Bordeaux is changing. The Left Bank, in particular, has long been a region of labels – of grandiose estates, polished winemakers and the bottles they produce – the vineyards a backdrop to their impressive châteaux and new state-of-the-art wineries. Of course, vineyards have mattered, as much as they’re the source of their grapes, but they’ve rarely been the focus for conversations with trade or consumers. But now, perhaps influenced by the meteoric rise of Burgundy – and an approach to wine echoed around the world, terroir is stepping into the spotlight. Behind the scenes, the Bordelais may always have been looking underfoot, but now they are talking about it too.  Nowhere is this more true than at Ch. Montrose – a property that announced a significant change when releasing its 2023 vintage. The property has always made some of Bordeaux’s finest wines, but over the past 15 years (under the Bouygues’ ownership) quality at this Saint-Estèphe estate has reached new heights. Long known for its austere age-worthiness, there’s now a modern polish that softens its stern style – without sacrificing its classicism and longevity. Each vintage seems to reveal a new level of precision and finesse. From 2023, Montrose announced that its Grand Vin would only come from Terrace 4 (T4). If that doesn’t mean much to you, I’m not surprised.  The Médoc and Graves’s six gravel terraces were uncovered by Pierre Becheler in a series of studies in the 1980s and ’90s. Each terrace dates from a different period and has its own distinct soils, with Terrace 1 (T1) the oldest and Terrace 6 (T6) the youngest – and argued to be a defining factor in the Left Bank’s terroir. T3 and T4 are widely regarded as the best for wine-growing, and Becheler found that, at the time of their classification in 1855, over 80% of the Classed Growths sat on these two distinct geological strata.  In the last decade, these gravel mounds have become a key part of Bordeaux’s story, explaining the estates’ terroir. Despite widespread understanding that the terraces are integral to the quality of wine, there still isn’t a comprehensive map of the Left Bank’s terroir – showing which vineyards sit on which soils (the best are those created by Jane Anson and Kees van Leeuwen for Anson’s book Inside Bordeaux). Most studies have been undertaken by individual estates, as at Montrose – who engaged Becheler himself to uncover the specifics of their site.  It's remarkable that, without knowing anything about the region’s subsoils, Montrose was so fortuitously placed – although it has of course survived thanks to its prestigious site. The property’s first vines were planted – all on the fabled T4 – in 1815, by Etienne Théodore Dumoulin, who had purchased the land from Nicolas Alexandre de Ségur (of Calon Ségur). The land had been covered in heather, its pink blossom covering the gentle slope come autumn, and sailors passing along the Gironde estuary used to call it the pink hill – or “mont rose”, giving the property its name.  It was only 40 years after the first vines went in the ground that the estate earned its place as a Second Growth in the 1855 Classification. By 1861, when Dumoulin passed away, the estate comprised 95 hectares – but its borders have shifted over the years. It was later purchased by an Alsace factory owner, Mathieu Dolfus, who invested heavily in the property. He was a visionary – offering free healthcare, profit sharing and accommodation on the estate for his workers. He even used a wind turbine to flood the vineyards, staving off the impact of phylloxera as long as he could.  Montrose was managed by the Charmolüe family between 1896 and 2006, with Jean-Louis – who ran the estate from 1960 – key in building its modern reputation. It was under him, in the 1970s, that vines were planted on lower-lying land close to the estuary, which sits on T5. These humid, sandy parcels are now used for La Dame de Montrose, the château’s second wine.  It was in 2006 that brothers Olivier and Martin Bouygues (of the eponymous telecoms company) acquired the property. In 2010 they bought an additional 22 hectares from Phélan Ségur, land which had historically been part of Montrose. These vineyards, wooded on either side, sit on the sandier T3, but importantly also brought the total vineyard area back to 95 hectares – as under Dumoulin – and all sitting in one block (something which is relatively rare in Bordeaux).  The Bouygues brothers hired Vincent Decup as the estate’s Technical Director in 2014. Decup instantly set about getting to grips with the estate and its soils. When he arrived, they had a map detailing 16 different soil types across the vineyards – but he soon commissioned further studies, uncovering an additional 10 soil types. This gave them, Decup tells me, “the possibility to explore and separate” parcels, diving into the detail of the site with a Burgundian, rather than Bordelais, vision. From 2017, the team started delineating the parcels – vinifying plots in 93 separate tanks (over twice the 40 that had been used just three years prior), adapting the winemaking to each. Looking at the Cabernet Sauvignon on T3 and T4, he explains how they gained a “new level of precision and comprehension of Cabernet on each terrace”.  “The Cabernet Sauvignon of Montrose naturally gets lots of power,” Decup tells me. “We have to be careful with the extraction.” Especially for fruit from T3, he explains, it can easily become overly austere. T4 has always represented the majority of the blend for the Grand Vin at Montrose – and in Decup’s mind it is not just the property’s historic DNA, but what gives the wine its identity. He tells me how there is something magical about the way Cabernet ripens on these parcels, developing technical (sugar), aromatic and phenolic ripeness all at once. It produces wine that is “powerful, voluminous, demonstrative – a lion in a cage”.  In 2022, the same year that Charlotte Bouygues took over as President and Pierre Graffeuille became CEO, the team started focusing more on T4, and from 2023 the Grand Vin comes exclusively from this prized terrace. Coming from the Delon estates, Graffeuille knew the potential of these soils, shared by Léoville Las Cases. The 2022 vintage was pivotal – earning four potential 100-point scores, with four firm 100-point scores in bottle – and the 2023 followed in its footsteps, with three potential perfect scores to its name.  The gravel terraces rise and fall through the region. T4 surfaces in Saint-Estèphe, running under Meyney and Montrose, disappearing until the southern edge of Pauillac, reappearing around Latour, then running through much of Saint-Julien (including the three Léovilles – Las Cases, Barton and Poyferré – and Ducru-Beaucaillou), rising again throughout Margaux and then again under Haut-Brion and La Mission Haut-Brion, with small pockets further south.  