Broad in build and sporting a leather necklace, Mike Ratcliffe looks like a man who would be good at wrangling cattle. But that burly side is countered by an accent softened by time working and studying abroad (not to mention being married to a Brit), and a certain polish – even after an overnight flight from the Cape – that speaks of the business sphere. It’s clear that he’s no-nonsense – a man with ambition, and not one, I suspect, you’d want to get on the wrong side of. But it’s also clear that his savvy brand-building has been key to the success of Vilafonté.  He is a man with a plan – a 100-year plan, in fact. As of December last year, when co-founders Dr Zelma Long and Dr Phil Freese retired, Ratcliffe is the lone man at the helm of Vilafonté – a wine producer that has been attracting increasing amounts of attention. In a recent report for the Wine Advocate, Anthony Mueller wrote, “Vilafonté continues inching toward triple digits with a spectacular array of new releases” – awarding its 2021 Series C 99 points (making it the joint-highest-scoring South African wine to date, sitting alongside Sadie’s 2021 Palladius and an 1800 Muscat of Alexandria from Jaubert). But Ratcliffe’s not resting on his laurels: as he tells me, “If you’re going to do anything, go 100%.”  Ratcliffe’s family owned Warwick Estate – and as the world opened up to South African wine in the wake of apartheid – they realised they needed help developing their wines. Although Warwick was one of the nation’s stalwart names, “We were the big fish in the small pond,” says Ratcliffe – and to grow internationally, they needed outside input. They hired Phil Freese – then Vice President of Winegrowing at Robert Mondavi and responsible for planting the first Opus One vineyards – as viticultural consultant (for a “staggering” fee, Ratcliffe tells me). The investment paid off and after two years, they had made amazing progress – and Freese suggested they use Zelma Long (previously of Robert Mondavi, then Simi) to consult on the winemaking side.  At the same time Freese was working on his PhD, which involved research on the world’s oldest soils – many of which he discovered were in southern Africa. The oldest documented soil in Africa is vilafontes, thought to have originated 800 million years ago – and he, along with Long (whom he later married), started wondering about this soil’s potential for wine. The couple – along with the help of an investor Sydney Back – bought 40 hectares of land in 1996, at the foot of the Simonsberg mountain in Paarl, planting their first vines the following year. Vilafonté was born.  Ratcliffe had been working abroad as a skipper, before heading off to Roseworthy to get his MBA in wine in 1999, but had met Long and Freese through their work at Warwick, and was keeping an eye on their new venture. Soon after he returned back home, Sydney Back – a man Ratcliffe describes as “the Robert Mondavi of South Africa” – passed away, meaning Long and Freese were looking for a new partner. Impulsively, Ratcliffe volunteered – scrambling to get the money together in time for the deal to be finalised in 2001.   The trio made wines in 2000 and 2001 but only to get a feel for the site, planning to make 2002 their first release. Unfortunately, the vintage was tricky and Long told them firmly: “It’s good – but it’s not good enough.” It’s a decision that the bank didn’t necessarily appreciate (“That was a tough year,” says Ratcliffe) – but allowed them to launch with 2003, “arguably the best vintage of the decade” according to Ratcliffe (and a wine that he tells me is still “impeccable”). No one seems to be clear on how “vilafontes” became Vilafonté – whether it was a marketing decision to add a Gallic twist to the name, or just a mistake somewhere along the way – but it stuck.  They had originally planned to make a single Grand Vin, but the site had other ideas – producing two distinct styles, and so they created Series C (a Cabernet-driven blend) and Series M (a Merlot-driven blend). It may not make perfect business sense, having two flagship wines, but repeat experiments have (so far, at least) confirmed it was the right choice. While some plots clearly belong to C or M, the blends are different each year – and younger-vine fruit or anything that doesn’t fit is declassified to Seriously Old Dirt. This latter wine was launched with the 2012 vintage, using purchased fruit from around the Western Cape as well as declassified plots to provide an earlier-drinking entry-point to the Vilafonté brand.   The secret to the wines is the soil – incredibly poor, ancient soils, degraded and nutrient-deficient – meaning the vines really struggle. Even 27 years on, the vines are scrawny little things – producing tiny yields of concentrated fruit. It’s one reason that the site had – to their knowledge – never been planted, and local farmers were puzzled why anyone decided to put down roots here. Combine that with a “deeply pragmatic” approach (in Ratcliffe’s own words), and a long-term team dedicated to doing “the same thing over and over and over”, and you have the recipe for something special. In Ratcliffe’s mind, it’s key that they aren’t trying to create something new each vintage – but continue their pursuit of perfection with Series C and M. They work sustainably but sensibly, with cover crops, high-tech underground drip irrigation and a cellar that operates purely on solar power, but avoid certification or trading on any green credentials: for the Vilafonté team, it is all about the quality in the bottle.  For years, Ratcliffe juggled managing both Warwick and Vilafonté, but eventually sold his old family business to a California-based venture capital fund, allowing him to focus exclusively on Vilafonté. The property has just released its 2021s, the 18th vintage to emerge from the Paarl estate – and its top-scoring wines to date. Yet Ratcliffe is clear that this is just the latest step in his masterplan. The vines are yet to turn 30, and there are a few small parcels on the estate that could still be planted, while the team is constantly running trials – empowered to challenge everything they think they know. Just last December (2023), Long and Freese retired – after a four-year handover period, but will remain loosely involved. Ratcliffe isn’t looking back, though: as he says, “Our greatest wines are ahead of us.”  Vilafonté’s 2021 releases are available now  Read more Editorial

