Inside Burgundy – Jasper Morris MW  “Bountiful and beautiful” reads the headline of Jasper Morris MW’s overview of the 2022 vintage in Burgundy. He finds it to be an overwhelmingly consistent vintage – one with “occasional touches of greatness”. He compares the whites to those of 2020, with a touch less energy but more precision, and the reds to 1985, 1999 or 2002 – “just short of top flight but a really lovely flavour profile of medium density and longevity”. Although he feels that it is not largely a year set to be legendary, these are wines that will drink well early, are unlikely to shut down and also have the capacity to age. It is a “fine and classic” vintage, but some areas have particularly impressed him: the whites of Puligny-Montrachet (where he feels there is a return of the appellation’s typical floral aromatics, and it's the finest vintage since 2017 or maybe 2014) and the reds of the Côte de Beaune, which he feels offer “just that little bit extra” in comparison to those of the Côte de Nuits, highlighting in particular the performance of Pommard and Volnay. In Meursault, he feels quality is generally excellent, but notes the sunny conditions led to the odd heavy wine, particularly so in Charmes.  He notes that in Nuits-Saint-Georges there was a storm a week after the much discussed event of 22nd June in Gevrey – impacting volumes largely, however he notes that there were a few wines with “furry tannins and less precision”. By contrast, Vosne-Romanée escaped the excesses of late June and is “looking very good”, with “some spectacular individual performances”, including Georges Noëllat and Mugneret-Gibourg. Although Chablis was at risk of frost, Morris explains how it escaped a repeat of the damages of 2021 and recovered yields with secondary buds. He argues that 2022 is “a very good vintage of clean, pure, well-constructed wines which are recognisably from Chablis – not the mouth-puckering style of previous decades, but Chablis in its modern image, which I would argue is every bit as valid”. Although accessible in youth, he feels the wines will age and some have “the potential to thrill”, not yet revealing everything they have to offer. For him it sits above most recent vintages, bar 2014, rivalling the wines of 2020.  Explore Jasper Morris MW’s full report, notes and scores on Inside Burgundy (subscribers only)  Burghound – Allen Meadows  In Allen Meadows’ report on Chablis, the Mâconnais and the Chalonnaise, he writes that the “relatively tranquil if incredibly warm” growing season resulted in “ripe, delicious, plump and round whites and very ripe yet still fresh reds, both of which should repay short to mid-term cellaring”. Like Morris, he emphasises the consistency of the year – and a rare vintage where both colours excelled. Despite the exceptionally hot and dry conditions, the 2022s are “fresh, bright and utterly delicious, if not classically styled, reds and whites”.  He feels that the best 2022 whites are defined by their freshness, while for the reds it is their generous textures – “a seductive blend of velvet and punch”. Although it is a consistent year, he warns that a handful of wines are a little heavy with acidities not always as high as he’d like.  For the whites, he compares them to 2020 or 2017, but with a little more flesh than the latter, and the reds are again closest to the best 2017s but a little riper. The best 2022s, Meadows says, are “lovely ‘do everything’ wines. This is to say that even if they’re not destined to be great wines, they do everything well.”  As for the Côte de Nuits, Meadows declares 2022 a “modern classic”. Despite the hot, dry growing season, “the wines, while ripe, are wonderfully refreshing and transparent”, “vibrant and inviting”, impeccably well-balanced”.  Interestingly, he suggests that the vintage’s lower alcohol levels are attributed to inefficient yeast converting 18.5g/l sugar to 1% alcohol, rather than the standard 17-17.5, something that producers can’t explain.  The reds are, he says, “fun” – “ a pleasure to drink”, yet also offer “substance, complexity and intellectual titillation”. They combine transparency with concentration, he feels, and that is a seductive combination. The tannins are “ripe, pliant, and, for lack of a better term, don’t stick out”, while the acid levels maintain balance, even if they aren’t analytically that high. He emphasises the wines’ approachability, yet also their ageability.  Although he doesn’t pretend that it is entirely uniform, with some wines that don’t meet his standards, it is “less variable than probably any vintage since 2015”. Comparisons are various and tricky, but he feels that 2022 is a combination of two-thirds a ripe vintage, with one-third of a fresher one – such as 1990 and 19991, 1996 and 1997, 1999 and 2000 and so on. Whichever you compare it to, Meadows is clear that the 2022s “belong in any serious Burgundy collector’s cellar”.  Explore Allen Meadows’ full report, notes and scores on the Burghound site (subscribers only)   jancisrobinson.com – Matthew Hayes  Jancis’s “man on the ground” in Burgundy is Matthew Hayes, and he provides the bulk of her coverage, although she will offer thoughts following tastings in London in mid-January.  “Beyond any doubt, 2022 has produced excellent, both red and white, up and down the Côte d’Or and beyond,” writes Hayes, although pinning down where it sits on the spectrum of great to good proves tricky. While there are outliers, he feels that the wines generally show “impeccable balance of tidy, ripe fruit, discreet acidity and equally (and mostly) refined tannins”. Many of the Grands Crus, he says, are concentrated and intense, yet “disarmingly understated” – not as rich and savoury as 2019 or 2020, but there are nevertheless “some absolute crackers”. He finds that the classification of wines is generally reflected in the wines, with each tier offering a significant step up in quality. Most importantly, although exceptions exist, it is “across the board and in both colours” a year that has produced fresh and balanced wines for the medium to long term – with value and quality.  Read Matthew Hayes’ full vintage report, notes and scores on the Jancis site  Decanter – Charles Curtis MW and Andy Howard MW Decanter’s Chablis coverage comes courtesy of Andy Howard MW. For Howard, 2022 is “a very good year – and potentially an excellent one” in Chablis, earning a 4.5 rating (out of a possible five). He finds the wines offer good balance and taut acidity, combining typical minerality with riper fruit thanks to the warm, dry conditions. He suggests the wines blend the freshness of 2017 or 2021 with the ripeness of 2019 and 2020, but picking date was key to retaining acidity – and some who missed the mark produced higher-alcohol, tropical wines. The best, however, will “age beautifully for many years”, thanks to their “winning combination of fruit ripeness combined with fresh acidity and classic Chablis notes of salinity and minerality”, making it “a year to stock up on”.  As for the rest of Burgundy, Charles Curtis MW writes that the reds offer “lush fruit expression, full body, well-developed but velvety tannins and abundant extract”, while he argues that the whites are mostly best for early drinking, with similarly “lush fruit” and “relatively soft acidity”. It is the acidity that limits the wines, in his view, mostly for the whites – meaning they earn a four out of five, while the reds reach 4.5 in Decanter’s vintage rating system. The reds “will age gracefully in the cellar”, and he feels are largely homogenous. Although he found the whites more varied, he notes that those of the Côte de Beaune’s most famous villages – Meursault, Puligny-Montrachet and Chassagne-Montrachet – were generally consistent.  Explore Andy Howard MW’s Chablis report, notes and scores or dive into Charles Curtis MW’s report on the rest of Burgundy in 2022 on the Decanter site (subscribers only)  Vinous – Neal Martin  Once the satirical introduction, with a commentary on pricing, is out the way, Neal Martin dives into his detailed report on 2022 – a year that he feels is “a treasure trove of bright ‘n bushy-tailed whites and reds in a season that implied such wines would be impossible, wines predestined to give immense drinking pleasure”.  He highlights how June’s dramatic thunderstorms were key and have defined the vintage, balancing the hot, dry conditions. “I posit that vines were stressed, but stress that they have learned to cope with,” he says. Pairing this with a shift towards a gentler touch in the winery has sculpted the 2022s – wines which he is clearly impressed by.  As we found, he emphasises that producers are split on whether the wines should go through another winter’s élevage or should be bottled early, emphasising that the high volumes of 2023 and limits on cellar capacity are a consideration at some addresses.  