The defining factor of T4 is an iron pan beneath its sandy gravels. The sandy gravel topsoil allows young vines to develop roots easily, before they hit the compact iron layer – forcing the vines to spread horizontally rather than vertically. That compact layer is cool and retains water, feeding the vines in hot years. Decup explains how in July the topsoil might be hot, but if you dig down you can feel the chill of the iron layer – something that is perfect for Cabernet Sauvignon. At Montrose, T4 sits between 12 and 16 metres’ altitude, while elsewhere it reaches a maximum 22 metres. T4 tends to run close to the Gironde, which provides a moderating influence – especially so at Montrose, where the estuary is 4.5km wide (notably protecting the estate from frosts, such as in the brutal 1991 season – a year when Montrose produced the wine of the vintage).  As with T4, T3 runs beneath many Classed Growths – notably Cos d’Estournel, Mouton and Lafite. With sandier gravel topsoil, the key difference is that T3 doesn’t have the iron pan of T4 – the topsoil instead sitting directly on clay-limestone subsoil. Slightly higher in altitude (15-18 metres at Montrose, but generally 20-26 across the Médoc), the soils are very deep and the vines’ roots drive straight down, up to three metres or so at Montrose, Decup tells me. With less clay in the topsoil, the soils are particularly free-draining, and the vines reach down in search of water. “In terms of expression, it is not the same at all,” says Decup. He explains that while it also produces bold Cabernet Sauvignon, it’s got particular energy and length, an austerity – but “positive austerity”. Vines on T3 particularly thrive in hot, dry years, he tells me.  Montrose has an impressive 45 hectares of vines on T4, 12 on T3, a swathe on what the team describes as an “intermediate soil” – somewhere between the two terraces, and a small portion on T5. So what now of the property’s vines on T3? While the château isn’t openly confirming it, a separate bottling of T3 is set to be released – likely hitting the market in 2026, if rumours are to be believed. The rest of the fruit goes into La Dame de Montrose, and a small portion into a third wine, Tertio de Montrose (previously known as Saint-Estèphe de Montrose), which is exclusively for those working at the estate. All in all, the Grand Vin now represents circa 36% of production at Montrose – down from closer to 45%.   “T3 and T4 are, in our opinion, the terraces that produce the best viticultural results,” says Pierre Becheler, when it comes to the Médoc and Haut-Médoc. Interestingly he explains that in the Graves it’s very different, and T2, which is almost non-existent in the Médoc, produces some stunning results. He can’t fully explain why one terrace works better for wine than another, but one reason the terraces are so important is their influence on water availability. With varying proportions of clay and sizes of gravel, it’s a key element in viticulture and, eventually, wine quality. Although he has spent much of his career diving into these gravel beds, however, he’s very clear that the terraces are one very important piece of the puzzle – but will never provide the entire picture. Some terraces are the best in certain appellations, he says, “but we don’t really know why or how”.  The complexities of Bordeaux’s terroir are manifold – and some argue that the bedrock, from richer clays to hard limestones, are more influential than the gravel terraces that lie over them. On top of this, slope exposition, proximity to the Gironde, and many other elements influencing microclimate, not to mention the human influence, all contribute to the concept of “terroir”. It’s exciting to see site pushed to the fore, especially alongside an increased focus on sustainability in the vineyard. If you haven’t already heard about Baettig, we urge you to read some of our previous coverage of this rising-star producer. Conceived by Francisco Baettig (the winemaker behind Errázuriz, Seña and Chadwick) and Carlos de Carlos (previously Commercial Director at Errázuriz, he now works for Paul Hobbs) over dinner in London in 2010, Baettig is one of Chile’s most exciting projects – crafting site-driven wines from Malleco and the Maule.  The duo spent years seeking out the right site – realising that to find vineyards that met their standards, they’d have to plant them themselves. In 2013 they put their first vines in the ground, planting Burgundy clones of Chardonnay and Pinot Noir in Traiguén, in the Malleco province. Both Francisco and Carlos had family ties to the region – making it seem like fate.  The site, however, wasn’t chosen purely for their emotional connection to the area, but with an eye on sustainability and quality. This is one of Chile’s southernmost wine regions, with red clay, clay loam and volcanic soils, cool conditions, 25% less sunshine than the Central Valley and – most importantly – plentiful rainfall, allowing them to dry-farm the vines and produce restrained, Burgundy-inspired Pinot Noir and Chardonnay with moderate alcohol levels, bright acidity and vibrant fruit. Francisco is clear that the quality of their vine material has been key to their success – as it is only relatively recently that Chile had access to high-quality, clean Burgundy clones.  While Baettig started with Chardonnay and Pinot Noir, the producer has since added Cabernet Sauvignon from old vines in the Maule to the range, unsurprising given Francisco made his name making Chile’s icon wines.  Fourteen years after they first imagined their joint project, we welcomed Francisco to London to look back at the Baettig journey so far – tasting through a vertical and exploring how the project has developed and evolved.  About the Baettig range  There are currently two tiers to the Baettig range, with the idea that a top tier, single-vineyard offering that will be their “Grand Cru” of sorts, is likely to be added in the future. The current range comprises:  Vino de Viñedo: these wines are a vineyard selection designed for earlier drinking, effectively a “village” equivalent. The Chardonnay and Pinot Noir at this level go by the name of Los Parientes (“the relatives”, a reference to the closeness of the different parcels), while the Cabernet Sauvignon is called Los Compadres (“close friends” – a tribute to the growers with whom they’re working). Los Compadres is sourced from various dry-farmed, cool plots in the more coastal areas of the Maule, with the vines all over 30 years in age and some up to 150 years old, creating lively, juicy and intense expressions of Cabernet Sauvignon. The first vintage of the Los Parientes Pinot Noir and Chardonnay was 2019, while the first vintage of the Los Compadres was 2021. These may be the entry point to the Baettig range, and they are made to drink on release, but they also – like good village Burgundy – have capacity to evolve and will only benefit from an extra year or two in bottle.  