So far, so normal in the Scotch whisky world. What happened next is quite unusual. Not one of the experts – with decades of experience and dozens of book credits to their name – could so much as hazard a guess.   The answer to the seemingly simple but dastardly question dumfounded them all. The as-yet-unidentified liquid was a single grain Scotch whisky that had slumbered in a lone Sherry butt for 53 years. Now almost jet-black in colour, the single grain had taken on incredible, rich notes of dried fruits, roasted coffee, and muscovado toffee – and it was indistinguishable from a greatly aged single malt.   The Cask Trials, which is the name given to this highly unusual liquid that left some of the finest palates awestruck and not-so-secretly hoping for a bottle in their gift bag, is just one of the panoply of independently bottled House of Hazelwood releases from the Gordon family’s private Scotch whisky archives.   Somewhat surprisingly, you won’t find a single malt among them. These rare whiskies, which have been amassed over the past 100 years by the owners of Glenfiddich and The Balvenie, were released to the public for the first time in 2022 in two, painfully scarce, collections. The Charles Gordon Collection (all priced above £3,000 per bottle and aged for at least 40 years), and the Legacy Collection (priced between £950 and £2,000 a bottle) are all well-aged blended Scotch, blended grain and blended malt whiskies that have been matured in the most novel ways.   “Bringing old, expensive and unusual blended whiskies to the market is slightly counterintuitive,” House of Hazelwood Director Jonathan Gibson – who was instrumental in creating the range – candidly tells me. “It's not overly common within the industry.”  It’s also not overly common within the industry to bottle liquids of this age and provenance with playful names such as "Blended at Birth", "Sunshine on Speyside" and "The Old Confectioner’s", in understated packaging at these price points.  The liquids are undeniably scarce (once they’re gone, there really is no more) and old (few are under 40 years of age, and the oldest tops 50 years), but they are undeniably unusual and at odds with the highly successful formulaic approach others have followed of encasing precious liquids in highly ornate, priceless vessels that weigh more than a small child.    “They're not concept releases,” Gibson explains. “Everything is driven by the whisky. The packaging is quite straightforward. It's a nice bottle and it's classically engraved but we haven’t collaborated with the hottest designer. The idea is really just to give the whisky room, provide a platform, without overshadowing it,” he adds.   “Over the past 10-15 years – and it's no bad thing at all – you can see a lot more old age-statement single malts coming onto the market,” Gibson says, “And typically they're very straightforward in terms of their naming. It's distillery name, plus age statement equals a certain financial value.  “The naming of these releases is slightly playful, but actually if you look at them one by one, they're very straightforward. It's not quite a Ronseal, ‘it does exactly what it says on the tin’ approach, but it's not too far away from that. If you said ‘Blended at Birth’, it could be seen as quite playful but it's also quite descriptive and the same for ‘The First Drop’ and ‘Sunshine on Speyside’,” he explains.   It's clear Gibson, who has been involved in the project since the start, has genuine affection for the whiskies and the stories each one has to tell. He and the team are custodians of historical artefacts that the Gordon family have not parted with for the best part of a century.  “The First Drop”, for example, is named as such because it is the first liquid to run from the stills at the Gordon family’s Girvan grain distillery on Christmas day in 1964. This is the first and last time it can be purchased. “There's a real emotional tie from the family to these whiskies,” Gibson explains. “For the current family members, it's their dad who laid down these whiskies and he's not around anymore.  “I think it's actually quite difficult for the family to let some of these whiskies go, even though there's a begrudging acceptance that they can't drink such quantities and it was time they cut the cord and let these whiskies go out into the world.”  “There's a general principle that we're following where the whisky is ready to go when it's ready,” Gibson explains, “so we're not chasing down a 60-year-old age statement just so that we can put a big 60 on the bottle.”   It has been a pleasant surprise for all those involved to witness the reception the House of Hazelwood whiskies have received from an occasionally prickly and vocal audience.    “Sunshine on Speyside had an amazing response and it's one of the least expensive whiskies within our range,” Gibson says delightedly.   “It was selected because of its character and its flavour, and named because it has this amazing mango/ pineapple popsicle fruit character that transports you to sunshine and the Caribbean. It's one of those ones where everyone instantly agreed that it had to go into the first collection.   “I thought that everyone would be drawn to the oldest whisky at tastings but actually, this whisky captured the imagination of a lot of the writers and the trade.”   It’s hard to emphasise quite how unusual these whiskies are, as most releases – old or new – are described in hyperbolic terms.   “Blended at Birth”, which was released as part of the first collection, is a blend of malt and grain whisky that was married and matured as new-make spirit. Today, it is against the Scotch Whisky Regulations’ technical file to produce a whisky in this way, as you now have to age the malt and grain whisky components for a minimum of three years separately before blending them, so any liquids of this ilk on the market are painfully scarce.   “Unusual” and “esoteric” aren’t always necessarily loaded with positive connotations – you might take a sip of said liquid, politely smile and then return to something slightly less unusual and more palatable – but these whiskies have incredible balance and depth of flavour, in part because they are blends and not single malt whiskies.    “These old grains in particular are just unbelievable in terms of the flavour,” Gibson says with unfettered joy. “At a younger age, grain whisky is quite neutral in character but once you're past 30 years, if it's aged well, grain whisky has a luscious, delicious quality which adds so much to the final profile of the Scotch.    “The variation in style is enormous,” he continues. “I thought I understood old grain whisky but on exploring the inventory further you see these amazing grains that you didn't really know you could get.”   These whiskies wouldn’t have existed if it wasn’t for the foresight of the Gordon family  – and two brothers, in particular, who changed the company’s stars during the mid-20th century. The young Charles and Sandy Gordon brought much-needed vim and vigour to what could be a bit of a staid industry in the late 1950s. The pair famously refused to kowtow to demands from their grain whisky supplier – instead pulling the contract and setting up their own grain distillery, Girvan, in the 1960s. Charles – or Charlie as he was known – even forwent the comfort of his own home and instead lived in a caravan on-site during the build, riding a bicycle to stealthily check on the workers’ progress. His unconventional methods clearly paid off as the sizeable distillery (which still stands today) was built in a record nine-month period.  During their tenure, the duo also interrogated every aspect of whisky-making from distillation to maturation, resulting in the bold decision to employ an on-site coppersmith and cooper – which are still in situ at many of the William Grant distilleries today – to give the family more control. They were a formidable pair and the business arguably wouldn’t have survived some of the challenging periods in Scotch whisky’s history had it not been for their fortitude.     “There's something about family ownership that means you have a bit more luxury to maybe indulge some of your creative whims,” Gibson says with a wry smile. “This independence enabled them to explore ideas that might have been hard for others to justify to their board of shareholders.”  When other producers would have been forced to make very difficult decisions in order to survive those darker years, the larger, independent William Grant would have been slightly more insulated. Out of curiosity alone, they would have been able to hold on to barrels of maturing liquid and see how they developed over time.  These are the barrels that the House of Hazelwood team – and by extension us – now have access to. Each one has an incredible story – and an even better depth of flavour. With eight releases each year as a minimum – and the suggestion of some partnership releases to come as well – there is an audience, who count the great and the good among their numbers, desperate to venture into this unexplored and curious realm of blended Scotch whisky.  Read more Editorial and browse all whisky

In recent years, Chablis has faced hot, dry summers that have challenged the classic, cool, steely, linear-styled Chardonnay for which it’s renowned. But 2021 bucked the trend, with moderate temperatures and plenty of wet weather. The crop was small, but the best wines have laser-like acidity, refreshing mineral salinity and delicate floral tones.  Following an extremely warm start to the growing season (with almost summer-like 25˚C temperatures in March), budburst was two weeks earlier than normal. A warm early spring, as is more and more commonplace in Chablis’s warming climate, put viticulturalists on high alert. With early budding shoots, frost was a major concern, and it wasn’t long before their worst fears were realised.  For 10 days straight in early April, temperatures at night dropped well below freezing. Thanks to a mass of cold air coming down from Northern Europe, temperatures were consistently dropping as low as -8˚C. The real devastation happened on the nights of 6th and 7th April – where rainfall just prior to dusk increased humidity levels, allowing moisture to get inside the buds. The water droplets froze, expanding and effectively exploding the buds, totally destroying them. At such low temperatures, smudge pots and wind turbines can do little to protect the vines. Between 80 and 90% of Chablis’s first buds were destroyed. Vignerons therefore had to rely on secondary and tertiary buds if they were to produce any wine this year. But producers already knew production would be decimated, since these secondary shoots produce far fewer bunches – typically just a bunch per vine. Barely had the season started and the vignerons were looking at losses of up to 80%. While the rest of April and May were a quiet time in the vineyards, it was the calm before the storm. Lots of rain and a significant increase in temperature in June saw the canopy expand rapidly. These storms meant vignerons had to be quick to fight the onset of mildew – not so easily managed with so much rain, particularly for organic growers who have to spray the vines after every episode if they were to sufficiently protect them. The stormy wet weather continued into July and it was viticulturally challenging to keep the vines in a good state. With the wet weather, it was difficult to get tractors into the vineyards to spray; organic producers were further limited by restrictions on copper applications. August was drier, but – like June and July – remained cold and the grapes only started to go through véraison (changing colour, representing the shift of the vine’s energy to ripening fruit rather than growing leaves and shoots) at the beginning of September. Even then, the ripening of the grapes was very heterogeneous and under-ripeness was starting to be a concern. As a potential harvest date grew near, another storm arrived, with substantial rainfall on the 17th, 18th and 19th September. Vignerons were forced to gamble, holding off picking until after the storm, despite the substantial threat of botrytis; or to pick before and risk under-ripeness. Most opted for the former, having to wait a few days for the dilution of the grapes that followed the rainstorms to pass before harvesting. It was then a race to get the grapes in before the onset of botrytis. Most started to pick from 20th September onwards. Vignerons had to identify which vineyards were most at risk and quickly get that fruit in before tackling other sites. Typically, the Grands Crus and Premiers Crus – with their elevation and aeration – were less affected, but no site was without risk. With such heterogeneous ripening, and the risk of both botrytis and under-ripeness, sorting was essential to produce quality wine in 2021. Any botrytis would make the must prone to oxidation and darken the colour, but most notably diminish the purity and minerality that defines Chablis. Hand-picking, protecting the fruit in small baskets and whole-bunch pressing the grapes were all key to preserving quality. The style of the vintage