One hundred years ago, two men, inspired by the Scottish distilling tradition, produced the first Japanese whisky. In the years that have followed, the category’s fortunes – much like its founders’ relationship – have been turbulent.    The story begins in 1923 when pharmaceutical wholesaler turned Spanish wine importer Shinjiro Torii invested his family fortune in building the Yamazaki distillery, against their advice. Torii enlisted the help of wet-behind-the-ears chemist Masataka Taketsuru – who had spent time learning his craft in Scotland – to lead production on their first whisky, Suntory Shirofuda, which was released in 1929. The two men did not see eye to eye and parted ways following the dismal reception of Shirofuda. Taketsuru famously went on to found the other great Japanese whisky producer, Nikka, and their fierce rivalry persisted. This is one of the reasons Japanese distilleries, to this day, blend in-house rather than trade liquid. Despite this rocky start, the Japanese domestic whisky market looked bullish by the late 1930s – Yamazaki’s next whisky (Suntory Kakubin, released in 1937) was more warmly received and Taketsuru successfully re-entered the scene with his first whisky, Nikka Yoichi, in 1940.  Fast forward to the early 1980s and the category was in fine fettle – Suntory and Nikka had both released their first single malt expressions and there was plenty of cause for optimism. But this prosperity sadly did not last as a steep decline in consumption caused the Japanese whisky market to splutter and almost entirely stall, resulting in many distilleries, including Karuizawa, being forced to close their doors. Both Yamazaki and Nikka managed to stay afloat but their output was significantly reduced as the economy and category stagnated, marking a bleak 25-year chapter in Japanese whisky’s history.   When demand was reignited around the mid-to-late 2000s, it largely came from Europe. A perfect storm caused this spike in interest, including wider interest in Japan (think Bill Murray in Lost in Translation), the resurgence of the Highball cocktail (circa 2007) and Suntory’s Yamazaki Single Malt Sherry Cask 2013 being named the world’s best in 2014 – a first for the category. Around this time, the world was also introduced to Ichiro Akuto’s highly collectable Card Series and the lost distilling icon, Karuizawa. “The mad scramble for crumbs on the Japanese whisky scene is something nobody could have predicted,” acclaimed Japanese whisky writer and Ghost Series independent bottler Stefan Van Eycken tells me. “In the space of 10 years, the situation went from being able to buy a whole range of single-cask Japanese whiskies at a big electronics chain for peanuts to bottles not even reaching the shelves of liquor stores anymore. “Even I, who had been exploring the Japanese whisky scene in the ‘dark ages’, couldn’t have predicted that,” he says matter-of-factly. “If I could have, I would have rented a van, bought up all the bottlings that were available for purchase and I could have retired by now.” Yumi Yoshikawa joined the team at Chichibu in 2013 after a two-year stint in Scotland, first working in the Highlander Inn in Craigellachie – which will require little introduction for spirits journalists or enthusiasts – and at the Bruichladdich Distillery on Islay. “People didn’t know the value of aged [Japanese] whisky back then,” Yoshikawa tells me. “Or that Japan had a long whisky history,” she adds. Somebody who was instrumental in educating the world on these two points is Marcin Miller, a man whose fortitude dragged Karuizawa out of obscurity. The genteel and thoroughly entertaining former Whisky Magazine Editor turned drinks entrepreneur, recalls the landscape when he and business partner David Croll first tasted those fateful Karuizawa single casks in the early 2000s.  “The most common complaint [from whisky enthusiasts] at the time would seem to be that it's all very well for me tasting this stuff but we never get to see any where we are in Western Europe or Northern America,” he recalls. So the two men set about changing this by buying the remaining stock from the then-lost Karuizawa, bottling it, and making it available to the masses – with resounding success. It’s a gross misapprehension – held by many – that the duo meandered into a meeting room, tasted a parcel of Karuizawa, bought it on the spot, and bottled it shortly after, grinning like Cheshire cats as the coffers swelled. In truth, it was four and a half years of negotiation and countless sleepless nights during the process. When pallets of casks from the ghost distillery in a nascent whisky market were finally shipped to them, there was no guarantee the wider whisky world would be interested. “Whatever anyone says, it really was not easy…” He trails off, transported to that time, and all the challenges the pair transversed when bringing the mature Japanese whisky from a then-unknown producer to its now almost mythic status.  