Selección de Parcelas: their “Premier Cru” equivalent range, made in smaller volumes from specific parcels and built for longer ageing. These wines see a higher proportion of new oak and longer ageing prior to release. The Chardonnay and Pinot Noir are labelled under the Los Primos name (“the cousins”), while the Cabernet Sauvignon is named Los Padrinos (“the godparents”). The Pinot Noir comes from their El Primo, Chuir, and La Cuñada parcels, chosen for their elegance, structure and ageing potential; while the Chardonnay comes from the Triángulo and Llaima parcels, creating mineral, vertical wines that are all about tension. The first Los Primos Chardonnay and Pinot Noir were made in 2016, with the first wide release from 2017, and Los Padrinos was first made in 2022. Volumes of these wines are tiny, with just 300 to 350 cases made of each of the Selección de Parcelas.  About the winemaking The emphasis with Baettig is firmly on expressing site – and as such the winemaking is very “light touch”, allowing the sense of place to shine through in the wines. The style has evolved, with the use of oak reduced a little from the earliest vintages, generally shifting toward less time in barrel, larger casks and smaller portions of new wood. The fruit is all hand-picked and fermented with indigenous yeasts. The cooler sites, combined with the way Baettig farms and when they harvest, produces fruit with naturally low pH, allowing them to use minimal amounts of sulphur (although with sufficient doses to allow the wines to age and be shipped around the world).  For the Chardonnay, it is all whole-cluster pressed and cold-settled, prior to native ferment in old French barriques. Malolactic fermentation on the Chardonnay is left to happen or not, according to the vintage conditions (with often around a third going through). The élevage for all the wines varies according to the vintage, but the Los Parientes Chardonnay normally spends eight to 10 months in cask, with up to 15% new oak, while the Los Primos spends between 10-15 months in barrel with up to 35% new oak. The new oak for the Chardonnay is all larger 300- and 400-litre casks. A portion of the Pinot Noir is whole-bunch fermented (typically 10-20%), with the rest de-stemmed – with fermentation all in used oak. The Los Parientes stays in barrel for around eight to 10 months, with up to 15% new oak; for the Los Primos, it is 15-16 months, with up to 40% new wood – with the new oak all 300-litre barrels.  For the Cabernet Sauvignon, the fruit is all de-stemmed. Fermentation temperatures are low at around 24-28˚C, with maceration for a maximum 20 days, given the natural concentration and structure of the fruit. The Los Compadres is aged for 10 months in French oak (20% new), while the Los Padrinos spends 15 months in 65% new oak (including around a third in larger 300-litre barrels).  Tasting through the range, there is a clear stamp of style – a flinty restraint, with the emphasis on crunchy fruit and minerality, vibrant acidity, moderate alcohols. While some of the earlier vintages might have offered more overt oak in their youth, this has integrated with time in bottle – and the wines offer at most a subtle spicy complexity. They are beautifully judged, pure expressions of Traiguén.   About the vintages 2022: Generally speaking, 2022 was an outstanding vintage. In Malleco, the year was cooler than average. Winter was relatively dry, with little rain in spring and cool conditions including frost in September and October, leading to particularly low yields. Weather warmed up in February before cooling again in March and April, which also saw quite a lot of rain. This resulted in a late harvest of a small crop of fruit, with great intensity, concentration and excellent tension – with high acidity levels retained thanks to the cooler conditions. In the Maule, the season was moderately warm, producing a more generous yield than further south but similarly high quality. The weather here was warmer in December and temperatures close to average from January through to March. Moderate rainfall in March and April refreshed the season and eased the final stage of ripening, with the fruit offering good acidity, colour and aromatic intensity. The 2022s offer an up-front richness of fruit, with good backbone of acidity – in some ways a combination of 2020 and 2021.  2021: The 2021 vintage was a cooler year – producing wines where the emphasis was on elegance, finesse and tension, perfect for the Baettig style. The winter in Malleco was rainy, with 650mm of water over June and July, laying the groundwork for a good budbreak. Spring was dry and reasonably warm, although a late frost in September reduced yields. Summer was cool, with some rain over December and January (90 mm in total across the two months), allowing the fruit to ripen slowly ahead of a late harvest, developing great aromatic complexity and preserving the acidity levels. These should age particularly well.  2020: This was a warmer year versus 2021, producing richer-styled wines. There was plenty of rain in June and July, however this dried up in August, with little rain for the rest of the growing season. Temperatures rose and the hot, dry conditions allowed the grapes to ripen easily, although an early harvest was key to preserve freshness and tension to complement their natural intensity and generosity. Offering a little more flesh, particularly at this more youthful stage, versus the 2021s, the 2020s are juicy and open, yet with everything in balance. The one we’d pick for drinking now, although there is certainly no rush here.  2016: A rainy winter led on to a cool and rainy spring, with later-than-normal flowering and fruit set and a small crop. Summer was dry and largely warm, and the fruit was harvested early, producing wines that combine refreshing acidity and good density of fruit. The 2016 Los Primos Pinot Noir and Chardonnay were never released, the tiny volumes of Baettig’s first crop, so it was a real treat to taste these special bottles, offering a glimpse of the wines’ ageing potential – with both drinking beautifully.  