is defined by its relative coolness. The wines are taut, with powerful, energising acidity, putting the wines alongside 2011, 2012 and 2014. They aren’t as full as those of 2014 and 2012, yet have similarly vibrant acidity levels. Unlike the recent warm vintages of 2018, 2019 and 2020; 2021 is not a fruit-driven vintage, but more floral (white flower), herbal (a charming herbaceousness) matched by powerful energy from the acidity. With the cool conditions, warmer Premier and Grand Cru vineyards tended to fare better, with producers suggesting that Les Clos performed particularly well. The sunny site has naturally lower acidity, a rounder texture and huge natural density, playing to the leaner, acid-driven style of the vintage. Vignerons’ work in the cellar will also play more of a role in the finished wines. Domaine Long-Depaquit, for example, extended the lees contact and carried out more bâtonnage to create more body in the wine, helping better integrate the high acidities. With yields decimated by as much as 80%, only tiny volumes will be available, and the wines will prove particularly difficult to find after their initial release. Although the vintage was by no means easy, the best wines are classically styled with a backbone of vibrant acidity – offering a distinct change to the solar 2018s, 2019s and 2020s. Chablis 2021: a steely year for the region

Everything about Glenfarclas is venerable. For almost 200 years, the distillery with one of the most enviable addresses in Scotland has remained fiercely independent and committed to quality. Where countless others have amalgamated and joined behemoths of the industry, Glenfarclas has remained family-owned – amassing enviable stocks of aged single malt in the process. Today, the sixth generation of the Grant family maintains many traditional practices, including direct firing its stills, to produce the highest quality, full-bodied sherried Highland single malt possible. This resolution and myriad difficult decisions made by the family during times of immense hardship have led to genuine innovation and secured Glenfarclas a place as one of the most coveted and collectable names in Scotch whisky. But just how has one of the only family-owned Scottish distillers become such an icon and which Glenfarclas bottlings are the most highly sought after? The history of Glenfarclas The Glenfarclas distillery was built on the River Spey in 1836 when Robert Hay was granted a licence to distil whisky. Cattle breeder John Grant took over the farm and distillery following Hay’s death for 511 pounds and 19 shillings and leased it to John Smith who left five years later to build Cragganmore. The site passed between Grant generations until the Glenfarclas-Glenlivet Distillery Company was formed with Pattisons of Leith in the 1890s. This partnership wasn’t to last long and Glenfarclas was fortunate to weather the Pattisons Crash in 1898 that threatened to bring the entire industry down with it. The distillery has firmly remained under the Grant family’s ownership since. George Scott Grant is one of the key figures in the distillery’s long history. During his 52-year tenure, which ended with his death in 2002, George built up Glenfarclas’s name and brand image. George had the foresight to restrict the supply of stock to blenders and squirrel away stocks. This decision has proven extremely lucrative as Glenfarclas now boasts a depth of stock that few other whisky distilleries can rival. John L. S Grant, the current chairman, has been with the company since 1973 and succeeded his father in 2002. The sixth generation is represented by George S. Grant who joined Glenfarclas in 2000. George works as the larger-than-life global brand ambassador, introducing the world to the remarkable Glenfarclas story and spirit. The distillery’s fortunes oscillated throughout various whisky booms and busts. Production has increased, been scaled back, and considerable stock laid down when times were hard. Throughout all this, the Speyside distillery can legitimately lay claim to a series of firsts – it was one of the first single malts to be consistently available when others were concentrating on blends and it was among the first Scottish distilleries to open a visitor centre. It was also the first to introduce a cask-strength single malt whisky. Today, Glenfarclas operates the biggest stills in Speyside and its Highland single malt accounts for two-thirds of the distillery’s annual production – sold in more than 90 markets worldwide. Glenfarclas’s distillery character The distillery, located one mile from the River Spey, is situated on a stretch of land that boasts the likes of The Macallan,  Balvenie,  Glenfiddich and Aberlour. The distillery sources its water from the neighbouring Ben Rinnes mountains. Glenfarclas is famed for its full-bodied, Sherry-matured expressions. The distillery only releases expressions at natural colour, often at cask strength, aged for extended periods of time. The unique still shapes and sizes, alongside the traditional ingredients and distillation techniques add to the distinctive distillery character. Glenfarclas new-make spirit is only ever matured in a combination of first-fill and refill ex-Oloroso casks from the highly regarded José y Miguel Martin. John Grant makes an annual pilgrimage to the bodega in Jerez to ensure his Highland single malt will eventually slumber in the finest quality oak. To this day, all six of Glenfarclas’s stills, which are the largest in Speyside, are direct-fired. The distillery team experimented with steam heating in 1981 to no avail as the family believed the final product to be inferior and lacking its characteristic full-bodied style. The distillery is capable of producing approximately 3.5 million litres of spirit annually. Normally, two of the stills are kept in reserve, while four work around the clock. Glenfarclas single malt whiskies Glenfarclas has consistently released single malt whiskies of exceptional quality from its enviable stocks. The Grant family has more than 50,000 casks slumbering in its expansive on-site warehousing at any one time to draw from. In 2007, Glenfarclas gave the world a glimpse at its incredible depth of stocks with the first release of its highly collectable Family Casks bottlings. The series of 43 (and counting) single-cask, vintage single malts spans seven decades and is highly sought after by whisky lovers. In addition to the limited releases, Glenfarclas bottles a “made to age” core range, which includes the 10 Year Old, 12 Year Old, 