Miller talks of the “extraordinary, phenomenal effect” Karuizawa had on him. Croll, Miller and acclaimed drinks writer Dave Broom – who has since quite literally written the book on Japanese whisky – initially tasted 69 single-cask Karuizawa samples. “I would have bottled any of those casks,” Miller says, a fond smile warming his face. If it hadn’t been for Croll, who had lived in Japan for 30 years and owned a successful drinks business, Miller says they likely never would have got a foot in the door at Karuizawa – or secured the exclusive distribution rights of the much-lauded Chichibu and Hanyu. “I dare say Karuizawa would have been blended away into big plastic five-litre tubs of supermarket whisky,” Miller says reticently. When Van Eycken moved to Japan around the same time as Miller and Co were negotiating the Karuizawa deal, he hadn’t even realised whisky was being produced there. Japanese whisky consumption and production were at an all-time low and the general feeling, he says, was that the whisky made in Japan was “cheap and good for getting a buzz when going out, but that the good stuff – that you would savour – was Scotch, and Bourbon, to a lesser extent”. The intrepid Van Eycken was taken aback by the quality of the long-aged liquids he sampled on his travels and couldn’t understand why this sentiment wasn’t shared domestically or further afield. When Japanese whisky’s popularity did finally begin to soar, he was perfectly placed to fill the knowledge chasm with his widely acclaimed Nonjatta website and, later, his seminal work Whisky Rising – a fully updated second edition of which came out earlier this year.  “When I wrote the original edition in 2016, there were 14 active distilleries in Japan,” he says. “Fast forward to mid-2022 and there were 41 active distilleries (and even more in the progress of getting ready to distil),” Van Eycken tells me. All of the new distilleries, he says, are attempting to follow the so-called “craft model” with a single pair of pot stills and fairly limited production. The inspiration, of course, being Ichiro Akuto and his incredible accomplishments over the past 15 years at Chichibu. “But not everyone can be an Ichiro – though most new distillers are certainly hoping to be equally successful, if not more, than Ichiro,” he adds. Several of these new distilleries are located in and around the town of Karuizawa. “My personal feeling is that it doesn’t make a lot of sense to try and compete with the legend that is the (old) Karuizawa distillery,” Van Eycken is quick to add. “The liquid that was made there turned out to be something very special, and not only by design. I have had the dubious pleasure of tasting the new-make from the old Karuizawa distillery and it was absolutely foul.  “But during the maturation process, over 20, 30, 40 years, something magical happened. Some of this can be explained, but most of it is a hermetic mystery. We simply cannot know why decades later this harsh spirit transformed into a sublime whisky (in most cases). Even if you wanted to replicate this whisky – or aspects of it – you couldn’t.  “And hoping to match the quality of the (original) Karuizawa whisky… well, it’s good to aim high but it's a bit like naming your kid Roger Federer in the hope that he would turn into a tennis player of the same calibre. Why would you want to put that sort of pressure on the kid?”  Miller is humility personified and doesn’t want to come across as a wizened cynic or, in his words, “boring old fart”, but he’s not confident that all the country’s new distilleries are set for success. “I think people are now trying to replicate the business success but without the foundation of the liquid. They are selling Japanese whisky futures but who knows what the liquid is going to be like because it's not just A + B = C.” There is a cautionary tale in the annals of Scottish whisky distilling that Japanese producers might be wise to heed. Scotch has famously fallen victim to its own success – with booms and busts resulting in whisky lakes, or lochs, that have crippled the industry and forced mass distillery closures. In so faithfully replicating Scotch, there is a real danger Japan will find itself back in the 1980s when the likes of Karuizawa were shuttered. This time, however, there would be many more casualties.      “For the time being, the Japanese whisky scene continues to be marked by an unbridled optimism,” Van Eycken adds. “Distillers price their (invariably young) whiskies very high (compared with similarly established whisky markets around the world) and consumers snap up the bottles regardless of the (sometimes unjustifiably) high prices.”  This price war is one of the reasons Miller et al sold their remaining stock of Karuizawa, which had initially been priced fairly but wasn’t the case when they left the scene. The 1960 Karuizawa, for example, which yielded 41 bottles was released circa 2014 for £12,500. Within a decade, those same bottles were easily reaching $375,000. “That's not a bad return in 10 years,” Miller says caustically. “But that's not why we did it. If that had been our motivation, we'd have just held on to it and had 41 times that.” For those still in the industry – and disciples of it – there is a real push to protect the integrity of Japanese whisky and futureproof it. Yoshikawa picks up the point, outlining that the few have muddied the water for the many: “The rapid publicity and the reputation of Japanese whisky have led to its use of excessive PR strategies, even when this is not in line with the facts of the product.” For these reasons, she is an advocate of more stringent regulations, like the ones announced by the Japan Spirits and Liqueurs Makers Association in 2021 which aims to restrict certain practices – like labelling whisky that isn’t actually from Japan as Japanese whisky – akin to those enshrined and strongly policed in Scotland. But she, like many, thinks these could go further and believe it is important to continue scrutinising the practices of the small and larger players, ensuring there is greater transparency and less “skullduggery”, as Van Eycken puts it. As the ink dries on the past 100 years of Japanese whisky, no one knows what the next century might entail – but there's plenty of excitement. The landscape will undoubtedly change once more, and new giants and legends will likely emerge. For whisky enthusiasts, the challenge – as always – will be pre-empting the plot twists and securing bottles before they become little more than folklore. I’ve written this having just finished my second en primeur report for Decanter magazine. Four weeks of intensive tasting, two weeks of intensive writing – Primeurs is both the best and hardest period of the year, exhausting and rewarding. But, where one tasting finishes another one arises: tomorrow, I fly to Canada for a tasting of Bordeaux 1982 wines – with the legendary vintage showcased in 40 top bottles at a charity dinner in Vancouver. Sometimes my life feels like a dream.   