All in all, “I cannot remember a Burgundy vintage that elicited so much joy from barrel,” he says. He highlights the whites’ “freshness, particularly their textures, and the deft use of extract that lends weight and presence and heightens umami”, while the reds “fit more into the mold of cooler and classically styled vintages. Lighter colors, delineated aromatics, often tensile, surprisingly vibrant wines with ample weight and length, despite comparatively higher pH levels that vary between 3.25 to 3.50 pH”. The lower alcohol levels (12.8-13.5% for the most part from his conversations) are key, “lifting terroir expression and enhancing that elusive, intangible notion of Pinoté. Prosaically, it imbues the 2022s with drinkability.” The wines’ approachability is perhaps their weakness, he suggests, as the wines are “blessed with the balance and substance to mature exquisitely in bottle”, yet the reality is that most will be consumed within the next five years.  While quality is very consistently high, he doesn’t feel that the year is “a bevy of potential legendary wines” – not perhaps quite reaching true greatness in his book. That said, he advises readers to “fill their boots” where prices seem fair, for it’s a year he “will enjoy returning [to] time and again”.   Explore Neal Martin’s full report, notes and scores on Vinous (subscribers only)  Wine Advocate – William Kelley  Last out of the gate with his report is William Kelley, declaring 2022 “another very strong Burgundy vintage, offering excellence in both colors and in a wide variety of styles, foregrounding the fascinating nuances of site that render this region so interesting”, with wines that are “succulent, suave and charming”.  He notes how the dry, hot conditions somehow slowed the fruit’s development, as well as being another to emphasise the importance of June’s rainfall, as well as the sprinkling that fell in late August which “unleased ripening”. He warns that picking dates were key and at the extreme fringes, “early-picked 2022s present a delicate, pretty style that can lack a little substance” while later-harvested wines “span a spectrum from deep and muscular to overtly fat and jammy”. Fortunately, however, he finds that most wines sit between the two – “harmonious and charming with alcohol between 12.5% and 13.7%, reminiscent, in reds, of a hypothetical marriage of 2017’s easy charm with some of 2015’s depth and in whites, evoking a somewhat more giving, open version of the 2020 vintage”. These are, he says, “pleasure-bent Burgundies that will delight in their youth and at maturity”.  The success of the year is not merely due to the growing season, he writes, however, but the adaptation of producers to warming conditions – both in the vineyard and winery. Pricing remains a challenge, and he discusses the various factors at play, but celebrates the fact that few producers looked set to increase prices. Beyond this, he also highlights the ongoing threat posed by the troublesome rootstock 161-49C – highlighting that this is another reason to take advantage of “a comparatively abundant crop of high-quality wines”, something which “isn’t to be taken for granted”. One hundred years ago, two men, inspired by the Scottish distilling tradition, produced the first Japanese whisky. In the years that have followed, the category’s fortunes – much like its founders’ relationship – have been turbulent.    The story begins in 1923 when pharmaceutical wholesaler turned Spanish wine importer Shinjiro Torii invested his family fortune in building the Yamazaki distillery, against their advice. Torii enlisted the help of wet-behind-the-ears chemist Masataka Taketsuru – who had spent time learning his craft in Scotland – to lead production on their first whisky, Suntory Shirofuda, which was released in 1929. The two men did not see eye to eye and parted ways following the dismal reception of Shirofuda. Taketsuru famously went on to found the other great Japanese whisky producer, Nikka, and their fierce rivalry persisted. This is one of the reasons Japanese distilleries, to this day, blend in-house rather than trade liquid. Despite this rocky start, the Japanese domestic whisky market looked bullish by the late 1930s – Yamazaki’s next whisky (Suntory Kakubin, released in 1937) was more warmly received and Taketsuru successfully re-entered the scene with his first whisky, Nikka Yoichi, in 1940.  Fast forward to the early 1980s and the category was in fine fettle – Suntory and Nikka had both released their first single malt expressions and there was plenty of cause for optimism. But this prosperity sadly did not last as a steep decline in consumption caused the Japanese whisky market to splutter and almost entirely stall, resulting in many distilleries, including Karuizawa, being forced to close their doors. Both Yamazaki and Nikka managed to stay afloat but their output was significantly reduced as the economy and category stagnated, marking a bleak 25-year chapter in Japanese whisky’s history.   When demand was reignited around the mid-to-late 2000s, it largely came from Europe. A perfect storm caused this spike in interest, including wider interest in Japan (think Bill Murray in Lost in Translation), the resurgence of the Highball cocktail (circa 2007) and Suntory’s Yamazaki Single Malt Sherry Cask 2013 being named the world’s best in 2014 – a first for the category. Around this time, the world was also introduced to Ichiro Akuto’s highly collectable Card Series and the lost distilling icon, Karuizawa. “The mad scramble for crumbs on the Japanese whisky scene is something nobody could have predicted,” acclaimed Japanese whisky writer and Ghost Series independent bottler Stefan Van Eycken tells me. “In the space of 10 years, the situation went from being able to buy a whole range of single-cask Japanese whiskies at a big electronics chain for peanuts to bottles not even reaching the shelves of liquor stores anymore. “Even I, who had been exploring the Japanese whisky scene in the ‘dark ages’, couldn’t have predicted that,” he says matter-of-factly. “If I could have, I would have rented a van, bought up all the bottlings that were available for purchase and I could have retired by now.” Yumi Yoshikawa joined the team at Chichibu in 2013 after a two-year stint in Scotland, first working in the Highlander Inn in Craigellachie – which will require little introduction for spirits journalists or enthusiasts – and at the Bruichladdich Distillery on Islay. “People didn’t know the value of aged [Japanese] whisky back then,” Yoshikawa tells me. “Or that Japan had a long whisky history,” she adds. Somebody who was instrumental in educating the world on these two points is Marcin Miller, a man whose fortitude dragged Karuizawa out of obscurity. The genteel and thoroughly entertaining former Whisky Magazine Editor turned drinks entrepreneur, recalls the landscape when he and business partner David Croll first tasted those fateful Karuizawa single casks in the early 2000s.  “The most common complaint [from whisky enthusiasts] at the time would seem to be that it's all very well for me tasting this stuff but we never get to see any where we are in Western Europe or Northern America,” he recalls. So the two men set about changing this by buying the remaining stock from the then-lost Karuizawa, bottling it, and making it available to the masses – with resounding success. It’s a gross misapprehension – held by many – that the duo meandered into a meeting room, tasted a parcel of Karuizawa, bought it on the spot, and bottled it shortly after, grinning like Cheshire cats as the coffers swelled. In truth, it was four and a half years of negotiation and countless sleepless nights during the process. When pallets of casks from the ghost distillery in a nascent whisky market were finally shipped to them, there was no guarantee the wider whisky world would be interested. “Whatever anyone says, it really was not easy…” He trails off, transported to that time, and all the challenges the pair transversed when bringing the mature Japanese whisky from a then-unknown producer to its now almost mythic status.  