15 Year Old, 17 Year Old, 21 Year Old, 25 Year Old, 30 Year Old and 50 Year Old. The distillery also produces an incredibly popular cask-strength bottling named “105 Cask Strength”. Some of the most collectable Glenfarclas bottlings Notable limited releases include the Glenfarclas 50-year-old (released in 2005) and the 175th anniversary commemorative bottling, released in January 2011. The latter was an impressive vatted whisky from casks from 1952 and five successive decades. In June 2015, Glenfarclas launched the highly collectable limited expression £511.19s.0d Family Reserve to mark 150 years of the Grant family’s ownership of the distillery. The bottling was named after the amount (511 pounds and 19 shillings) John Grant paid for the Glenfarclas farm in 1865, and came with a copy of the original bill of sale for the distillery. One of the most remarkable limited releases is the Glenfarclas Family Trunk, released in 2018. Only 60 of the leather shipping luggage trunks containing 50 bottles of 200ml single malt from the Family Casks collection, dating back to 1954, were ever produced. Today, a single trunk, available to purchase from the distillery, costs £120,000. In 2020, the distillery released another highly collectable whisky for the Spirit of Speyside Festival, which was cancelled due to the global pandemic. Each year, a member of the team chooses a spirit to be bottled for the annual whisky celebration. In 2020, the responsibility fell to the men behind the still, and The Stillmen’s Dram was born – a 10-year-old matured in a first-fill Oloroso butt, bottled at cask strength. The Glenfarclas Family Casks Collection The Glenfarclas Family Casks collection is a highly collectable series of single cask bottlings from the family’s extensive stocks. Since the first bottle was released in 2007, the Family Casks whiskies have garnered a loyal following and become a real collectors’ item. The single-cask whiskies, which span seven decades, are some of the finest expressions from each vintage since 1954. Glenfarclas Pagoda series The highly collectable Pagoda series features two of the oldest Glenfarclas whiskies ever released. The extremely limited vintage whisky bottlings are inspired by the famous pagoda kiln which was decommissioned at the distillery in 1972. Each Glencairn crystal decanter is a unique work of art. Getting to taste a vertical of any one wine is undoubtedly the best way to understand it. It provides that rare opportunity to see how well each wine has evolved, how each vintage was shaped by its growing season and whether the wine’s character and personality remains a constant throughout. But these 14 vintages of Colore – spanning the first 20 years of its existence – are as much about Bibi Graetz’s own evolution as that of the wines.  Over the last two decades there has been a dramatic change in the production of Colore – one that mirrors Bibi Graetz’s journey of discovery in winemaking and viticulture, having started as a complete amateur. From 2000 to the most recent vintage (2018), the wine has completely transformed in both where it is grown and how it is made.   As Graetz says, the concept behind Colore never changed. “I wanted to make the best wine possible. All that changed was how! In the past I thought the best grapes had to be the most powerful. We were green harvesting in the vineyard – getting the production as low as possible, we were bleeding off juice in the winery to increase the concentration, we were using new oak to bring more body, intensity, power.”  In complete contrast, today there is no green harvest in the vineyards: Graetz doesn’t even hedge the vines, preferring them to find their own balance. There is no more bleeding off, with Graetz believing a natural balance is more important than a higher level of tannins. There is no new oak anymore – just old barrels, large foudres of various sizes and cement tanks for maturing the wine. At the beginning, Graetz worked with a consultant, but as he took on more of the winemaking himself (from 2004 onwards), each experiment saw the wine style and production change, based on his own experiments and intuition.  One thing has remained consistent throughout: the unusual method of fermenting the wine in barrel. With Graetz’s commitment that Colore should be made with only the very best grapes, quantities were so small, a normal fermenting vat would not work. “My winemaker at the time came up with the idea – he said simply open up a barrique and ferment the grapes in them. Winemakers in California and South Africa were already doing these micro cuvées very successfully and I thought why not?” Graetz feels this is key to Colore’s style – exposing the must to lots of oxygen, integrating the oak with the tannins better, and with the smaller size leading to a different temperature range during fermentation.   While most of these changes were gradual, perhaps the biggest turning point for Colore came in 2008 with the discovery of the Lamole vineyard. Graetz’s focus has always been on sourcing grapes from Tuscany’s oldest vines and this vineyard – sitting at some of the highest altitudes in Chianti Classico – was to have a profound effect on the wine. The fruit from this special site rapidly started to dominate the blend. Prior to 2008, Colore sat alongside Bibi Graetz’s other prestige cuvée Testamatta – two wines of equal status exploring two different concepts, with Testamatta pure Sangiovese and Colore, a blend of the three red Tuscan grapes (Sangiovese, Colorino and Canaiolo). Graetz knew there was something special about the 2008 vintage, particularly with the introduction of the Lamole vineyard. Graetz decided to choose only the very best barrels for Colore, making production very limited and pitching it above Testamatta. The first vintage of the new Colore, 2008, sent the critics wild – and the price too.  For Graetz personally, the 2009 vintage marks another significant change, with a shift from power to elegance. The 2009 vintage was very difficult in Tuscany – making it difficult to get any concentration, something that Graetz was originally worried about. “But when I made the wine, the response was one of universal approval. It was lighter, more elegant and I saw the value in that.”   Tasting through vintages back to 2000, the 2008 remains the stand-out wine of the line-up and, whatever changes happened in the winery, you feel the 2009 difficult vintage conditions didn’t capture the magic and personality that the 2008 exudes. This is just one pair in the line-up that proves that vintage remains at the heart of a wine, no matter the changes in the wine cellar. The 2010 for example tells of its low yields, needing time to fully unfurl. Similarly, the more difficult 2011 and ’12 vintages show much more maturity than the ’10, ’08 or ’06.   