Despite not having a background in wine before joining Decanter in 2011, and certainly no family cellar filled with dusty treasures, I became enthralled the moment I was handed my first glass of fine wine – at my desk, no less. “How is this a job?” I thought to myself. Many years of tastings and trips passed, meeting the world’s foremost winemakers and writing about wine in various ways, however the “critic” role (more of an American designation than British, I think) was never one I coveted – and certainly not one I expected to ever have.    The barrier to entry seemed so high, even though I was already working at Decanter, which understandably tended to only use “regional experts” and Masters of Wine, many with decades of experience and often living in their chosen region – something I now fully understand and would encourage any budding wine writer to do.   Skip forward a decade or so and I’m now responsible for Decanter Premium, overseeing the digital strategy for subscriptions and content behind the paywall on decanter.com – and now Bordeaux correspondent too, having taken over from long-time Decanter contributor Jane Anson in July 2021.   When Jane moved on, the question was who would fill the position. A combination of desire on my part and the lure of a challenge (who wouldn’t want this job?), happenstance (in that I had not long moved to live in Bordeaux city, placing me in the perfect location to take up the role), and a shortage of qualified candidates in the region, all seemed to work in my favour.  While Decanter authoritatively covers wines from all around the world (one of its biggest selling points for me), Bordeaux is what we call “heartland content” – and the stats don’t lie. It’s consistently the most-read and paid-for content we produce, by far. From Primeurs to livrable “in-bottle” tastings to estate verticals and incredibly old horizontals, there’s always something to taste, at every price point, in every conceivable style. And with around 7,000 estates, there’s no end of new cellars to see, new vineyards to walk into and new winemakers at the helm.   So there’s pressure, especially writing for the magazine with its expectation of quality and deep understanding. But, there’s also non-stop dynamism, and living here brings the action so much closer, something I never truly understood before. An hour each way from my home, I can be in Saint-Emilion, Sauternes or Saint-Julien.   The Decanter name is hugely respected in Bordeaux and I’m extremely fortunate to have been welcomed so generously and thoroughly. The last 22 months have been spent tasting and visiting estates as much as I can. I’ve done dozens of verticals that have yet to be published, spent weeks with winemakers in vineyards and cellars, talked to consultants about changing styles and négociants about market trends. I took part in my first harvest last year (thank you Cheval Blanc) and my first blending session this year (thank you Nicolas Glumineau, General Manager at Pichon Comtesse).   I've also been inducted into the Commanderie du Bontemps of the Médoc, Graves, Sauternes and Barsac, as well as the Hospitaliers de Pomerol (two historic brotherhoods, now modern-day societies that encourage, support and help promote the wines and winemakers of their respective regions). These are all enriching experiences that are the building blocks of my Bordeaux knowledge.  Somehow I thought having done the 2021 en primeur tastings and report last year (as well as two in-bottle reports since I started – all with around 900 wines sampled each time) the 2022 report would be easier – it wasn’t. Tasting is actually really tough – not only physically demanding and tiring, but mentally exhausting. It goes without saying that experience is helpful, comprehension and context are key for notes and scores, but passion is also a must. I’m building the first two, the latter I still have in abundance.   Despite sometimes pinching myself, looking back there’s a strange sense of destiny attached to my current role. My first ever work trip was to Bordeaux (and I ended up buying an apartment almost round the corner from the hotel I first stayed at). My first fine wine vertical was – amazingly –  of First Growth Ch. Mouton Rothschild with the then brilliant winemaker Philippe Dhalluin at Café Lavinal in Pauillac. My first article was about a Bordeaux panel tasting and I even had maps of Bordeaux vineyards on my bedroom wall in London, something I had forgotten until I came across some old photos recently.   An added bonus, my father only drinks Bordeaux wines so this job definitely earns me favourite child status.  As much as it’s serious and hard work, it’s also huge fun, interesting, glamorous and ever-changing. I think humility and gratitude are important, as well as a genuine enthusiasm to tell the stories of these wonderful wines and the people who make them.  Is the role of “critic” my true calling – above publishing, improvement strategies and brand building? I don’t know. What I do know; I love writing. I love Cabernet (Sauvignon and Franc)! I love mature Bordeaux (and am currently seeking out as much 2001 as possible). I love blind tasting the region’s wines to try and place them in their appellations (despite myriad differences in viticulture and vinification this is somehow still possible – the power of Pauillac, the prettiness of Margaux, the minerality of Saint-Estephe). I love the light in Saint-Emilion at dusk during the summer – is there a more romantic wine region?    