Miller talks of the “extraordinary, phenomenal effect” Karuizawa had on him. Croll, Miller and acclaimed drinks writer Dave Broom – who has since quite literally written the book on Japanese whisky – initially tasted 69 single-cask Karuizawa samples. “I would have bottled any of those casks,” Miller says, a fond smile warming his face. If it hadn’t been for Croll, who had lived in Japan for 30 years and owned a successful drinks business, Miller says they likely never would have got a foot in the door at Karuizawa – or secured the exclusive distribution rights of the much-lauded Chichibu and Hanyu. “I dare say Karuizawa would have been blended away into big plastic five-litre tubs of supermarket whisky,” Miller says reticently. When Van Eycken moved to Japan around the same time as Miller and Co were negotiating the Karuizawa deal, he hadn’t even realised whisky was being produced there. Japanese whisky consumption and production were at an all-time low and the general feeling, he says, was that the whisky made in Japan was “cheap and good for getting a buzz when going out, but that the good stuff – that you would savour – was Scotch, and Bourbon, to a lesser extent”. The intrepid Van Eycken was taken aback by the quality of the long-aged liquids he sampled on his travels and couldn’t understand why this sentiment wasn’t shared domestically or further afield. When Japanese whisky’s popularity did finally begin to soar, he was perfectly placed to fill the knowledge chasm with his widely acclaimed Nonjatta website and, later, his seminal work Whisky Rising – a fully updated second edition of which came out earlier this year.  “When I wrote the original edition in 2016, there were 14 active distilleries in Japan,” he says. “Fast forward to mid-2022 and there were 41 active distilleries (and even more in the progress of getting ready to distil),” Van Eycken tells me. All of the new distilleries, he says, are attempting to follow the so-called “craft model” with a single pair of pot stills and fairly limited production. The inspiration, of course, being Ichiro Akuto and his incredible accomplishments over the past 15 years at Chichibu. “But not everyone can be an Ichiro – though most new distillers are certainly hoping to be equally successful, if not more, than Ichiro,” he adds. Several of these new distilleries are located in and around the town of Karuizawa. “My personal feeling is that it doesn’t make a lot of sense to try and compete with the legend that is the (old) Karuizawa distillery,” Van Eycken is quick to add. “The liquid that was made there turned out to be something very special, and not only by design. I have had the dubious pleasure of tasting the new-make from the old Karuizawa distillery and it was absolutely foul.  “But during the maturation process, over 20, 30, 40 years, something magical happened. Some of this can be explained, but most of it is a hermetic mystery. We simply cannot know why decades later this harsh spirit transformed into a sublime whisky (in most cases). Even if you wanted to replicate this whisky – or aspects of it – you couldn’t.  “And hoping to match the quality of the (original) Karuizawa whisky… well, it’s good to aim high but it's a bit like naming your kid Roger Federer in the hope that he would turn into a tennis player of the same calibre. Why would you want to put that sort of pressure on the kid?”  Miller is humility personified and doesn’t want to come across as a wizened cynic or, in his words, “boring old fart”, but he’s not confident that all the country’s new distilleries are set for success. “I think people are now trying to replicate the business success but without the foundation of the liquid. They are selling Japanese whisky futures but who knows what the liquid is going to be like because it's not just A + B = C.” There is a cautionary tale in the annals of Scottish whisky distilling that Japanese producers might be wise to heed. Scotch has famously fallen victim to its own success – with booms and busts resulting in whisky lakes, or lochs, that have crippled the industry and forced mass distillery closures. In so faithfully replicating Scotch, there is a real danger Japan will find itself back in the 1980s when the likes of Karuizawa were shuttered. This time, however, there would be many more casualties.      “For the time being, the Japanese whisky scene continues to be marked by an unbridled optimism,” Van Eycken adds. “Distillers price their (invariably young) whiskies very high (compared with similarly established whisky markets around the world) and consumers snap up the bottles regardless of the (sometimes unjustifiably) high prices.”  This price war is one of the reasons Miller et al sold their remaining stock of Karuizawa, which had initially been priced fairly but wasn’t the case when they left the scene. The 1960 Karuizawa, for example, which yielded 41 bottles was released circa 2014 for £12,500. Within a decade, those same bottles were easily reaching $375,000. “That's not a bad return in 10 years,” Miller says caustically. “But that's not why we did it. If that had been our motivation, we'd have just held on to it and had 41 times that.” For those still in the industry – and disciples of it – there is a real push to protect the integrity of Japanese whisky and futureproof it. Yoshikawa picks up the point, outlining that the few have muddied the water for the many: “The rapid publicity and the reputation of Japanese whisky have led to its use of excessive PR strategies, even when this is not in line with the facts of the product.” For these reasons, she is an advocate of more stringent regulations, like the ones announced by the Japan Spirits and Liqueurs Makers Association in 2021 which aims to restrict certain practices – like labelling whisky that isn’t actually from Japan as Japanese whisky – akin to those enshrined and strongly policed in Scotland. But she, like many, thinks these could go further and believe it is important to continue scrutinising the practices of the small and larger players, ensuring there is greater transparency and less “skullduggery”, as Van Eycken puts it. As the ink dries on the past 100 years of Japanese whisky, no one knows what the next century might entail – but there's plenty of excitement. The landscape will undoubtedly change once more, and new giants and legends will likely emerge. For whisky enthusiasts, the challenge – as always – will be pre-empting the plot twists and securing bottles before they become little more than folklore. Andrew Jefford isn’t like other wine writers. Browse his Instagram account and you’ll find not a bottle in sight. Check his Twitter and you’ll find a steady, quiet stream of haiku – or, as he prefers to describe them, “short texts”. These feeds are – like Jefford –gently honest; absent of ego, flash and fanfare. His prose is poised and purposeful, each word carefully considered yet never weighed down by pointed effort. He is a rarity in the world of wine: a writer whose (main) topic happens to be wine.  “I was always a huge reader. It always meant more to me than anything else,” Jefford tells me, thinking back to his childhood. But wine was omnipresent. As the son of a priest, it was a part of family life, consumed “on high days and holidays”.   “I remember first tasting Champagne with my brother, at the age of 10 or 11,” he says. “It was the first tasting note we agreed on: it tasted like vomit. Things got better from then on, happily.” The slight, wiry wine writer smiles, seeming almost sheepish about the wines that he’s since enjoyed.  Aged 16, Jefford decided to start making wine – brewing up grape juice concentrate and whatever else he could find– to supplement supplies at Sunday lunch. The transformative effects of fermentation hooked him – but it was the concept of terroir that reeled him fully in.  He was working at a local hospital, but after his shift – armed with The Penguin Book of Wines and André Simon’s A Wine Primer – he’d venture out to browse the shelves of “French Wine Farmers”, a wine shop in Norwich. He vividly recalls taking home a bottle of Chianti and being struck by the magic of travelling through a glass. “That’s full of wine. And every drop in there came from a vine in Tuscany. I’m drinking Tuscany!” he recalls thinking.“ And I’ve still not got over that. It’s amazing.”  Wine took a back seat when he set off to study English at the University of Reading, before embarking on both a Masters and PhD. The lure of words led him into publishing – a background which, along with his academic approach, defines his writing today. He spent four years “editing mediocre copy into something readable” – but eventually had had enough, and leapt at the chance to write a book on Port.  From there, he wrote articles for Margaret Rand in Wine Magazine, then Decanter, where he’s now a Contributing Editor and his monthly column is the stuff of legend. He was, for a number of years,The Evening Standard’s drinks writer, penned features for The Financial Times and is a regular in The World of Fine Wine. He’s authored several books – including the deservedly totemic The New France. Published in 2002, it looked beyond Burgundy and Bordeaux, shining a light on the nation’s varied wine scene at a moment when it was going through a revolution. If that wasn’t enough, he’s dabbled in radio, presenting for BBC Radio Three and Four.   