The vertical: tasting Baettig Chardonnay 2022 Vino de Viñedo Los Parientes Chardonnay: This was really showing well, even though it has only just been released. It’s tight, full of energy, with a punch of minerality, bright taut citrus and crisp green apple. It’s lean and sleek, but with a fleshy, juiciness that makes it hard to resist now. A wine that’s singing. Aged for eight months in 15% new oak. Production: 7,254 bottles  2021 Vino de Viñedo Los Parientes Chardonnay: There’s a lick of lime curd on the nose here, with tightly wound greengage emerging with air. It’s pure and linear, driven with its intense, stony purity, but there’s a pleasing fatness to the fruit behind, with a mouth-wateringly juicy finish and long, saline tang to the finish. Aged for 10 months in only used oak. Production: 16,909 bottles  2020 Vino de Viñedo Los Parientes Chardonnay: The warmth of the 2020 vintage, combined with the cool climate of Traiguén and Baettig’s trademark flinty, lean style, has created a gorgeous Los Parientes in 2020. Now with a few years in bottle, it’s drinking beautifully. The wine remains taut – dominated by vibrant citrus that drives through its core, and the bright acidity brings incredible tension. Yet, there’s also a softness to the wine, with a suppleness to the palate and its ample riper stone fruit that flawlessly complements the mouthwatering zest of the long finish. Punches well above its weight. Aged for 10 months in 10% new oak. Production: 15,240 bottles  2021 Selección de Parcelas Los Primos Chardonnay: The 2021 Los Primos is incredibly impressive – and the step up from Los Parientes clear. There’s a creamy, lactic note on the nose, working alongside lemon curd, honeysuckle and bright citrus and green fruit. There’s a lushness to the fruit, with gorgeous length and energy, outstanding tension and an everlasting finish, with stony, saline minerality that lingers long after the wine is gone. You can drink this now, but it will be even better if you can give it a couple of years in bottle. Aged for 15 months in 35% new oak. Production: 3,480 bottles  2020 Selección de Parcelas Los Primos Chardonnay: Much more open now than the 2021, the 2020 Los Primos is rich and concentrated, with riper white peach fruit and honeyed complexity. There’s a softness to the wine, reminiscent of the suppleness of the 2020 Los Parientes, but additional depth here. It’s round and enticing, still with a backbone of taut acidity, and a long finish with just a touch of oak spice. Hard to resist now, drink this over the next five years. Aged for 15 months in 38% new oak. Production: 4,069 bottles  2016 Selección de Parcelas Los Primos Chardonnay: The first vintage of Selección de Parcelas, with the very first fruit from the Baettig vines, and never released. The 2016 is showing some beautiful development, with honey, sweeter plump peach and nutty complexity. Cooked apple and dried mango sit alongside a zing of limey citrus, with a line of bright acidity that runs through the palate and brings lovely energy. Gorgeous. Aged for 16 months in only used oak. Production: 2,160 bottles  Pinot Noir  2022 Vino de Viñedo Los Parientes Pinot Noir: There is 10% whole-bunch in this vintage, and combined with the youth of the wine, it is shining on the nose – with overt pepper spice, floral perfume and stemmy complexity that makes it aromatically enticing. The palate is pure and bright, with juicy but concentrated mulberry and black cherry, with a saline edge and fresh, chalky purity. Incredibly moreish. Aged for eight months in 14% new oak. Production: 13,205 bottles 2021 Vino de Viñedo Los Parientes Pinot Noir: For this cooler vintage, Francisco opted to reduce the portion of whole-bunch fermentation a little. The wine is bright, crunchy and pure, with a lovely restraint from the extended growing season. Floral tones (rose, violet) sit alongside crunchy red fruit, leading to a palate of effortless purity and length. Vibrant, mouth-wateringly fresh with an earthy, saline finish and very fine tannins. Aged for 10 months in 10% new oak. Production: 13,400 bottles  2020 Vino de Viñedo Los Parientes Pinot Noir: This is in a lovely spot right now – sharing the supple texture of its Chardonnay sibling. It is beautifully elegant, with tealeaf aromatics, gentle spice and crunchy berry fruit. Structurally, it is fine-boned – the fine, chalky tannins adding a graceful outline to the mouth-watering fruit. Gloriously fresh, the finish is saline with the slightest hint of smoke. Dangerously drinkable and incredible value. Aged for 10 months in 10% new oak. Production: 15,180 bottles  2021 Selección de Parcelas Los Primos Pinot Noir: This is such a baby at the moment – and clearly needs time to reveal its full potential. It’s much more savoury than the 2020. There’s some gunflint reduction, but beneath that smoky intensity and an earthiness, alongside the subtle florals, bright redcurrant and raspberry. There’s more grip to the tannin, a tightness to the fruit, but the structure and length offer great promise. A wine of tension. Made with 20% whole-bunch fermentation, aged for 16 months in 34% new oak. Production: 3,409 bottles 2020 Selección de Parcelas Los Primos Pinot Noir: It’s immediately evident that this is Baettig’s Premier Cru – with notably more concentration and complexity. The warmer 2020 vintage produced a vibrant and intense wine, with vivid, juicy red cherry and raspberry fruit, complemented by more delicate floral notes. Alongside the impressive weight of fruit, there’s a pomegranate freshness and mineral line, with the slightest hint of smoke and spice, and a framework of superfine, supple tannins. Made with 20% whole-bunch fermentation, aged for 15 months in 38% new oak. Production: 4,102 bottles 2016 Selección de Parcelas Los Primos Pinot Noir: This was, for me, the star of the tasting. The nose was effortlessly complex, shifting between soft florals, spice, violets and crunchy red fruit, with a dried-earth note too. There was a glorious suppleness here, silken and flowing across the palate, with a fine, chalky texture to the tannin, juicy cherry and a subtle, savoury finish. Beautiful. Everything was destemmed in this vintage and the wine aged exclusively in used oak. Production: 1,440 bottles  Cabernet Sauvignon  2022 Vino de Viñedo Los Compadres Cabernet Sauvignon: This is a glorious expression of bright, modern Cabernet – pure and pristine with crunchy red and black fruit, vivid pencil shavings and an herbaceous green-pepper edge. There’s such intensity to the palate, with its tart red berry fruit, mouth-wateringly fresh and juicy. The abundant fruit is framed by graphite tannins, leading on to a spicy finish. Aged in 20% new French oak for 10 months. Production: 17,000 bottles  2022 