But most of all, I love the joy and passion surrounding winemaking – not limited to Bordeaux, but the family histories, long-standing traditions, connection to gastronomy, focus on innovation and investment – they all give the region an extra glint in my eye.   What I don’t love, however, is my dentist telling me off and trying to find a place to store all my bottles... but there are worse problems, admittedly. (Speaking of which, if anyone wants to drive me round the region for next year’s Primeurs, applications open soon!)  For now, I'm excited to see how this year's Primeurs campaign goes. There's no doubt that many producers have created exceptional wines worth buying, but whether the market is sufficiently dynamised by the prices is another question. I'm eagerly awaiting a copy of this year's Bordeaux guide (on sale with the June issue of Decanter) filled with all the wonderful happenings in Bordeaux right now, as well as looking forward to discovering some of the hidden non-classified gems of Margaux. Châteauneuf-du-Pape has a long history, becoming the new home for the Pope in the 14th century, but its prestige as a wine region is comparatively short. Although it is France’s oldest appellation (the first to be officially classified in 1923), the wines only really gained notoriety in the second half of the 20th century. More recently, its full-bodied, fruity style found appeal among American critics – namely Robert Parker, who helped increase its following across the Atlantic. But, despite the success of estates such as Ch. Rayas, there is little fanfare around the region. Isabel Ferrando’s dynamism, therefore, is a refreshing change. Her story is one of revolution rather than evolution. With every step in her career, she has made bold decisions – decisions that have brought significant attention, praise and a legion of fans. For her, such an approach aligns neatly with the philosophy of Châteauneuf-du-Pape. “The only limit is to respect the appellation. That is the only limit,” says Ferrando. With 13 permitted varieties (or 22 if you count both white and red grapes) and five very different, distinct soils, countless expressions of the appellation are possible – and, for her, this is why it’s a very modern appellation. Everyone is given the freedom to “paint their picture”. Although the region might be famous for its galets roulés (large round pebbles that reflect heat and add to ripeness), this is just one of its terroirs. “There are five different soils in Châteauneuf – chalk, limestone, clay, sand, galet stones that each have a strong influence on the appellation,” she explains. “There is one singularity,” she admits, “and that is a lot of fruit.” She feels that Châteauneuf is united by its “fruity but serious” profile – however, beyond that, there is incredible variety – from more floral to darker, more savoury styles. “The vines on clay produce a fatness in the wine. The sandy soils bring a silky texture and tenderness to the tannins. The chalk gives a sensation of powder,” she says, highlighting how each soil type contributes to the final wine – providing a palette for any winemaker to produce a wine that fits their sensibility. This freedom made the region a perfect fit for Ferrando – who decided to give up her job in banking to become a winemaker 20 years ago. Then a new mother, she initially thought that being her own boss would allow her to spend more time with her family. That didn’t actually happen, she admits, “But when you become a mother or father, you become someone else – you look at life differently. I wanted to go back to nature,” she says. “I didn’t want to raise my daughter in a city. I was born in the countryside, and I needed that for my daughter.” After training for a year in Gigondas under Dominique Ay (at Domaine Raspail-Ay) she found a domaine for sale in Châteauneuf-du-Pape and jumped at the opportunity. She might have been new to the region, a woman in a male-dominated industry with no background in winemaking, but that wasn’t going to put her off. Fortunately, she made some good friends – most notably the late legendary Châteauneuf-du-Pape producer Henri Bonneau who was instrumental in the establishment of Domaine Saint-Préfert. When she arrived, the vineyards were not in good shape, with many vines diseased and in need of replanting. Traditionally, producers in Châteauneuf-du-Pape blend plots together to capture the complexities of the different soils and varieties etc. But, if she was to make a wine of quality, this was not possible for Ferrando. So she identified the best plots and bottled those separately (as her Réserve Auguste Favier and Collection Charles Giraud cuvées), while she set about replanting the rest of the vineyards. The young fruit from her new vines was dedicated to her Cuvée Classique Châteauneuf-du-Pape. Single-vineyard bottlings were quite a radical move in the appellation – but such was the quality of these low-production, old-vine bottlings that Ferrando’s wines rapidly earned recognition. She went further to challenge convention in the region, crafting three varietal wines in a region that was built on blends. These cuvées – a Clairette (Cuvée Spéciale Vieilles Clairettes), Cinsault (Cuvée F601) and Grenache (Cuvée Colombis) bottling – are remarkable wines. There is no other 100% Cinsault produced in Châteauneuf-du-Pape.