While wine might be his mainstay, he’s written extensively on whisky and other spirits (including his respected book on Islay, Peat Smoke and Spirit), as well as travel and perfume. But writing, rather than any particular topic, is his real trade. His editorial experience has been key: his prose is intelligent, considered and a masterclass in eloquent economy – something that he finds all too often lacking elsewhere.   Two of Jefford's most famous books: The New France (2002) and Peat Smoke and Spirit (2004) “One of the problems is that a lot of [wine writing] is online, so there aren’t space constraints,” he decries. “[Wine writing] tends to attract quite large egos. They do write three times more than they need to – because they think it’s all wonderful.” It’s perhaps the lack of ego in Jefford’s writing that sets it apart. He seems to approach any topic unbiased and open – still with the wide-eyed joy of that first bottle of Chianti. Wine remains, to him, “dead exciting”.   “It’s a great shame that fairly early on the rest of the journalistic world decided that wine was a ghetto,” Jefford laments. “It embraced wine with gusto initially – probably in the 1990s – then it all got very boring once we passed 2000 and they just asked everybody to offer recommendations and that’s it. Newspapers are no longer a great school for wine writing in the way that they once were.” It is an industry, he feels, sorely in need of imagination. “There’s such a weight of detail to communicate that people never get their head above the waves of the detail.” And that detail, the intricacies of wine – or “its enormous apparatus of geekdom” – are the challenge. He hopes that his latest book, Drinking with the Valkyries – a collection of his work from the last 15 years, “could climb out of the wine ghetto – to anybody who enjoys language, enjoys storytelling, enjoys the interrelation of place and flavour that wine can offer”.  But, by his own admission, wine is “never going to be a mass market popular subject”. While the industry was long obsessed with finding its own “Jamie Oliver” – someone to bring wine to the masses, food is an essential part of life – “whereas wine need be a part of nobody’s life”.   Wine has, undoubtedly, come a long way – “vastly democratised” – but he worries about the “top end of things”, where wine has become so exclusive as to be “almost a plutocracy”. Wine criticism, for him, is intricately linked to the category’s self-imposed segregation, with “its relentless focus on points, excellence and things being better than other things – hierarchy, rather than difference”.  He’s long been vocal about scoring, feeling like Hugh Johnson that – although they may be of practical use to consumers, who undoubtedly want them – they are “philosophically untenable” and “disempowering”.  “You’re being misled to some extent if you think the 96-point wine is always better than the 94-point wine. It’s miles more complicated than that,” says Jefford, who scores wines reluctantly.“ And very often the 89-point wine can be better than either the 96- or 94-point wine.” His advice to wine drinkers is simple: “Trust your palate.”  Despite his impressive resume and effortless intellect, Jefford’s modesty shines through in our conversation – as we dash from the dangers of climate change (“Misery throughout the Third World – but the Bordelais and Bourguignons are raking it in”) to a fascinating co-fermented 15-variety blend from a Lirac estate (Ch. de Montfaucon’s Vin de Mr le Baron). And while the 66-year-old might be softly pensive in the written – and spoken – word, there’s such energy to the man himself.  He’s invariably described as a wine thinker, a philosopher-cum-writer, as well as – of course – a poet; but it’s impossible to pigeon-hole Jefford, his ideas, or his voice.  Andrew Jefford’s book Drinking with the Valkyries, published by Académie du Vin Library, is out now.

The most famous vineyard in Argentina is named after Dr Adrianna Catena, who is the youngest daughter of pioneering vigneron Nicolás Catena Zapata. As well as her viticultural endeavours at Catena Zapata and her partnership with Alejandro Vigil as co-founder of the cult Argentine winery El Enemigo, she is a practicing historian.  Her area of interest is the 15th and 16th century Americas – a time when wine (and the vine) were first introduced to the continent following the Spanish conquest. The pivotal role of wine in Catholic ritual, and the dangers associated with drinking fresh water, she believes, would shape the development of wine production in the Americas. For Catena, the intimate relationship between wine and water continues to play a central role in shaping Mendoza’s social landscape.  The history of water and wine in South America is a fascinating topic for Catena. Although her PhD thesis focused on the trade in indigo dye from the Americas to Europe, her attachment to wine – as well as the very real concerns of water scarcity in Mendoza – are subjects important to her as a historian and as a vigneron. Through the Catena Institute of Wine (CIW), the Catena Zapata winery has pioneered research in viticulture across a broad rand of topics. It includes ground-breaking work on terroir, ageability, and soil biodiversity, as well as in depth studies on extreme elevation vine growing in a context of changing climatic conditions – but some of their most pressing work centres around water preservation.  “Water preservation is one of our most important areas of research today,” says Catena. “Organic farming is easier in the very dry climate of Mendoza, than in Bordeaux, where higher rainfall and relative humidity mean vineyards will be more susceptible to fungal diseases – for us, when it comes to a sustainable future and regenerative farming, water preservation is key.” Catena Zapata’s head viticulturalist Luis Reginato is nicknamed “the water guy” at Catena – such is his obsession.  “He’s always trialing new, experimental ways to save water.” But she notes, the region has a long successful history of water management for Reginato to tap into. “The irrigation systems developed by the native Huarpe people before the arrival of Europeans were key to successful agriculture in the region, and these systems are still in use today,” says Catena.  For centuries, irrigation channels and aqueducts have diverted water from the Andes mountains to terrace lower Andes farmlands, bringing fresh drinking water to the cities. The Incas, Catena says, whose power extended briefly to this region, were quite unique among early modern empires in the quality of their nutrition and a notable absence of famine – made possible by terraced agriculture on the Andean slopes and complex irrigation systems.  While advanced water networks had been essential to pre-Hispanic and later colonial agriculture, Europeans treated drinking water with caution. “Up until the last century, it was a common belief that water, especially in exotic or tropical regions, could be bad for your health,” says Catena. “Contaminated water could (and can still) kill you and was considered extremely dangerous.” Wine in many parts of Europe (and the Americas, following the Spanish conquest) along with ales and beer, was often considered a safer option. Where they felt there was no access to clean water, wine became an essential part of the diet.  Wine was a key European import in the early days of the Spanish conquest, notes Catena. And for the Spaniards, it was not without its health benefits. “During this period, medicine was humoral, people believed everything you ingested would affect your mood, health, and disposition,” she explains. “In one claim from the time, ‘vino‘ (wine) came from the word ’vena‘ (vein) – it was considered nourishing, and closely resembles blood and was associated with this. Some believed it fortified the veins.”  But, as Catena explains, wine was more than a health benefit for the conquistador. “Wine was also an essential symbol of Christianity and Christianity was a moving force in the Spanish conquest.” The conquest of Mexico would roughly coincide with the start of Luther’s Reformation.  The Spanish, for their part, wanted to secure a triumph for Catholicism, and in the inhabitants of the new world, saw millions of souls to fill their ranks against the Protestants. “It was the conquistador’s mission,” she says. “Behind the conquest was a big effort to convert the native population.” Catena explains how wine – as with wheat – was a highly symbolic food for Christianity, representing the blood of Christ.  “If you are trying to convert an entire native population to Catholicism, rituals will be fundamental,” she says. Wine had always held a central role in religious ritual and was key to the religious side of the Conquest. Conquistadors, she explains, had to build a church on their land after being awarded territory by the Crown for their service – and they were also made responsible for converting the indigenous population. “In this quest, as one historian put it, to advance the religious and territorial conquest – the two basic foods the Spanish needed were wheat and wine.” Initially, all wine was imported from Europe, but vines were swiftly introduced and acclimated. By the 1570s vineyards had been planted all over South America, albeit under strict regulations. Priests, for example, were allowed to plant vineyards – but there was a lot of legislation over who could and couldn’t grow grapes. By the 1570s vineyards had been planted all over the Americas.  For health, religious and cultural reasons, everyone drank wine in 16th and 17th century South America – it was part of the diet, explains Catena. But as the influence of humoral medicine waned following the Enlightenment – and better sanitation practices were discovered – the perceived symbolic benefits of wine declined. As the population grew exponentially in the 19th century, so did wine production in Argentina. Italian and Spanish immigrants arrived on the continent, leaving behind their famine-stricken homelands. “Wine consumption reached extraordinary levels,” says Catena, “particularly with the development of the railways.” This new technology enabled the speedy, efficient transportation of wine from producing regions to the Argentine capital of Buenos Aires. Nicola Catena was one such immigrant, who arrived in Mendoza in 1898 at the age of 17, planting his first vineyard in 1902. A native of Le Marche, from a family of vinegrowers, it was not so surprising that Catena went into wine production.  While Mendoza is much like a desert with very little rainfall (between 200 and 400 mm per year), the irrigation channels developed by the indigenous Huarpe people (a nation periodically under Inca rule), were used to divert snow melt from the Andes, enabling farmers to flood farmland when required, making viticulture possible. By the time Nicola’s son Domingo Catena took over, the family had become renowned winemakers in Mendoza. In more modern times, wine and water’s relationship has changed considerably. Wine in many instances has become a luxury and no longer an essential part of the diet – although Catena says that culturally wine remains a common sight at every meal in Argentina.  Under the guardianship of Nicolás Catena and now his daughter Laura, Catena Zapata has become among a growing number of quality-led producers in Mendoza whose wines compete with the finest in the world. Their top wines – Mundus Bacillus Terrae and Nicolás Catena – led the charge in putting Mendoza on the fine wine map. Water too is no longer viewed with as much caution, but nor is it taken for granted. It barely rains at all in Mendoza – with the region effectively a high-altitude desert. Without snowmelt from the mountains, agriculture here would be impossible, but glacial reserves in Argentina are decreasing. With climate change, water in these parts will no longer be simply available at the turn of a tap. “The preservation of water has become an important concern of winemaking in Mendoza. This is one of the most urgent questions for our region today,” says Catena. Ongoing research at Catena includes many water-saving experiments. “More than a decade ago we transitioned all our vineyards from the traditional, but wasteful system of flood irrigation, to drip irrigation. Since then, we’ve created reservoirs to capture rainwater, and set up water stations to measure and restrict irrigation to the bare minimum in our family vineyards.” For Catena, “these small changes can have a large and lasting impact.” The goal at Catena is to manage a regenerative and sustainable agricultural cycle. Catena notes how the Incas were able to transform their environment without causing irreparable damage to it. “We can inhabit this earth without being parasitical,” she says. As members of a larger viticultural community, Catena hopes to share the lessons it has learned from its research, to enable this region that has been shaped by water and wine to continue making high-quality wine centuries from now. Optimistically she says, “We believe we are at a tipping point, and the mindset is gathering momentum here more than ever before.” Since wine was introduced to the continent in the 16th century, there have been huge cultural changes. But the irrigation systems that allowed those first vines to grow remain in use, feeding the countless vineyards, often centuries old. Without water, there will be no wine. With Argentinian wine so popular around the world today, a lot rides on Catena Zapata’s research. The hope is that they can lead the charge, shaping a bright future for this region. Ch. Haut-Brion is one of the oldest and best-known names in fine wine. The Bordeaux First Growth estate was created by Jean de Pontac, back in 1533, and its wines were among the first to be exported. Records detail 169 bottles of the wine (then as “Hobriono”) served to guests in 1660 by King Charles II. Just a few years later, on 10th April 1663, Samuel Pepys wrote in his diary that he had drunk “a sort of French wine called Ho-Bryan [sic] that hath a good and most particular taste I never met with”.   
While Ch. Haut-Brion is the oldest known estate in Bordeaux to bottle and label its wine as a Grand Cru, bearing both name and terroir – the name “Haut-Brion” has an historic attachment to a fair few other winemaking estates in the Graves region. The name Haut-Brion roughly translates as hillock and refers to the raised gravel hills found in the surrounding vineyards. It is these distinct raised, Günzian gravel soils that have provided such ideal conditions for grape growing over the last 500 years or so – providing the vines with much-needed drainage in Bordeaux’s marshy flatlands. Below the deep gravel lies a bedrock of clay which locks in the moisture, releasing it only when required in the drier summer months. This terroir is the secret behind the vineyards’ historic levels of consistency. 
Other famous châteaux that share the Haut-Brion name are all situated in the Graves region, just south of Bordeaux’s city centre. Ch. la Mission Haut-Brion, situated immediately across the road from Ch. Haut-Brion, with neighbouring vineyards, is the most famous, while Ch. les Carmes Haut-Brion is situated just to its north and Ch. la Tour Haut-Brion to its south.
Controversially Ch. Larrivet Haut-Brion is not close to the other properties, but further south, near Ch. Smith Haut Lafitte. The property changed its name from La Rivette to Ch. Haut-Brion Larrivet in 1874, and it was only following a lawsuit, filed by Ch. Haut-Brion in 1949, that the château was forced to change its name to Larrivet Haut-Brion. (Neither Les Carmes de Haut-Brion or Larrivet Haut-Brion have a connection to Ch. Haut-Brion and the wider Clarence Dillon portfolio.) 
Today, Ch. Haut-Brion and neighbouring Ch. la Mission Haut-Brion are the two flagship estates of Domaine Clarence Dillon. Clarence Dillon was an American immigrant, who made his fortune as a financial broker on Wall Street in the 1920s. With French ancestors and a passion for French gastronomy (which included him taking an introductory course at the famous Paris cooking school, Le Cordon Bleu), he spent much of his spare time in France. In 1935, he eventually persuaded the current owner, André Gilbert, to sell him Ch. Haut-Brion, his favourite wine estate, and the property has remained in Dillon the family ever since. 
Clarence Dillon’s granddaughter, Joan Dillon, and her second husband Philippe de Noailles, Duke of Mouchy, expanded their holdings in the region, when they purchased Ch. la Mission Haut-Brion and Ch. la Tour Haut-Brion in 1983. It was following this acquisition that some famous neighbouring châteaux were absorbed into the portfolio and some wines discontinued, with the fruit instead used for Haut-Brion or La Mission Haut-Brion. 
The range as it stood in 1983 included the Grand Vins Haut-Brion and Haut-Brion Blanc, La Mission Haut-Brion and their famous white wine, Laville Haut-Brion. In addition to this, Ch. Haut-Brion produced a second red wine called Bahans Haut-Brion and a second white wine called Les Plantiers Haut-Brion. At Ch. La Mission Haut-Brion they produced a second red wine called La Chapelle de la Mission Haut-Brion and also the red wine of Ch. la Tour Haut-Brion. 
In 2008 the fourth generation of the Clarence Dillon family, Prince Robert de Luxembourg took control of the estate, and a flurry of name changes took place, however the fruit sources have remained stable. From the 2008 vintage, Les Plantiers Haut-Brion was renamed La Clarté de Haut-Brion, while Bahans Haut-Brion became Le Clarence de Haut-Brion from the 2007 vintage. Laville Haut-Brion, La Mission’s famed white wine, was returned back to La Mission Haut-Brion Blanc from the 2009 vintage. 