Selección de Parcelas Los Padrinos Cabernet Sauvignon: The first vintage of Los Padrinos is only offering more since we first tasted it in February. It’s strikingly different to Los Compadres – a much darker, spicier and smokier expression. The two wines share their tension, with firm acidity that forms the backbone of this wine and drives the long finish, as well as gloriously crunchy and fresh fruit. The nose is savoury and brooding at first, but sweeter plum and cassis fruit lurks behind, while there’s a tart, bright bite to the palate. It still feels compact at this youthful stage, the power and gum-drying tannins needing time to unfurl. Aged for 15 months in 65% new French oak. The air is cool and crisp, with the radiant blue skies that only late winter can provide. On the crest of the hill in front of me, a troupe is studiously pruning Ch. Lafite Rothschild’s oldest Cabernet Sauvignon vines, their roots sinking deep into the precious gravel soils that define the First Growth’s wines. Looking over a junior member of the team’s shoulder is Luís Pinto, making sure that no mistakes are being made as they shape the vines for the future, laying the groundwork for not just 2024, but the vintages beyond that. Sporting navy-blue Domaines Barons de Rothschild overalls (vintage, sadly out of production and unavailable for purchase – I asked), Pinto has been working at the estate for over 30 years, and now leads one of the vineyard teams. As you might guess given his name, his family is Portuguese, although he was born and raised in Bordeaux. In fact, his mother even worked the harvest at Lafite, and Pinto has pictures of himself as a child at the on-site nursery the château then had for workers’ offspring – perhaps sewing the first seeds of his future profession. As Louis Caillard, Vineyard Manager at Ch. Lafite Rothschild and Ch. Duhart-Milon, explains, Pinto isn’t an anomaly. Caillard heads up the 80-strong team which works across both properties (and are managed identically when it comes to the vines). The vast majority of this team are extremely local, coming from within a 20-kilometre radius of the château, and once they join the team, few ever leave. Much has changed over Pinto’s many years working these vines – offering an on-the-ground view of viticultural trends. He remembers a time when they would rip out hedges and trees to make room for vines, focused more on yield, now coming full-circle to reinstate the biodiversity that existed before. Today there’s more appreciation of the craft and calling of a vigneron, or vine-grower – a return to traditional vineyard management.  Looking at pruning, for example, Pinto explains how there are no set rules: “Each person prunes a vine as they wish,” he tells me. They respond to each vine, its needs, looking at the sap flow and thinking about its long-term future, rather than just the next season. It’s very Simonit&Sirch in approach – although Pinto is bemused by such a suggestion; for him, it’s how he learnt to understand vines. “All it is, effectively, is that we think,” says Caillard. “It’s always existed; it’s just that we had forgotten it a little.” The challenge is teaching this sort of instinctive approach to managing a vineyard. “I don’t follow a recipe anymore,” says Pinto. It’s not just knowledge he is trying to pass on to his team, but “a way of thinking”, he says, one that inevitably comes from experience, from making mistakes and learning from them. There’s a drastic difference between studying the theory from a book, and standing in front of a vine, secateurs in hand. Of course, the idea of making mistakes when the wine commands the reputation (and price) that Lafite does might seem daunting – but it’s this that sets top addresses apart. Lafite’s scrupulous approach to quality, declassifying any fruit that doesn’t meet its very high standards, is a luxury that not all producers can afford. For Pinto, it’s this dedication to quality and long-term view that has kept him at Lafite all these years. There are plenty of properties that will rip vines out once they reach a certain age, all in the name for better crop loads, but at Lafite, the philosophy is to see “how far we can take the vine”, nurturing parcels into old age. His work might be cyclic, following the vine’s yearly progression, but there are changes every year – an effort to constantly evolve and improve. This, perhaps, is what – for me – is most interesting about Lafite. It’s not just the finesse and elegance of its pinpoint Grand Vin that sets this estate apart, but the way in which it has quietly been changing the way Bordeaux works, pushing forward in its pursuit of excellence. For over a decade, they’ve had Manuela Brando leading their Research & Development; talking to her is fascinating, with trials on everything from biodynamics, rootstocks and treatments to umbrella-like covers as an alternative way to combat mildew. If successful, these trials are transferred to the wider vineyard – with training that means the team never stops learning. Just the other day, Pinto tells me, they had a session on agroforestry – something that he’s clearly fascinated by. Pinto seems relaxed, joking lightly with us, but is also quietly serious when it comes to his work, knowing that every decision they make in the vineyard is critical to the quality of the wine that eventually emerges from the cellar. “Every decision has an impact,” echoes Caillard – “and, in fact, nothing is simple.” Difficult it might be, but Pinto is pleased with the progression he has seen over the years. “You can feel the terroir a bit more again,” he says. The shift to organic, re-introduction of hedgerows and trees to the vineyard, which in turn has brought an array of fauna – butterflies and ladybirds, for example, has transformed the property. As an apiarist, he’s acutely aware of the wildflowers that now blossom and abundant bees they attract. At the end of the day, however, there’s no wizardry, he suggests, to what they do – it’s simple: “We respect the vines a bit more.” With the gloss of an estate like Lafite, a First Growth whose reputation is so immense, it’s easy to forget the work that happens behind the scenes. But, as Caillard knows all too well, “You cannot achieve anything technical without the people; people are key to everything we do.” People like Pinto, so clearly at one with their calling, the place and vines, are what make truly great wine – separating the excellent and exceptional. As our conversation draws to a close, Pinto returns back to his team, his stocky frame receding down the row of vines and weathered face turned once more to the bright sunshine, as deeply rooted in this terroir as the Cabernet Sauvignon that surrounds him. After the stresses of 2020 – with severe drought, heat and widespread wildfires, the 2021 vintage provided much-needed relief for Napa’s wine producers. Not only was the growing season reassuringly uneventful, but the resulting wines are fantastic. Concentrated, pure with vibrant acidity, this is a vintage that sits alongside 2013, 2018 and 2019 – the best in recent years. “I’m very happy to move on from talking about 2020! It was stressful to go through and stressful to relive,” said Maya Dalla Valle, winemaker at the eponymous estate founded her parents. Most winemakers and vineyard managers held their breath as the 2021 season progressed, anxious about the potential return of hazardous wildfires that increasingly seem to be the new normal in Northern California, but the danger never materialised.   