The modern vintages become much more consistent – and, although still very youthful, you feel Graetz found his feet in terms of what he wants Colore to be. There is both elegance and natural power in these beautiful renditions of Sangiovese. The switch in style from the early vintages is remarkable. The 2005, 2004 and 2003 in particular are much more “international” in style. They are perfectly well-made monoliths, but don’t exude the personality of more recent vintages.   While today the 2008 remains the finest expression to date, you can’t help feel that many of the younger vintages could – with maturity – match it. As the vintages progress, Colore becomes ever more elegant, reflecting Graetz’s changing philosophy. Graetz’s evolution as a winemaker shines through in these wines, but the transparency that comes with that evolution – allowing the fruit to speak more clearly of a time and a place – that is the narrative. The resulting wines have as much personality as their maker.  Tasting through two decades of Bibi Graetz’s Colore  2018 Colore: The 2018 has a translucent ruby colour and a light floral perfume with pure, very compacted aromas of pot-pourri and red aniseed. Medium bodied, the tannins are fully ripe, resolved and beautifully silky for Sangiovese, bringing an effortless structure to the wine. Warming, ripe black cherry fruit fills the palate and sustains a long finish. Drink 2028-2045.  2016 Colore: With two years more in bottle, the 2016 is much more expressive than the 2018. Dried tobacco, rose talc, geranium, even a touch of cumin brings lovely floral complexity to the aromas. The tannins are that much more integrated and meld around a good core of fruit – with solid black cherry fruit flavours and dark chocolate notes. There is an overriding florality to the wine, adding further complexity to this beautifully balanced rendition. Drink 2026-2041.  2015 Colore: The 2015 is less expressive today than the 2016, which is somewhat surprising since you would expect the 2015 to be more open. There are darker elements to this wine, dominated for now by fragrant aniseed and dark chocolate aromas. The palate is silky soft with lovely, resolved tannins. It has compacted, concentrated fruit with an impressive density to the mid palate. Again, a solid core of fruit at its centre, melded with layered, detailed tannins. This will blossom but needs time. Drink 2025-2040.  2012 Colore: There is a huge difference contrasting 2012 and 2015, with three more years in bottle, heightened no doubt by the cooler vintage conditions. The wine in itself is in a lovely stage of evolution, with tertiary, savoury, maturing elements intertwined with more primary, floral and black plum fruit. The tannins are noticeably softer on the palate, less overtly present in dictating the wine’s character. This is both fresh and funky and with a touch of tertiary leather too. This is drinking beautifully now. Drink 2021-2028.  2011 Colore: Similar to the 2012 there are some noticeable maturing elements to the wine, providing a lovely complexity both to its aromas and palate. While the fruit character is less plush, the wine has a fantastic vibrancy and firmer acidity. Earthy, savoury tones and a touch of bloody iodine gives good typicity to the region, the variety and the vintage. Drink 2021-2030.  2010 Colore: The 2010 is incredibly youthful compared to the 2011 and 2012, showing how arguably vintage conditions play a significant role in the wine’s ageing ability. Yields were significantly down in 2010 and this shows in this dense rendition. The wine, similarly to 2015 is a little closed right now offering hints of iodine and earthy, black cherry fruit. Tasting the next day, the wine is much more open, the tannins are incredibly concentrated and there is amazing acidity too. The fruit on the palate is very pure. This is powerful and will no doubt mellow beautifully with age. Drink 2025-2035.  2009 Colore: Very developed on the nose, so much so that this bottle may not have been in perfect condition. The wine comes across a little oxidised with black liquorice aromas and light acetate notes. Fruit is ripe and slightly raisined, it seems almost later picked than other vintages and certainly more developed than older vintages.  2008 Colore: The wine of the line-up. This is an exceptional wine, firmly in its drinking window but with bracing acidity that offers plenty of life ahead. There are lovely tertiary notes, while also remaining fragrant and clean on the nose. The palate is very fresh with fine, silk-coated tannins providing a lovely breadth to the palate. This is so elegant and yet so rich; very Italian in style with dried floral lift, liquorice spice and bountiful black cherry fruit. Drink 2021-2030.  2007 Colore: The 2007 has a very complex nose with dry spice, aniseed, cured meats and a touch of blue cheese. This funkiness dissipates with air becoming more integrated and all the better for it. The palate remains very silky with maturing cherry fruit, pickling juices and figs. The acidity and tannins are totally melded to the fruit, providing an excellent textural quality to the wine, with a spicy chili finish. Drink 2021-2025.  2006 Colore: This wine shows very little sign of age, maturing at a snail’s pace. It retains a lovely Italian identity with vibrant acidity, cherry fruit and liquorice notes. There is almost no tertiary character to this wine, possibly another nod to the exceptional vintage conditions? The fruit is very concentrated, clean, and surprisingly youthful in character. I would love to explore this again with more maturity. Drink 2022-2030.  2005 Colore: Still quite youthful but lacks the perfumed fruit of younger vintages. Very ripe fruit with additional dry oak spices on the nose. The wine has a fine texture, layered tannins and more oak influence on the palate. Not so obviously Italian and more “international” in its style. Drink 2021-2026.  2004 Colore: Similar to the 2005, the wine has a lot of ripeness and intensity as well as spicy notes. More expressive than the 2005, there is a floral lift too. Tannins are a little less pleasing – slightly blocky in character and the fruit is quite ripe, bordering on raisined in character. The dried fruits developing possibly from age, although lacks the personality of some of the younger vintages. Drink 2021-2025.  2003 Colore: The 2003 was perhaps the most disappointing wine in the line-up and quite closed down. Graetz thought the wine was slightly oxidized. There was bitter chocolate on the nose, but the tannins were silky and beautifully melded and the acidity is well balanced. Despite this, the 2003 falls into a monolithic character similar to the 2004 and 2005, lacking a bit of personality. Drink 2021-2025.  2000 Colore: Certainly less monolithic than the ‘03, ‘04 and ‘05 and much more developed. This is fully mature, with pure tertiary characters on the nose – smoky, undergrowth and touch of funky Brett notes. This has lost much of its primary fruit and is on the decline. It’s 20 years since Bibi Graetz created Colore, one of Italy’s top wines. To mark the occasion, Gavin Smith tasted through 14 vintages – exploring the evolution of this rare Tuscan red, and its maker