For the Prince, the name changes were mainly a way to simplify the range for collectors. In fact, La Mission’s top white had originally been called La Mission Haut-Brion Blanc when first produced in 1923, however the winery didn’t feel the quality was on a par with the red and so changed the name to Laville Haut-Brion (after the lieu-dit where the white grapes were grown) in the 1930s. Bahans Haut-Brion had also taken its name from its lieu-dit; the name change reflected that it had become a second wine, not a cuvée from a separate vineyard (and paid tribute to Prince Robert’s gread-grandfather). 
Perhaps the biggest casualty in the development of the Haut-Brion properties was the discontinuation of Ch. la Tour Haut-Brion – with the last vintage 2005. Before Clarence Dillon bought the property in 1983, a portion of the grapes of the four-hectare estate went into the Grand Vin of La Mission Haut-Brion, while the rest was bottled as La Tour Haut-Brion.  Clarence Dillon bottled fruit from all four hectares of the property separately for a time, and it gained its own strong following – known for consistently producing memorable, age-worthy wines that defied its relatively low price point. But, in 2005, Domaine Clarence Dillon decided to put all the fruit into the second wine of La Mission Haut-Brion – La Chapelle de la Mission Haut-Brion – and Ch. La Tour Haut-Brion was no more. 
Between the 1950s and 2012, an additional wine – Domaine de la Passion Haut-Brion or Domaine Allary Haut-Brion – was made. The wine has an interesting story, relating to a parcel of vines in the heart of the Haut-Brion vineyard, but owned by the Allary family. The Allary family didn’t make wine, but rented the vines to Haut-Brion, who paid them back by bottling some wine – which otherwise would have been Haut-Brion’s Grand Vin or second wine – under a special label, Domaine de la Passion Haut-Brion.  This was produced from 1954 to 1978. In 1979, EU law forbid the same wine to be bottled under a different label, so between 1979 and 2007, the fruit from these vines went into the second wine of Haut-Brion (then known as Bahans Haut-Brion). From 2008, the Allary family took back control of the vines and produced their own wine. Made by a different winemaking team managed by Stéphane Derenoncourt, the wine was bottled under a new label, Domaine Allary Haut-Brion. This lasted just five vintages until 2012, when Clarence Dillon finally bought the land from the family and the wine was discontinued. 
In 2011, the fourth generation of the Dillon family, Prince Robert de Luxemburg, branched out beyond the Graves region to buy Ch. Tertre Daugay in Saint-Emilion along with the vineyards of neighbouring Ch. l’Arrosée. From the two estates, he created Quintus. Ideally situated next to Ch. Bélair-Monange and Ch. Angélus, the vineyards are situated on a limestone hillock in the south-western end of the Saint-Emilion plateau.  In 2021, Domaine Clarence Dillon bought Ch. Grand Pontet, another 14 hectares of top Saint-Emilion terroir to further expand the Quintus estate. With the viticulture and winemaking at Quintus all under the control of the talented Haut-Brion team, it’s not surprising that Quintus has quickly gained its own following of collectors. Alongside the Grand Vin, a second wine Le Dragon de Quintus (first produced in 2011) and a third wine Saint-Emilion de Quintus (first produced in 2014) are made.

These various lost properties and wines are becoming harder to find, but offer a fascinating way to explore the full DNA of the modern-day Haut-Brion, La Mission Haut-Brion and Quintus.

The lost wines of Haut-Brion

Quiet, even subdued, cautious, the Neal Martin on my screen is quite different to the garrulous character I’d imagined from his writing. On the page (or more often these days, the screen), Martin pokes fun at the wine industry, his articles often opening with satirical fiction that doesn’t hold back.  His reports and tasting notes are littered with music references (think Primal Scream and The Smiths rather than Wagner and Bach), and mentions that are sometimes pointedly popular – his first Bordeaux en primeur report for the Wine Advocate (taking over from Robert Parker) opened with a line from Harry Potter and the Deathly Hallows. On our call, however, each word feels deliberate and considered, confident, but with a definite wariness that doesn’t quite fade.  Aged 50, the Vinous writer’s trajectory to wine stardom is unusual. Born in Essex, Martin grew up in a household that didn’t drink wine, so nor did he. In fact, he had no interest in it and blagged his way into the industry. In 1996, having lived in Japan, he applied for a role sourcing wines for a subsidiary of Japan Airlines: the only hitch that he didn’t know anything about wine at the time.  “I lied my way through the interview. I went to an off-licence the night before. Memorised some of the labels. I just reeled off a couple of names… [they] thought I was into wine and gave me the job,” he tells me, still rather bemused by their decision. Coincidentally Martin returned to the same shop last year, where unbeknown to him, his tale lives on as local offy legend – the famous wine taster that got his start right there in Leigh-on-Sea (with the owners even deeming him worthy of several selfies).  Unashamedly a terrible employee, he spent much of his time in his role for Japan Airlines starting his wine writing career (although it also sounds like there was a fair amount of lunching too). “I was kind of bored one lunchtime, bought a book on computer coding. I found I could make a webpage, and just kind of built the original wine-journal.com when I should have been working,” he says. From the novelty of creating a site, he started writing his own tasting notes. At that time the great wine writers were Michael Broadbent, Steven Spurrier and Hugh Johnson – English gentlemen, in short; charming, wonderful, but – for many – unrelatable, very “high culture”, as Martin puts it. He set out to be “more down-to-earth, funny, irreverent”.   “At the time, there was nobody else really doing that. There was this huge audience that liked to drink Bordeaux – but also liked Radiohead.” It struck a chord – and soon his self-built site was getting over 500,000 hits per month. No wonder therefore that in 2006 Robert Parker – then still at the height of his fame – approached the music-minded Englishman to join the Wine Advocate team.   Of course, Parker was renowned for not just the power of his palate and revolutionary points system, but for his personal tastes. Many argue that his preference for intensely ripe, high-octane, new-oak-aged styles shifted the entire world of wine – pushing producers to craft wines that would earn his favour. “Especially more to the end of his career, he had a certain palate… but people always forget that he reviewed German wines and Alsace and so on. So it becomes a little bit of a cliché,” Martin says of his once mentor.  The world of flavour is undeniably subjective, yet Parker was – by some – damned for just that, daring to express his personal preference. Total impartiality when it comes to the matter of taste seems impossible. After I ask whether or not he feels there’s room for bias in wine writing, Martin is clear: “I think a critic should stand up for what they believe in. Anyone can say the First Growths are great, DRC is great. I’d rather read someone who has a definite view on something, whether they like natural wines, or orange wines. Stand up for what you believe in. Then it’s up to the reader to decide.”  In fact, he goes as far to say, it’s potentially the lack of difference in views that has led to wine criticism becoming “a bit beige” in recent years – because now it’s a career, something upon which people depend for their livelihood. “It’s more of a risk if you say this famous name didn’t produce a great wine,” Martin notes. The danger of losing access to wines that are far beyond most critics’ budgets is a threat to the independence of wine writing, but also a massive obstacle to new voices in the industry. It’s an especial challenge given many of the wines Martin reviews – in particular older vintages – might only be pulled out at private dinners, hosted in producers’ homes. The very nature of wine – limited in production and fleeting in its consumption – leads to a reliance on the hospitality of its makers. Martin argues that for that exact reason the most independent “critics” are arguably those he describes as the “grands amateurs” – those who can afford to buy the world’s finest wines, and therefore say what they want.   Martin, however, feels there’s a line to be found where he can maintain distance yet be friendly – and, importantly, speak freely. He highlights Laurent Ponsot’s 2015s – which he gave relatively scathing scores – but, having known Laurent for many years, Martin was happy to tell the vigneron outright that he thought they were picked too late.  