“The Cinsault is absolutely perfect in Saint-Préfert,”, says Ferrando. “Nowhere else in Châteauneuf-du-Pape do you get these floral aromas.” She describes the grape as the Pinot Noir of the Rhône. Production is tiny – limited to just 800 bottles a year – and it is not cheap at £500 a bottle. But, for those lucky enough to taste it, it is beguiling. The Wine Advocate’s Joe Czerwinski rated it as his top discovery of 2020. Her 100% Clairette is another oddity for Châteauneuf-du-Pape and almost as rare. Only bottled in magnums (800 a year) – this is a wine that Ferrando believes can age 50 years or more. “Clairette is my vision of white wine in the Southern Rhône.” She wants to counter the claim that white Châteauneuf-du-Pape is fat and fruity. “With Clairette, you can produce very fresh and deep wines,” she says, “it gives a lot of freshness, tension and salinity to the whites.” The wine was inspired by her mentor Henri Bonneau, who convinced Ferrando to bottle these 80-year-old vines separately. In the early days of Saint-Préfert, Ferrando invited Bonneau to a feast of tête de veau – and Bonneau arrived with a magnum of an unlabelled white wine. During the meal, Bonneau started to cry – he told Ferrando that the wine was the last bottle from the cellar made by his father – a 1947 100% Clairette – showing how well good Clairette could age. “It was a very special moment,” notes Ferrando. The wine was incredibly fresh and in perfect condition. He asked Ferrando again to create another 100% Clairette – like his father’s. The first vintage was 2009. Once the wine was picked and fermented Bonneau would come to the winery, taste the wine and insist she not bottle the wine yet. It was not ready. “It was risky,” says Ferrando, “but he insisted.” After 18 months she could hold off no longer and bottled it. Tasting the wine, she was amazed by its tension. It was special. The first magnum of every vintage was given to Bonneau as a thank you. After 20 years in Châteauneuf-du-Pape, Ferrando is one of the appellation’s brightest stars. But she hasn’t stopped challenging the status quo. After building one of the most celebrated brands in the appellation, Ferrando overhauled her range in 2020 – discontinuing many wines and changing the estate’s name to Famille Isabel Ferrando. Few people would have the guts to take such a chance, but a meditative period over Covid-19, the death of her husband and the evolution of her vineyards all prompted her next radical change. “The resistance of people to change is apparent, it is comfortable to stay the same,” she admits. But, for Ferrando, she had to change. Over 20 years, she’d nurtured her vineyards back to health, her young vines had reached maturity and her biodynamic farming had brought biodiversity back into her vineyards. “The vineyards changed and so the wines had to change too,” she explains. Ferrando now had the quality of fruit to be able to produce a single, flagship Châteauneuf-du-Pape cuvée – a wine that represented her terroir and her winemaking style. While she still produces her Vieilles Clairettes, F601 Cinsault and Colombis cuvées, she has sacrificed her top-scoring Auguste Favier and Charles Giraud reds to produce what she feels is a true representation of her estate and sensibility. The wine captures her obsession with freshness, balanced with concentration – playing with the different textural qualities of her soils and varieties. With this refreshed focus from the 2020 vintage, Ferrando decided to bottle the wines under Famille Isabel Ferrando – trusting that her customers will follow the wines under this new name. Ferrando’s daughter seems to have inherited her mother’s revolutionary approach. At 22, she decided to abandon her business studies to tackle a degree in viticulture in Beaune – to the complete shock of her mother. While currently her daughter is learning about winemaking at some of the best estates around the world (including at the likes of Domaine Roulot, Eisele Vineyard, Mullineux and more), she has already had an influence at Saint-Préfert. It was under her guidance that Ferrando hired a young agronomist engineer who has been planting trees and cereal crops in the vineyards to improve biodiversity. Ferrando is clearly excited– still spurred on by change, despite her success. Tasting the new wines from Famille Isabel Ferrando is a wonderful experience. We were among the first to taste the 2021 vintage. The white Châteauneuf-du-Pape is divine – offering such beautiful freshness, salinity and depth, with a finesse that I can’t remember tasting from the region. And the reds, even at such a young age, already taste so balanced, pure and refined. Ferrando might be a radical and modern vigneron, but her wines are timeless. The growing season in 2019, as is becoming the norm these days, started with a warm February and March, leading to an early budbreak at the beginning of April. An early budbreak leads to a nail-biting spring for the vignerons, where the window for frost damage is only extended. Fortunately, there were only a couple of occasions where temperatures dropped to dangerous levels, with most Chablis producers today well equipped either with smudge pots, electrical heating wires or water sprays to offset the frost damage.  