A story in Sangiovese: two decades of Colore

The growing season The winter was mild with plenty of rainfall to replenish water reserves. The mild winter, combined with a dry spring, led to early budbreak, followed by a cold snap in April and May with pockets of hail and frost, and late flowering. June brought a heatwave – kicking off a warm, dry summer. Between June and mid-September, seven in 10 days exceeded 30˚C. At Domaine Saint-Préfert, Isabel Ferrando saw the mercury rise as high as 44.3˚C on 28th June. Having sufficient canopy to shade the grapes sufficiently was key, with a risk of sunburnt grapes – something not everyone escaped. Stéphane Usseglio reported that June’s rainfall was the same as in 2017, putting it amongst the driest years since 2004.  While the spring frost and hail had caused little significant damage, a torrential hailstorm on June 15th caused serious damage in Crozes-Hermitage. Golf-ball-sized hailstones pounded vineyards for 20 minutes and some producers lost as much as 80% of their crop. Fortunately, it was a localised attack. The dry weather meant the fruit at harvest was disease-free, with picking starting in early September. Some rain arrived on 18th September (15mm), welcomed by producers such as Ferrando who felt it added additional balance to the grapes. The growing season’s dry conditions produced small berries that produced very little juice, meaning yields were down by up to 40% (or more in Crozes). The wine made, however, benefited from more concentration thanks to the high skin-to-juice ratio. The wines Much as with Burgundy 2019, producers were surprised by the level of acidity in the juice and wines, which offsets the ripeness and concentration of the warm conditions. Where producers picked at the right moment, the resulting wines are outstanding and have great balance. In general, the South fared better than the North, with Grenache and Mourvèdre better suited to handling the hot, dry conditions.  Stéphane Usseglio describes the 2019s as "rich, complex, profound and velvety, opulent as Châteauneuf-du-Pape can be, yet surprisingly fresh, given the nature of the vintage.” He felt that his biodynamic practices (certified since 2015) were key in countering the effects of warmer years like 2019; using a chamomile tea spray to reduce hydric stress, for example. He is also tweaking work in the winery, with fermentation temperatures in recent years now cooler – around 26˚C (previously 32˚C) – to preserve the wines’ fresh fruit character. His vineyards are divided equally between stony and sandy soils, but felt both produced different but excellent, concentrated and lush wines in 2019. It was, however, the old-vine Grenache on
La Crau that goes into his Cuvée Impériale that stands out, and he feels it is the finest rendition of the wine since 2010.  Isabel Ferrando also emphasised the balance of the wines – with a natural concentration and acidity that implies long ageing potential. She felt that her Colombis cuvée – sourced from sandy plots – really excelled, as did her plots of Cinsault and Clairette. Saint-Préfert’s old-vine Cinsault (planted in 1928) is now going into a varietal wine, F601 and it is “explosive, full of fruit” in 2019; while she found Clairette’s natural minerality and liveliness, meanwhile, really comes through in the vintage. Overall, she finds the wines “spectacular, deep and energetic”; it is undoubtedly, in her view, a great vintage. Perrin noted the balance, finesse and complexity of the year; while Chapoutier highlights the elegance of the reds and particular minerality of the whites. Claire Darnaud at Delas compares the vintage to 2009 in style, but with more minerality holding everything together – something she attributes to the granite in her vineyards. This mineral feel is what for her prevents the wines feeling overly ripe or plump. Usseglio compares the 2019s to the stunning 2016s, but with a little something extra. He considers it “a hybrid between the concentrated and muscular 2005, and the elegant 2006”. Others are comparing the year to 1990; but the ageing potential of the best wines is clear.  The critics’ view Not everyone’s reports on the vintage have been published but the year has so far been well reviewed. Wine Advocate’s Joe Czerwinski noted late last year that the few 2019s he’d tasted “the reds… show ample ripeness and concentration without any evidence of cooked fruit, while the 2019 whites as a group look excellent, particularly those from Clos des Papes and Domaine du Pegau.” Josh Reynolds (Vinous) describes 2019 as “a vintage of extremely high quality and… the fifth straight stellar year for the region”. He emphasises the freshness and detail in the wines – a surprising trait in a year with such hot, dry conditions – with “an uncanny blend of depth and vivacity”. Jeb Dunnuck (who will report fully on the wines once bottled) feels they are a step up from the 2018s, offering “more depth, concentration, and richness, all while showing considerable purity of fruit and elegance”. Like the producers, he notes the wines’ “focused and lively” style, with “impressive aromatics” and no sign of over-ripeness. He also highlights the beautiful tannins the warm conditions produced, feeling they are concentrated with “serious potential” and feeling it will be “near the top of the pyramid in modern-day vintages”. Whilst for some of us a trip to Italy still seems far away, this postcard from Florence provides us all with inspiration for our future adventures. As a wine lover and epicurean, how would you best spend 24 hours in Florence? 