As for Martin, he had a lucky start with access to unbelievable wines in what he deems a “golden era” for fine wine in the 1990s, when top Burgundy and First Growths remained affordable for the many – and were poured freely by the trade. “I’ve never taken that for granted. Some of the wines I drink… they’re what my friends earn in three or four months. I never drink a wine and I’m blasé about it. But I’ve been around long enough to say what I think.”   Preserving his voice has always been of key importance to Martin – not willing to compromise on keeping his distinctively tongue-in-cheek tone, but also offer something more than just a tasting note. “When I joined Parker, it was an easy decision – he was a kind of god. But at the same time I wanted to make sure I could still write in the way I wrote,” he tells me. “Anyone can taste the wines and add a number, but for me it’s more interesting to create something that’s interesting, gives you insight… that’s the challenge: to write something people don’t expect,” Martin says. Does he feel he’s achieving that? His answer: “When my primeur report comes out, read the first three paragraphs and let me know.” [We spoke at the end of April, just before the report was published.]  For Martin, his love of music is integral to his work. Indeed, it seems that way – the record player and stacks of vinyl visible behind him on our Zoom call, his Instagram feed almost equally split between sleeve covers and labels – and he feels that it makes him a better writer. He looks back to Hugh Johnson (an avid gardener) or Michael Broadbent (pianist and art enthusiast) for precedent. “Wine can be a boring subject – but it’s when you put it with other things that it becomes more interesting,” he says.  Case in point is his recent article on Grand Mayne, he tells me: “It’s more about time, and parenthood, and… kind of sad in a way. To me, that’s the kind of counterbalance to the dryness about wine. It smells of strawberries and it’s 92 points. There’s the other side to the story – that’s the harder part to write, but for me it’s more satisfying.”  Indeed, he even self-published his book Pomerol (in 2012) to avoid the unwelcome interference of editors. In 2017, Martin made the leap to Vinous – joining fellow Wine Advocate alumnus Antonio Galloni’s new venture, and while he’s kept his voice, he’s also had to learn how to be edited “which was… quite a challenge for me at first,” he admits. “But actually now it’s something I really needed. I think they make better articles, it makes me think a bit more about writing.”  There have been a lot of bottles over the years (Vinous alone holds over 21,000 of his tasting notes), but it was a bottle of 1982 Montrose that started everything. “It wasn’t the best wine I’ve ever had by a long way… It’s a disappointing 1982,” he says. “Enjoy with modest expectations” reads his note from 2017 (88 points – upgraded to 91 points at his most recent tasting in 2018). Disappointing it may be, but it’s the bottle that made him sit up and take wine seriously, realising why people obsessed over it – although he’s clear that, for him, wine isn’t everything.  “Wine is my job – if it didn’t pay I couldn’t do it. I love wine, but I don’t think I’m obsessed with it. I don’t drink wine every day, and it doesn’t bother me if I don’t. If you think wine is everything, you’re missing something,” he says, frankly. I wonder how much this perspective has been shaped by Martin’s quadruple bypass surgery two years ago – a skirmish with the other side that has forced a visibly drastic lifestyle change, and about which he has been vocal.  In Martin’s own words, it’s a “bizarre set of circumstances” that set him on his wine-lined path, yet here he is, his pen and palate working in combination to make him one of the world’s most influential wine writers. While the golden era that allowed him to enter the industry might be over, he feels that – despite now being “very, very expensive” – in some ways wine is more accessible than ever.  “I meet so many more people from so many walks of life. I love it when you sit around the table and everyone’s from different countries. But as soon as you put a wine in front of them – everyone’s on the same level.” While one can’t argue that Martin champions the “everyman” reviewing the world’s finest wines, it’s remarkable in many ways that he hasn’t erred from his original purpose. Though the Essex-born critic doesn’t seem comfortable under the spotlight, on the page he’s at ease – free to fight against the pomposity of wine, with an irreverence and knowing self-ridicule that has put him front and centre in the industry – whether he likes it or not.  Read more Editorial

There are few people that get to taste Bordeaux as often or as thoroughly as the Wine Advocate Editor-in-Chief Lisa Perrotti-Brown MW. Based in Napa, her knowledge of how the Bordeaux varieties are managed – both in Bordeaux’s moderate climate and the hotter region of Napa – has become a huge asset in understanding and assessing Bordeaux in a warming climate. With such exposure to vintages past and present, being mentored by the world’s most influential critic Robert Parker, there’s no one better to consider what defines Bordeaux today.  Perrotti-Brown has a clear idea of how and why Bordeaux has changed so much in the last 20 years, while at the same time emphasising that there’s no “hard stop” to an era. An individual château’s period of change can be different to its neighbours. “It seems like every château has had its challenging period,” she says, “whether it be a dogmatic winemaker, recurring faults in the winery or even financial difficulties.” Each era of Bordeaux is not simply defined by set vintages, however – with the benefit of hindsight – she believes you can see clear, defining moments over the last two decades where the style of Bordeaux has changed. Like much of the wine world in the 1980s and ’90s, Bordeaux châteaux were still understanding the effects of faults in their wines – whether it be volatile acidity, dissolved oxygen or Brettanomyces. With increased emphasis on ripeness and new oak, these issues only increased. “Brett and other faults love new oak and higher alcohol, it was almost a perfect storm,” she explains. But as this became more of an issue in the region, it led to more research, bringing about a much better technical understanding of why these things were happening. It was this scientific awakening that Perrotti-Brown believes was the catalyst for the modern era. “Momentum for change has sped up in the last 20 years and there have been lots of triggers,” she says. “There is a better understanding of what ripeness is, precision viticulture and winemaking, the development of technology and of course there is climate change.” But outside this and perhaps the most important “trigger” behind this change, she believes, is money. “To run a château has become very expensive: 30 or 40 years ago many of these châteaux were simply operating as agriculturalists, now it is a multi-million-dollar business.” Big money has no doubt brought about big investment and Perrotti-Brown believes in many ways it has “levelled the playing field”. A lack of investment in the winery and vineyard is now a rare excuse for poor performance. “It has raised the standard throughout the region. Investment and greater precision has created a lot of diversity – more than we have ever seen before.” In terms of taste, the most positive developments in Bordeaux for Perrotti-Brown come from the vigneron’s better understanding of ripeness, both in terms of tannin ripeness and fruit concentration. “Hindsight is a beautiful thing,” she quips, “but we have seen dark periods on both sides of the spectrum in Bordeaux.” There were real issues with lack of ripeness through much of the 1970s and ’80s. High production levels saw diluted grapes harvested and simply chaptalized (sugar added) to bring up the alcohol, then at fermentation, the must was overworked to extract enough colour and tannins. Since top Bordeaux was known for its long ageing potential, this was necessary to create the structure to age – “Otherwise you were going to end up with a diluted, watery mess,” explains Perrotti-Brown. This extended maceration saw the extraction of very hard tannins – “the wrong sort of tannins that come at a later stage of extraction”. “It is better extraction techniques, only extracting quality tannins, that is a major reason behind the most recent improvements,” Perrotti-Brown explains. She points to the legendary 1982 vintage. “A lot of people at the time were saying the tannins of the ’82s were too soft, too juicy, too fruity and it just wasn’t true.” The vintage was warm, particularly for that era. “At harvest the vignerons were picking grapes with a natural ripeness to the tannins, which meant during extraction the tannins and colour came easily.” They didn’t have to overwork the grapes to extract the tannins, producing wines that were great in their youth and have since aged incredibly well. It was the quality, not quantity, of tannins that stood the 1982s in such good stead, a lesson that wasn’t necessarily learnt instantly. Overworking the musts and a lack of