At Long-Depaquit they lost just 5%, which was not a concern. Samuel Billaud notes that the frost was much more dangerous on the lower slopes of Chablis where damage was higher than the 1er Cru and Grand Cru sites which were largely undamaged. For Olivier Bailly, winemaker at Domaine Billaud Simon, it was not simply the direct damage of the frosts (particularly on the night of 14th April) but the resultant stress on the vine following the outbreak that saw yields further affected. However, the real issue in regard to yields, came down to flowering rather than frost, with a windy, rainy, wet period during May which meant yields were notably affected. This period led to a lot of heterogeneity in the bunches and also noticeable millerandage (which results in very small berries): this does not affect quality but markedly lowers yield. Unlike 2018, therefore, 2019 is a low-crop vintage with producers’ yields ranging from 20 to 40% below normal. Despite the poor flowering, the rest of the growing season was straightforward, with very little rain and plenty of sunshine, which meant excellent sanitary conditions in the vineyard with no rot at all and very little sorting required at picking. There were two short heatwaves, one at the end of June and another at the end of July, which did cause sunburn damage to exposed grapes but other than that, no sorting was required. Regarding temperatures and rainfall, it was similar to 2018 with average rainfalls down 50% on average. Temperatures were also a full 2.2 degrees above average during the growing season, which is quite extraordinary. When comparing the similar effects of drought and sunshine in the 2018 vintage, vignerons talked about how the high yields helped dilute the intensity of the sun. With half the crop, how did the grapes survive in 2019? Was this to be a low-acid vintage with abnormal tropical fruit tones like 2015 or 2003? Matthieu Mangenot, winemaker at Domaine Long-Depaquit, describes how something quite unusual happened. In the later part of the growing season, the grapes concentrated – with water in the berries evaporating from the skins. This increased sugar levels and therefore alcohol (typically to 13.4 to 13.8%, which is high for Chablis, but it concentrated the acid levels too. Despite the drought and heat, the acid levels sit close to great vintages such as 2008, 2014 and 2018, with a pH of 3.25 to 3.3 after malolactic fermentation. Olivier Bailly at Domaine Billaud Simon had even higher acidity levels (between 3.10 - 3.25 pH), stating, “It is the magic of Chablis to find Chardonnay retaining such acidity, despite the warm weather”.  The result is, as Mangenot told us, “undoubtedly a ripe, concentrated, powerful vintage, but with a freshness too, at the same time retaining real Chablis mineral typicity. It is a hot, warm vintage but it does not really behave like that in the glass.” The fruit ripeness is similar to ’15 – but there are no excess aromatics of over-ripeness or yellowness in the wine that is typical of the low-acid vintages like ’05 and ’06. The acid profile is much more like ’17, and very much still retaining a sense of place, avoiding the tropical fruit aromas of 2015. Samuel Billaud describes 2019 as “highly concentrated Chablis with sun-kissed aromatics – it is concentrated, with balanced structure and excellent minerality. It is a ‘gourmand’ [moreish] vintage, yet with tense, structural minerality.”  Our own impressions is there is no doubt a concentration and aromatic pungency to the wines, yet the nose retains the Chablis-esque chalky minerality and savoury dried-straw tone, as well as lifted floral aromatics. There is noticeable power, weight and warmth to the palate even on the Premiers Crus, with the top examples retaining mouth-watering acidity despite this opulence and concentration. They really have a wonderful combination of intensity and power, while retaining mineral typicity. Producers such as Samuel Billaud still has a majority of his 2019s undergoing élevage, with the Grands Crus left another six months in tank before being bottled. Despite them being babies the wines are already showing a lot of promise. Billaud compares his 2019s to the 2016s in terms of riper aromatics, but with much more concentration and minerality. It also has similarities to the 2017 vintage when it comes to structure and minerality, he says.  For Mangenot, the power and concentration allied with vibrant acidity and minerality makes this vintage hard to compare, “It doesn’t really taste like any other,” he says, “but for Chablis-lovers, it makes it a fascinating vintage to discover.” Read more Editorial

Chablis 2019: a first look at the vintage

Olivier Humbrecht was in London earlier this year giving a masterclass on single-vineyard Pinot Gris from Alsace. His motivation and his love for dry Pinot Gris evolves around the varietal being the greatest transmitter of terroir, much more so than its more famous sibling Riesling whose natural aromatics can conceal its terroir blueprint. Of course that was just the starting point of the masterclass and it quickly evolved into a much more in-depth conversation on the virtues of singular plots and the underpinning concepts of fine wine. We caught up with him to get further insight into his pioneering approach in viticulture which is being adopted by some of the finest wine producers in the world. The changing fortunes of Pinot Gris Humbrecht is a strong believer in the potential of Pinot Gris, a varietal that has ebbed and flowed in popularity through the last century. It is a varietal that due to its rather neutral primary attributes means it is perhaps more than any other grape, at the throes of its maker.  Styles vary greatly from the high-yielding neutral, phenolic, early picked and refreshing Pinot Grigio synonymous with northern Italy. At its worst, the variety produces a wine of almost no character and no sense of place. At its best, the dry, vibrant Pinot Grigio from Alto Adige can be fantastically intense, mineral and refreshing, whilst remaining fairly neutral on the palate. Pinot Grigio Romato styles in Friuli (a skin contact rose style) offer more flavor definition and