The most significant factor influencing the 2021 harvest was instead drought, which unfortunately entered a second year. Conditions were exceedingly dry – historically so, says Chris Phelps of Ad Vivum, who noted that it was one of the driest years he can remember. Napa’s Mediterranean climate dictates that nearly all precipitation falls during the months of October-March, and the rains generally begin in the weeks following the close of each harvest, but this didn’t happen in 2020. While early winter was quite cold, helping to push the vines into dormancy, but rain didn’t arrive until January, February and March 2021. With around seven inches measured in Oakville, this was significantly lower than normal and far less than the total amount needed to reinvigorate the roots and replenish the water table.  Access to water, either from precision irrigation, or the benefit of a location with good water supply, therefore, was critical to shoot growth and canopy development. Sleeping Lady Vineyard in southern Yountville – the fruit from which Ad Vivum is crafted – backs up against the Mayacamas Mountains that form the western edge of Napa Valley. Here, natural springs funnel moisture down to the vineyard. In other locations, such as the eastern hillsides of the valley, long sunlight hours and faster-draining soils presented a greater challenge. The solution at Dalla Valle was to begin irrigation much earlier than normal, and at a greater volume, in order to mimic the rainfall that didn’t happen naturally. Although 2021’s growing season was quite warm, it was cooler than 2020 and, importantly, there were very few heat waves – and those that did take place were mercifully short. The first of these spikes, where the daily temperature reached over 37˚ Celsius, occurred in mid-June, a point early enough in the growing season where its impact was negligible. The remainder of the summer was consistently warm, with little variation, up until late August and early September, when the valley saw two minor heat spikes. The diurnal swing that Napa is known for, with nights quickly cooling down after sunset, was also in full effect in 2021, helping to preserve the grapes’ natural acidity. Given the steady weather and lack of wildfire risk, winemakers had the luxury of time when deciding to pick. For most, harvest began in the first two weeks of September – slightly earlier than average, but not drastically so. The year’s dry conditions reduced yields, which was not surprising, though “sometimes harrowing” as Andy Erickson (of Favia, and star consultant winemaker) described. The resulting clusters were lighter than normal, comprised of small berries with thick skins. While Phelps reported that the yields at Ad Vivum were down by 15%, he emphasised the positives that have emerged from these small, compact clusters: “The colour is extraordinary, with higher than normal levels of anthocyanins due to the long, slow ripening.” Others reported an even more drastic reduction in yield – up to 30% in some locations – though variation depends on not just access to water, but also soil type and depth. Vine age can also help mitigate drought conditions. Lisa Togni of Philip Togni Vineyard, perched at nearly 2,000 feet at the top of Spring Mountain, said that her yields were more or less normal, something she credits to the 32-year average age of her vines, which, remarkably, have never been irrigated. She feels that her vines’ well-established roots are able to reach deeper and access more water than younger vines. The low yields also sparked some wineries to change course in the vineyard prior to harvest, in regard to both shoot thinning and dropping fruit. Opus One made the decision to halt their green harvest. This process – during which a certain number of clusters per vine are removed, lowers yield and increases the intensity of the remaining fruit while also eliminating any slightly under- or over-ripe clusters – was always standard for Opus One, as it is for many wineries in Napa. This decision to change course was an easy one to make in a year like 2021, winemaker Michael Silacci said, and he is thrilled with the results, describing “more of a range of ripeness, with more layers and texture, and more vineyard character” in the final wine.  In the winery, tannin management was crucial. With a reduced skin-to-juice ratio, it was important to handle the fruit gently. For Tony Biagi, winemaker at several Napa Valley wineries, including Hourglass, Amici, The Vineyardist and To Kalon Vineyard Co, the main puzzle was how to coax colour from the fruit, while avoiding over-extraction of the tannins. “We were meticulous in how we macerated; we shortened the window,” he explained. Biagi said that the firm tannins are reminiscent of 2013, though perhaps not quite as muscular, as the more stable weather of 2021 allowed “more time to buff the edges”. At Dalla Valle, the decision was made to leave the wines in barrel for an additional two months because they displayed so much power and concentration. Despite the smaller berries and low yields, the condition of the fruit was described as nearly perfect by everyone. Low disease pressure and the lack of heat spikes produced uniformly healthy, good-looking clusters. Silacci recalls perhaps the most worrying moment of the 2021 harvest at Opus One, when their optical sorter broke down just as the fruit began arriving at the winery. Fortunately, however, the quality of the fruit made a stressful moment less so: “If ever there was a vintage we didn’t need a sorter it was 2021!” Early impressions of the final wines are uniformly positive – glowing with praise, even – and not simply because the year was a welcome relief following the trials of 2020. As we found in our tastings, the wines offer concentration and intensity with real purity of fruit, all balanced by refreshing and somewhat surprising acidity – allowing them to age beautifully. Phelps noted that the 2021s remind him of 2016, 2018 and 2019, all vintages with “great concentration, tension and generosity”. For Biagi, the vintage instead portends a new direction for the region, while referencing other hallmark great vintages of the past. “For me, the 2021s are classically Napa Valley. They are not crazy ripe, and you get a sense of the new style Napa is moving towards, with both power and freshness,” he opined. 