concentration continued to be commonplace throughout much of the ’80s and ’90s. Many wines were hugely extracted and required plenty of patience. “You compare that with now,” she says. “I was discussing the 2020 vintage with Ch. Margaux’s Philippe Bascaules – and he barely needed to touch the grapes during extraction.” At better ripeness levels (as seen in 2020), the colour and tannins extract themselves. In the mid-90s to early 2000s, however, there was “a chase for ripeness”, in Perrotti-Brown’s words. “It was the beginning of the garagiste era – with reductions in yield, later picking and an emphasis on power. You had super low yields, producing behemoth, impenetrable wines in their youth, 200% new oak etc – people were really pushing the boundaries.” It is a style that is seen by many as actively encouraged by Perrotti-Brown’s mentor Robert Parker, who at this point was arguably the most influential man in Bordeaux. The incredibly hot 2003 vintage marked a watershed moment for Bordeaux. “Bordeaux winemakers had never seen anything like it. Grapes were turning to raisins on the vine,” Perrotti-Brown says. Despite the year’s conditions which exposed the push toward ripeness, the emphasis on power continued up until the 2010 vintage. Despite the focus on ripeness and extraction, there were some exceptional vintages – but Perrotti-Brown questions how well these wines have since aged. This is, in her view, a key shift in the region. She compares tasting the 2005s en primeur, with tasting the vintages of today. While 2005 was clearly a fantastic vintage, tasting these wines so young was really difficult, with aggressive tannins. Many winemakers were, Perrotti-Brown says, “making wines by formula”. A high-quality vintage gave vignerons a free ride to push the extraction even more. The criticism often made of 2005 is that it has taken such a long time to come around. Similar issues are raised with the same vintage in Burgundy. The year was at the height of the trend for maximum ripeness and extraction, for both Bordeaux and Burgundy, and the resulting wines shut down for a long period. Perrotti-Brown accepts that people have different expectations on when to drink Bordeaux, but she loves to drink wine in its mid-life, when there is both primary fruit and tertiary development. The problem with the 2005s, she says, is that that window never really opened: the wines remained closed, only beginning to open up now, when there is little primary fruit left. “Many of the ’05s are, wow, exceptional now, but you miss that sweet fruit and it’s what I like about the modern vintages,” she says. Looking back, “Winemakers could have dealt with 2005 much more wisely.” The 2009 vintage provides an interesting contrast. Like the ’82s, the natural ripeness of the tannins meant the wines didn’t shut down in the same way the 2005s did. Of course, higher levels of alcohol also helped increase the potential tannin extraction. Alcohol is a solvent. Increased ripeness, which in turn leads to higher alcohol levels, can therefore lead to too much phenolic extraction. While this was a risk for many wines in the early 2000s, fortunately today’s winemakers know much more about how to handle riper fruit. The 2010 vintage might have been the last year of big, bold, extracted wines, it was nature rather than the Bordelais that dictated the change, Perrotti-Brown notes. The ’11, ’12, ’13 and ’14 vintages meant winemakers had to deal with cooler, more difficult vintages. It was not possible to produce bold wines in these vintages and retain balance. This was almost a period of introspection for Bordeaux and, for Perrotti-Brown, it led to a distinctive development where “the ethos of precision” took charge from the 2015 vintage. While there are of course exceptions, from 2015 Perrotti-Brown feels you started to see more plot-by-plot management of the vineyard, with picking times becoming much more accurate – picking plots and fermenting them separately, “rather than throwing everything together”. Extraction also became much more precise, focusing on only the quality tannins – a marked change from the previous era. This new ethos brought, in Perrotti-Brown’s view, a lot of “soul-searching” in the vineyard, with people like Alfred Tesseron spearheading a movement toward more sustainable practices. But overall, Perrotti-Brown notes, “There is so much creativity too and many people are doing different things. It has created a lot of diversity.” Amongst the creative changes happening in the winery and vineyard, developments in the wine’s élevage always seems to be a big talking point in Bordeaux. Oak is an integral part of the Bordeaux “recipe”, but – after an over-reliance in the 2000s – its use was becoming increasingly scrutinised. “Oak doesn’t ever go,” she says. “It settles down, integrates and evolves with the fruit, but it can push itself forward.” “Oak is absolutely necessary for giving shape and spice to the fruit, as well as tannic interest to the wine,” says Perrotti-Brown: for her, it’s about oak being used “smartly”. “Most people have pulled back on the new oak from the 2015 vintage onwards, but, like the tannins, it is not about more or less oak, but about using it more wisely. There is a much better understanding of oak today and much better quality of oak being used. What it lends to the tannin structure is a nice back up to the skin tannins and a spiciness in the background.” The new era – from 2015 onwards – is certainly contributing to Bordeaux being “on a good run”, in Perrotti-Brown’s words. But while there is great consistency today, she’s under no impression there won’t be problems ahead. “Warm, dry vintages have become the norm, but how warm and how dry before this becomes an issue? Bordeaux was lucky in 2020 that they got a bit of rain in August,” she says. While a lot has changed over the last 20 years in Bordeaux, there are no guarantees for the future. No matter the technology, Bordeaux’s fate lies in the hands of the shifting climate – and terroir, or more specifically the clay or limestone soils equipped to deal with hot, dry conditions, has never been so important. For now at least, though, Bordeaux is basking in its era of precision, with 2020 the third great vintage in a row. Let’s hope Mother Nature holds the region in her favour a little longer. Maturation, distillation and the base grain combine to give whisky its character. But – while it only takes a week from milling to filling a cask – the new-make liquid will spend years in cask, a minimum three for it to earn a Scotch whisky label, but often significantly longer. As the spirit lies in wait in a cool, dark cellar, flavour from the cask – and whatever the cask previously held – is imparted. It is believed that as much as 80% of the final style is determined during this time. Most would argue that it is this carefully monitored process that makes whisky such a fascinating and coveted liquid.  But the trend for transferring that whisky from one barrel to another is a relatively modern phenomenon. Cask finishing, wood-finishing, secondary, double or consecutive maturation are all names given to this process, whereby matured whisky is aged for an additional length of time in a second, different cask.   As is often the case with anything whisky-related, the process was pioneered in Scotland, but it has since found its way around the globe. In 1983, under the guardianship of David Stewart MBE, Balvenie launched Balvenie Classic.  Known today as Balvenie DoubleWood, it was one of the first Scotch whiskies to be matured in re-fill American oak casks before being transferred to first-fill European oak Oloroso Sherry butts. Around the same time, Glenmorangie was maturing whisky in Madeira casks. Its experiments led to inconsistent results and the team switched to Sauternes casks – and the Nectar d’Or was born. To this day, the Highland distillery is one of the biggest proponents of finishing – experimenting with casks that have previously held Port, American rye whiskey, PX Sherry and Sassicaia. Fast forward 40 years and some of the biggest names in the blended Scotch world have embraced cask finishing. Blends aged in rum, mezcal and Port casks have all been released in the past year, much to the delight of new and old whisky drinkers.  The rules surrounding this secondary practice are relatively fluid. As such, a cask-finished whisky could have spent anywhere from six months to two years maturing in a barrel that has previously held rum, red wine, Madeira, Port or even stout. The second stint in cask is generally intended to introduce new flavours that complement and enhance rather than dominate and overpower the spirit’s inherent character.   Many of the world’s leading whisky distilleries have embraced the trend, following in the footsteps of the likes of Balvenie and Glenmorangie. With the resulting whiskies regularly winning major awards, high scores and favour amongst consumers, the fashion for cask-finishing shows no sign of abating any time soon.   Explore our range of Scotch whiskies or read more Editorial