richness whilst at the same time being distinctly phenolic with vibrant acidity and a bitter bite keeping the wine refreshing and uniquely Italian in character.  The Pinot Gris of Alsace is typically later picked and completely different to the Italian style in its flavor profile, taking on a distinct honeysuckle, musk, smoky, toasty quality. Even within Alsace, this varietal has many faces. In the 1960s Olivier reminds us that Pinot Gris from Alsace was the most popular and most expensive wine in the region, but also the rarest and typically very sweet, as it is prone to noble rot resulting in intensely rich, opulent wines. In 1990 just 2% of the vineyards in Alsace were planted with Pinot Gris, today it is up to 15%. But Pinot Gris is not an easy grape to get right and whilst the early picked, neutral style of Northern Italy can crop at high levels with little issue, to make Pinot Gris with more aromatic character is much more difficult to get right and therefore becomes a much less reliable crop and accounts for the small amounts grown in Alsace. It is a varietal very prone to rot due to its thin skin. In ideal conditions, this makes it ideal for noble rot but in less than perfect conditions grey rot is more common making the grapes not suitable for fine wine. The rot will often result in aborted fermentation.  The varietal is also very quick to ripen. If not picked in a very small picking window, the alcohols could shoot up too high making a healthy fermentation very difficult and, more often than not, leading to high levels of residual sugar in the wine, whether you want it or not. Olivier outlines that just taking a weekend off during harvest could amount to a potential 1.5% abv increase when returning to the vines on Monday morning. In under a week, the potential alcohol could have gone up by 3% abv.  Picking the wines too early also has its problems. All the flavor and aromas in the varietal develop at the final stages of ripening, picking early will produce wines with little complexity and character. This tricky little grape is no doubt the reason why so little was planted in the region despite the popularity of the top Pinot Gris sweet wines. The recent increase in plantings in Alsace however has not been brilliantly successful. For Olivier too much Pinot Gris has been planted in inadequate sites and using higher yielding commercial clones. For Olivier, top Pinot Gris from Alsace must come from the traditional petit grains clone that is naturally low-yielding. Olivier likes each vine to produce just 2 clusters producing just 25-30 hectolitres per hectare. These cropping levels are necessary to produce fine wine examples from the grape. Olivier’s interest in Pinot Gris is down to its relatively neutral character making it a great transmitter of terroir, more so than Riesling whose natural aromatic presence can conceal terroir characters. Fairly neutral flavour characters also mean it remains very much a winemaker’s wine, as the vigneron can determine the style of the wine with lees work, oak maturation, and the retention of malolactic fermentation, providing the grapes come in clean, free of rot. Olivier believes élevage on full lees makes a very important difference to the flavor of the wine. The lees nourish the wine through ageing, producing a much more complex
flavour profile. It brings a smokiness and toasty character to the wine as well as a more reductive “mineral” character. Global warming It is rare to hear a vigneron say that global warming has improved the quality of their
wines, but Olivier honestly states that, for the moment, global warming has benefited his wines. What it has done is bring flowering forward, possibly up to three weeks earlier which shunts all the growing season forward, this means the all-important veraison period (sugar concentration in the grapes) is beginning to happen three weeks earlier.  Rather than waiting for grapes to ripen in September as the days are getting shorter and the weather much less reliable, veraison is now happening at the height of the summer enabling the wines to reach optimum ripeness quicker preventing the onset of rot – which in poorer weather becomes a lot more common.  Biodynamic since 1998, Olivier has seen a really positive effect in the vineyard. The grapes are able to ripen faster, reaching physiological ripeness quicker, which enables Olivier to make dry Pinot Gris packed with flavor. This, he believes, is because chemical applications shock the vines, causing them to shut down for a number of days following the application. If you continue to spray chemical applications throughout the growing season, each time this happens the vine shuts down and you lose valuable days of ripening.  Under biodynamic principles, the vines don’t go through these shock / shutting-down
phases. This allows Olivier to pick earlier and he is the first to harvest the Pinot Gris compared to his neighbours. This he believes is largely due to his grapes ripening faster, due to his viticultural techniques.  It means he can get his wines to reach aromatic complexity whilst still being able to bring them in early enough free of rot and therefore enabling a fermentation to dryness. The reason for Olivier's interest in producing dry styles of Pinot Gris is so he can show off the terroir characteristics of each of his sites without being concealed by sweetness. Tasting the different vineyards shows just how different each of the sites is and only further promotes Pinot Gris as the ultimate transmitter of terroir. A pioneer of modern-day viticulture Speaking with top viticulturalists all over the world, you realise a huge amount of their knowledge stems from Olivier Humbrecht, whose understanding of managing vine growth originated from a university lecture he attended in the 1980s, given not by a viticulturist, but a plant physiologist.  From this lecture, Olivier understood that modern-day hedging techniques in the vineyard were really detrimental to fruit production. Olivier explains the domesticated vine goes through two very different stages in its growth period. Stage one is the phase of cellular multiplication i.e. the growth of the vine – flowering, budding, leaf production etc. Stage two is the nourishment phase in which the vine stops growing and instead starts to nourish the pips in the grapes, to promote future cellular growth when the seeds are dispersed.  The problem with modern hedging techniques is that it disturbs stage one when the vine is
