their Merlot before anyone else in Bordeaux due to the specific climate and exposition at the property.  They typically start to pick the Merlot at the end of August / early September, benefiting from the warmer summer months enabling veraison earlier and avoiding the risk of wetter weather in the latter part of September. Despite the vineyards neighbouring Chateau Haut-Brion there are distinct differences between the styles of Haut-Brion and La Mission Haut-Brion. First the vine density and the positioning of the vines in La Mission Haut-Brion are very different with the vines planted at a density of 10,000 vines per hectare compared to Haut-Brion at 8,000.  The vines at La Mission Haut-Brion are positioned from North to South and therefore the sun exposure is felt much more, heightening the sun’s effect on the wine. La Mission Haut-Brion is therefore more concentrated, has more intensity of flavour and typically riper fruit character compared with Haut-Brion. Haut-Brion is more gentler, more refined style providing potentially greater elegance, and potentially more earthy, savoury terroir
character rather than fruit intensity. Tasting the two together they are so different
and are wonderful contrasts in style despite them being neighbouring vineyards
made by the same team.  La Mission Haut-Brion is also half the size of Haut-Brion in terms of vineyards and production levels. Haut-Brion has 50 hectares under vine and typically produces 100,000 bottles each year. La Mission Haut-Brion has just 25 hectares under vine and produces 50,000 bottles each year. The production on both is a lot smaller compared to the other First Growths of Chateau Margaux, Lafite, Latour and Mouton Rothschild. In the winery 
A new, ultra-modern vat house was installed, opened to mark the 1987 vintage, followed
by significant renovations to the château, chapel and cellars. In 1996, a new bottling chain was introduced and a new tasting room was built, christened the Chapter Room, in honour of the Lazarists.  In 2007, new cellars were built, plus a tasting room sculpted by the best Italian woodworkers, which now features original engravings by Albrecht Dürer, plus a bottling centre and an improved storage area. However, the jewel in the crown of this major renovation project is a vibrant new tribute to
the Lazarist brothers. Returning to the Frontenac quarries – which in the 18th century supplied the stone for the most beautiful monuments in Bordeaux – the estate chose this material to build the Grand Chai, described as a “modern cathedral to wine".  
The consistency at La Mission Haut-Brion Arguably there is more consistency in quality throughout the vintages in wines from Pessac Leognan, since Merlot, Cabernet Sauvignon and Cabernet Franc play distinctive rolls in the region allowing for the assemblage to vary depending on which of the varieties have performed the best in each vintage. In Pauillac for example they are much more reliant on the performance of their Cabernet Sauvignon which makes up typically over 80% of the blend.  The winemaking team is exactly the same at both Haut-Brion and La Mission Haut Brion. The winemaking team at Haut-Brion has in fact been within the same family for three generations of the Delmas family going back to1923. Since 1988 the same team of three– Jean-Philippe Delmas, Jean-Philippe Masclef (Technical Director) and Pascal Baratié (Vineyard Manager) have been making the wines at both properties providing a very consistent style across both
Haut-Brion and La Mission Haut-Brion.  Bordeaux today With the global warming effect in the last twenty years tannins are riper and the quantity is
higher. This means the team have to pay more attention on the extraction process than before. They have tried to  maintain the balance and the freshness. The tendency being to shorten the length of maceration. Thanks to the level of ripeness the wines according to Jean-Philippe can drink sooner than before without altering the ageing potential. In fact, the window of accessibility is wider than ever before. The second wine made at Chateau La Mission Haut-Brion is the highly regarded La Chapelle la Mission Haut-Brion. The grapes are treated exactly the same whether they go into the first or second wine. Each year, the 27 individual parcels at Mission Haut-Brion are vinified separately. The wines are then tasted blind by the team and it is at this point the wines are separated into the Grand Vin and the second wine. All the wines are then typically aged
for 15 to 18 months in barrels with a lower proportion of new oak used in the second wines. The greatest vintages of La Mission Haut-Brion are the ’75 ’98, ’90 and 2000. Guillaume states “They are some of the finest wines I have ever tasted and show the quality of the property at
its best. For me they are the epitome of the La Mission Haut-Brion style. The 1998 La Mission Haut-Brion is drinking beautifully right now.” 
 The 2019 vintage Asked about the upcoming 2019 release, Guillaume is very excited about the vintage. It is the first vintage since 1998 where the three varieties of Merlot, Cabernet Sauvignon and Cabernet Franc are all at the same high quality with not one varietal performing better than the other. Early tastings around the region shows there is some variation in quality from appellation to appellation but he is super happy with the quality in 2019, even more so than the excellent 2018. It is similar to ’18 but the Spring weather in 2018 was very difficult in the vineyards and the vintage was saved by a fantastic summer.