2022 Bourgogne Chardonnay, Charles van Canneyt The grapes for Charles van Canneyt’s Bourgogne come exclusively from the Côte d’Or this year. It is fresh, floral, elegant and crisp on the nose, while the palate feels light and crystalline. There’s bright acidity, a round structure, gentle white fruit and a touch of lemon peel, with a long persistent finish. This is easy-drinking Bourgogne which will be enjoyable young, but will age gracefully over the next few years. 2022 Bourgogne Rouge, Domaine Charles Audoin This wine is already bottled and is astoundingly good-value. Audoin doesn’t own any Bourgogne vines, so this is made exclusively with declassified Marsannay fruit, sourced from part of Longeroies (where he also makes a single-vineyard Marsannay), Herbues, Champagne Haute, Champs Forey and Es Chezots. Aged in larger, 500-litre oak, the wine is irresistibly juicy. The nose entices with sweet and dainty red berry fruit, revealing more delicate florals and crushed minerals with air. Pure and vibrant with a savoury, pleasingly bitter note to the finish. Stock up on this and you won’t regret it – astonishing value. 2022 Chambolle-Musigny, Domaine Hudelot-Noëllat Hudelot-Noëllat’s village Chambolle is a blend of 11 parcels around the appellation to provide a true expression of the village as a whole. Charles van Canneyt’s light touch works well with the vintage, creating a classical Chambolle-Musigny. Full of floral lift and delicate aromatics, this is Pinot Noir that pirouettes. But there’s plenty of muscle behind it, with creamy richness and a crunchy, red-fruited persistence to the palate. With a mouth-watering finish, it’s beautifully balanced. 2022 Bourgogne Blanc, Henri Boillot Henri Boillot’s Bourgogne Blanc is made with mainly declassified fruit from the villages of Meursault, Puligny-Montrachet, Saint-Romain and Auxey-Duresses. Combine that with this domaine’s skill and you get a superlative wine (especially for the price) – and particularly in 2022. Henri Boillot feels it’s the Auxey-Duresses fruit that bring the wine such energy – with incredible drive and zingy acidity that almost revs the fruit. The nose is pithy, with citrus lift and a honeyed edge, tight at this youthful stage, like the concentrated palate. Long with a mouth-watering, saline finish, this is unbeatable value. 2022 Mazis-Chambertin, Grand Cru, Domaine Tortochot The Mazis-Chambertin was a highlight in the Tortochot line-up this year. With around two-thirds new oak, it’s a wonderfully sleek Grand Cru. Polished, bright red-berry fruit dominates the nose, but there’s also a savoury edge and crushed-rock character. The tannins are glossy and smooth, with pleasing freshness. While incredibly approachable now, this has the balance and concentration to age. 2022 Morey-Saint-Denis, Premier Cru, Les Millandes, Domaine Heresztyn-Mazzini Les Millandes sits below Clos de la Roche – and is always a favourite in the line-up at Heresztyn-Mazzini, whose vines here are at least 70 years old. In 2022, Florence Heresztyn decided to do a lighter green-harvest on this plot, to avoid a wine that was too powerful, with around 80% whole-bunch fermentation and a lighter toast for the 30% new oak for its élevage. The result is delicious. The nose is intoxicating – with pepper spice, dark fruit and scented florals. There’s a swathe of chalky, velvet, almost nubuck, tannins that cloak the core of dark fruit, all refreshed by wave after wave of mouth-watering acidity. You’re left with delicate florals, lingering long on the tongue 2022 Savigny-lès-Beaune, Premier Cru, Les Serpentières, Jean Marc & Hugues Pavelot Pavelot’s vines in Les Serpentières average around 60 years in age. The wine has always been in the line-up, but until 2022, Hugues Pavelot had just 0.17 hectares – now he has over a hectare, all in the northern part of the vineyard, which generally produces a wine of finesse. It’s particularly true in 2022, with the wine a more delicate, floral and transparent expression of Savigny-lès-Beaune. Bright redcurrant and raspberry fruit fills the core of the palate, framed by grippy tannins and building to a long, mineral finish.   2022 Bourgogne Hautes-Côtes de Nuits, Louis Auguste, Domaine David Duband This wine, named in honour of David’s son, Louis Auguste, comes from higher-altitude sites and some of the domaine’s oldest vines (over 55 years in age). The 2022 is dark-fruited, high-toned and with a ripe, sweet nose. The palate is fresh – awash with a blur of black and red berries, and a more precise, chalky note that dominates the finish. 2022 Bourgogne Rouge, Jean-Marie Fourrier The fruit for Jean-Marie Fourrier’s Bourgogne Rouge all comes from the Côte de Nuits – and that shows in the quality of this impressive wine, which is an outstanding introduction to the producer’s style. Aromatic and bright, this is chock-full of crunchy, pure raspberry and cherry fruit – mouth-wateringly juicy and effortlessly balanced. 2022 Saint-Aubin, Premier Cru, Le Charmois, Au Pied du Mont Chauve Coming from a terroir neighbouring En Pimont (another of Au Pied du Mont Chauve’s sites), this east-facing vineyard is opposite En Remilly, on the other side of the combe. This terroir always retains lovely freshness thanks to its higher altitude, and this is particularly true in 2022. The Charmois spent 18 months on lees, including 10 months in oak. It has a very perfumed and expressive nose, with notes ranging from ripe peach to white flowers. The wine has great body, complex and fruit-driven with lively acidity that makes for a crisp finish. This should be approachable immediately but has enough acidity to age for at least 10-15 years. 2022 Coteaux Bourguignons, L’Eclos des Abeilles, Domaine de Bellene This wine is once again excellent for what is “just” a Coteaux Bourguignons, rivalling some top village appellations. The fruit for this cuvée comes from cooler vineyards on the limits of the Bourgogne appellation in Nantoux (where the vines are 80 years old), Saint-Romain and Nuits-Saint-Georges, classified as Coteaux Bourguignons (an appellation more often associated with reds). Honeyed, fresh and round, it has bright citrus and orange peel notes, with vibrant acidity and a long, mouth-watering finish. This absolute favourite will be delicious young, but also evolve nicely over the next six to eight years. There is around 15% new oak here. Drink 2024-2032. 2022 Morey-Saint-Denis, Premier Cru, Les Sorbès, Domaine George Lignier Benoît Stehly already had 0.19 hectares of this vineyard just in front of the village cemetery, but it has historically gone into his Premier Cru blend. As of 2022, however, he has another 0.19-hectare plot and bottled the cuvée separately for the first time, making four barrels. It’s gorgeous – with a bright, tart-fruited intensity on the nose. The palate is lush with raspberry and cherry – the fruit of impressive purity. Velveteen tannins frame the fruit, while the long finish offers a savoury, smoky note.