on the verge of moving to stage two, therefore encouraging the vine to carry out stage one and two at the same time, meaning the grape isn’t getting full nourishment at the period of veraison as some of the vine’s energy is going into vine growth. The key for Olivier is to get stage two to follow on from stage one rather than the vines trying to do both at the same time. Preventing canopy growth, however, requires a lot more manual work. Olivier states it
requires 20 men to tie up the vines manually compared to one tractor hedging the vines. One possible solution could be to hedge the vines earlier in the growth phase so as not to disrupt the vine later in the season switching from stage 1 to stage 2 but Olivier explains this is not a good approach. Tartaric acid is key to any white wine, and it is the necessary backbone to any wine.  Tartaric acid is produced by the leaves. Olivier emphasizes that many people wrongly
think leaves only create sugar through photosynthesis, but they are necessary for producing a whole array of essential nutrients, hormones and the all-important production of tartaric acid. The secret lies in extended canopy growth. I said to Olivier this sounds exactly what Lalou
Bize Leroy does in Burgundy and he admits that he visited her years ago and told her his ideas on canopy management and she clearly took his advice. Whilst it is incredibly high maintenance and an expensive operation, two of the world’s leading winemakers Humbrecht and Leroy are advocates of the system and that should be enough for any vigneron to at least consider the technique, despite the additional costs it entails.  The single vineyards Rotenburg The Rotenburg vineyard is a cooler north-facing slope facing the Vogues mountains. Made up of red marl on a limestone bedrock with very shallow brick colour soil (containing high iron content). All this amounts to slower ripening, naturally lower vigour and tiny yields. Olivier typically crops at 25 hectolitres per hectare. Olivier states what is great about this vineyard when made in the dry style, the effect of the limestone really comes through on the palate. Tasting through the 2017, ’16 and ’13 the wines share a wonderful aromatic complexity.
Easily the most floral and perfumed of the three vineyards. There is a wonderful chalky minerality to the wine, almost top quality Chablis but with a softer texture and more perfumed. With age, the aromas and flavours only further develop whilst retaining a wonderful intensity. The wine remains very clean despite its age, showing very little tertiary
development just lovely orange rind and honeysuckle notes. The chalky limestone
minerality brings sharp focus and intensity to the finish. Clos Windsbuhl The first vintage for Zind Humbrecht on this site was the 1988 vintage. Another limestone/
clay site overlooking the church of Sainte Hune (famous for the Trimbach’s Clos Sainte Hune cuvee). Facing south, south-east with a steep slope between 15 – 40% this is a high altitude site at 350 metres. A 6.5 hectares site planted mostly to Pinot Gris. Due to the
altitude and soil the grapes ripens very slowly, often on the precipice of reaching ripeness before the wine gets affected by noble rot.  Tasting through the ’17, ’16 and ’13 what is immediate in the comparison is how the wine
develops with age. At just three years of age, the wine remains compact, at seven years of age it is incredibly complex on the palate. The primary notes have retained their zesty vivacity but the flavours become broad from russet apple, manuka honey and sultanas and a wonderful salinity and stony minerality on the finish. The wine becomes more and more focused on the finish. Clearly, the wine is affected by vintage too. The ’16 is a more difficult vintage making the wine a lot less intense than the ’17 and the ’13 but throughout the lineup, the salinity and stony minerality comes through on the palate – a distinct characteristic
of the limestone soil. Rangen de Thann Unlike Rotenburg and Clos Windsbuhl, Rangen de Thann is made up of volcanic soil, very
dark basalt rock, rich in magnesium and potassium and low in calcium so lower acidity, higher pH. The slope is the steepest in Alsace with a 41-degree slope. The vineyard has an incredibly high vine density at 10,000 vines per hectare. It is in fact one of the warmer regions of Alsace therefore you would expect it to be one of the first to ripen, but the cold wind that flows through the valley slows the ripening making it the last vineyard Oliver harvests. This is typically the lowest-yielding site at Zind Humbrecht at 20 – 30 hectolitres per hectare. The volcanic soil offers a completely different blueprint to the wine. Texturally the wine is much more oily and rich. The flavours are more pumice stone, peppery, matcha tea and then this distinct Brazil nut flavor. There are no tropical notes at all in its youth and very much more savoury in style. With age the ’13 vintage shows more tropical notes, the texture becomes unctuous in its oiliness, it feels like there is sweetness despite being a dry wine. These wines lack the vibrancy from the limestone but offer more richness, texture and darker fruit and savoury flavour profile. Explore more Editorial