I’m a great epicurean or as we say here in Italy I’m completely into “dolce vita”. Florence has so much to give that after one life spent here I’m still surprised and astonished by the beauty you can find behind every corner. I love to have an early morning walk along the Arno river, there is a very easy path that follows the two banks.  Walking from bridge Santo Spirito to San Niccolò bridge and back when the city wakes up gives me cheerfulness and the good mood to start the day. A good espresso in one of the many caffetterie on the way and life smiles! If the day is not too hot I’ll probably climb the hill of Michelangelo from the San Niccolo gate and enjoy the best view of the city from Piazzale Michelangelo and the church of San Miniato. 
 At this point, I’ll probably descend from “via dell’erta canina” for a sandwich and a glass of wine at “Fratellini”, one of the oldest and most traditional kiosks of the city! Ill end the day resting in Boboli garden, the Medici private backyard of Palazzo Pitti before heading to “Santino” for a classic aperitivo in the smallest and cutest bar of the city. 
What are your top drinking spots in the city? 
When it comes to wine Florence has a lot to offer. The best places to enjoy a class of wine will be the Sesto, terrace bar of the Excelsior Hotel or the rooftop bar of Hotel Lucchesi, both with an amazing view and great wine lists. But my favourite place is Aurora, our new winery in Fiesole, with an amazing terrace overlooking the city of Florence, Chianti and the hills that frames the city. What is your favourite neighbourhood restaurant in the city?
 I love the traditional restaurant Cammillo, it is one of the oldest Trattoria of the city, still managed by the same family. It is chaotic but the atmosphere is warm and the menu rich of traditional dishes hard to find elsewhere. 
 What is your favourite dish they serve? 
Trippa alla Fiorentina, amazing! 
What are the culinary specialities of Florence and the surrounding area? 
Florence has a very rich cuisine, starting from aged salami, cheeses and charcuterie like finocchiona (made by the leftover of the pigs), but also pasta and soups like Ribollita (winter black cabbage and bread soup) Pappa al pomodoro (summer tomato and bread soup) or Tagliatelle that could be served with Cinghiale (wild boar) Lepre (hare) but the king of our cuisine is the Bistecca Fiorentina, a 2 kg steak served rare to medium-rare and made of Chianina beef. But don’t forget desserts like “Zuppa Inglese” or Cantucci and Vinsanto, the best way to end a heavy meal! 
If budget was not an issue where is the finest place to dine in Florence? 
Easy to answer: Enoteca Pinchiorri (three-Michelin), amazing food and probably the best wine list in the world. I’m very linked to this restaurant, it was my very first client in the world and for a few years Pinchiorri got all my production of Colore purchasing until the last drop of the wine! 
Florence has some world-class cultural sites. What is your favourite place to visit? 
My top three are: the Uffizi museum, you can’t leave Florence without a view of Venere and Primavera of Botticelli (and a good coffee on the rooftop bar of the museum), Santa Maria del Fiore (the duomo) with the adventurous walk to the top of the church and last but not least a visit to Fiesole village with its beautiful monastery. 
Is there an off the radar place in Florence that visitors should not miss? Florence can be very touristic and loud during high season but there are some places a bit off the radar like the “Giardino delle Rose” (the roses garden) beautiful in spring with hundreds of different roses or when open the Forte Belvedere with the Garden of Villa Bardini. 
 Florence is closely situated to the world-class wine regions of Tuscany – Where are the best places to visit for scenery and to discover the wine country? 
I will base myself on the hills overlooking the city, Fiesole can be the perfect base to visit the city and get out of the crowd when necessary. And from there move to Chianti Classico, Panzano in Chianti and Castellina are two lovely villages 30-40 mins away. If the plan is to visit Bolgheri or Montalcino better to base yourself on the coast or Siena. 
Where is the best place to enjoy your wines in Florence? 
I’m proud to say that our wines are considered the “local wines” in Florence, my winery is the closest winery to the city and I have been privileged for this reason, I’m the Florentine winemaker and my wines are very easy to find in most of the places in Florence. I get the occasion to toast to all our friends that I am sure I will be able to meet here again soon with a good glass of wine. Read more Editorial