“It’s difficult when you don’t have vines, a winery, any equipment or money,” Stéphane Dief – co-owner and winemaker at Clos Manou – tells me. “You say you want to be a winemaker, but it is complicated. Our advantage, however, was being able to do exactly what we wanted.” Over the last 25 years, he and his wife Françoise have slowly grown their tiny estate in the northern reaches of the Médoc, beyond Saint-Estèphe, where they make wine that offers some of the best value in the region.  Saint-Christoly-Médoc – the miniscule village that is home to their domaine – is where Stéphane grew up, while Françoise is from less than 15km away. Although Françoise’s family had vines, neither she nor Stéphane were working in the production side of the business, but they fell in love with wine. Via his brothers-in-law – who worked at Ch. Mouton Rothschild and Ch. Rauzan-Sègla – Stéphane started tasting some special wines, buying older vintages at auction – and was soon determined to give it a go himself.  Together, the couple bought a mere 12 ares and produced their first vintage in 1998, 600 bottles that they labelled as Clos Manou – “Clos” because they felt it wasn’t grand enough to use “Château”, and “Manou”, Stéphane’s nickname. It was such a success that their hobby rapidly became a full-time gig and the duo left their day jobs in 2000.  In some ways it doesn’t sound like they were doing anything remarkable. They wanted to make attractive wines that reflected their site, and to do so with precision and care. Their ambitions were modest. And yet, for Bordeaux, their small-scale, hand-crafted approach was – and is – atypical.  They sought out specific parcels of old vines, those planted before clonal material became commonplace, favouring the natural complexity of massal selection. They chose to work only with high-density vineyards – around 10,000 vines per hectare, a point at which Stéphane feels the vines self-regulate, meaning there’s no need to green harvest and often less de-leafing required.  In principle, they are close to organic – however, in a bid to avoid dependency on copper, they use bio-controls that aren’t permitted under organics, specifically phosphonic acid. They don’t use any herbicides, insecticides or chemicals – but believe that copper, as a heavy metal that kills soil’s microbiome, is best used minimally, and they prefer to use something that doesn’t leave trace levels in the final wine.   Almost everything is done by hand, with 12 full-time employees working on the estate. There are no protocols or routines. “We do things by watching, observing our vines and drawing conclusions and echoing those conclusions the following year,” Stéphane says.  The 2003 vintage was a turning point. Robert Parker gave the wine 93 points – an incredible score for such a modest Médoc, writing that it was “better than many of the vintage’s ‘big’ names”, “drop-dead-gorgeous” and a “prodigious effort”. Given the critic was at his peak, his influence was significant – and suddenly Clos Manou was in enormous demand.  “C’est notre métier, mais notre passion aussi," Stéphane says – “It’s our profession, but it’s our passion too." That explains perhaps why, for 11 years, he didn’t take a day off. “My wife wasn’t very happy with me,” Stéphane tells me, laughing cheekily.   Today they have 18.5 hectares of vines, scattered between Saint-Christoly-Médoc and Couquèques, all within a three-kilometre radius. They sit across three different soil types – gravel over clay, limestone-clay and sand, with some sitting very close to the estuary itself. Stéphane thinks of them as three children – one of which, the gravel over clay, is naturally gifted. But just because the other two need a bit more work, doesn’t mean they are any lesser. There is, he says, no such thing as “un petit terroir”. One special parcel dates back to 1850. Planted before phylloxera swept through the region, it’s managed to survive thanks to its sandy soils. In certain vintages they make a special “Cuvée 1850” from the block.  Despite the vines averaging 45 years in age, the yields are generally good – sitting at around 50hl/ha. Stéphane emphasises that low yields don’t equate to better quality, necessarily – the balance of your vines is what matters most.  It’s undeniable that climate change has been a benefit here, beyond Saint-Estèphe, where once it was a struggle to ripen fruit. In 2018, Clos Manou had 15% alcohol – but, thanks to their clay soils, the pH was a vibrant 3.52, bringing great freshness to balance the wine. He’s still thinking about the long-term impact of the rising mercury, however, and experimenting with small portions of whole-bunch, inspired by the likes of Guillaume Pouthier at Les Carmes Haut-Brion. Stéphane feels that it can add tension and make the wines feel more dynamic, even on just 5% of the blend. “On est des vrais vignerons – comme il y a en Bourgogne," Stéphane tells me ("We are true vignerons – as there are in Burgundy"). Unlike larger properties where there are various directors who influence decisions – it’s just them deciding what to do. Despite looking further afield for their inspiration, he and Françoise don’t want to go against the grain of the region. “We want to be a bit unorthodox, but we are nevertheless Bordelais,” he says.  Clos Manou is, in essence, a family business. There’s nothing remarkable about their modest ways, but their freedom to start with a blank page has allowed them to create something that is no longer the norm. Inspired by the Bordeaux of yesteryear, everything is low-tech yet done with great precision. The wines are fresh and pure, yet distinctly savoury and earthy – with a natural intensity that points to their old vines. You can see the addition of larger oak and amphorae in more recent vintages, bringing more vibrancy. They are somehow rustic yet fine.
