This year sees the release of the 20th vintage of Cheval des Andes – Cheval Blanc’s operation in Mendoza. Since the team from the legendary Saint-Emilion estate embarked on the venture with Terrazas de los Andes, 25 years ago, much has changed – and this is the start of a new era for the property. What was once a working concept has taken root.  “This is the beginning of our adult life,” says Technical Director Pierre-Olivier Clouet. “We have a real identity today.” It’s taken a quarter-century for the property to shake off the uncertainty of youth and find firm footing – something that hasn’t necessarily been easy.  “We made mistakes,” Clouet confesses. Not having a historic reputation to rely on, the team at Cheval des Andes had sought out high scores, chasing points to prove their worth. But, in a still Parker-dominant era, that meant making wines with “ripe grapes, a lot of extraction, a high level of alcohol – you [had] to show the muscle to explain that you are a great wine”, explains Clouet. “For a long time, the recipe was in the cellar; nobody cared where the vines were.” Now, however, that’s all changed.  From 2011, the team started shifting focus to the vineyard, working more closely with their French counterparts and vice-versa. The arrival of Lorenzo Pasquini (now the man at the helm of Ch. d’Yquem) in 2015 was key to the transition, as Cheval des Andes started to focus on a shared vision of fine wine – one that is about freshness, balance and ageing potential, and one that defines Cheval Blanc.  Only with a few wrong turns, however, can you be sure you’re on the right path – and Clouet is clear that those first 16 years, figuring out what Cheval des Andes should and could be, has been “super important” in helping them build “something with real sincerity, real authenticity”. Most importantly, Cheval des Andes is not intended to be, nor is a copy of Cheval Blanc: “It is, in our mind, absolutely an Argentine wine,” says Clouet.  The original 31-hectare vineyard is in Las Compuertas in Luján de Cuyo, a subregion of Mendoza. It is on these clay-dominant soils at around 1,000 metres’ altitude that Pierre Lurton discovered a plot of ungrafted Malbec in 1998. Planted in 1929, the vine material pre-dates phylloxera, descended from a selection imported to Argentina in 1852 – back when the grape dominated Bordeaux. This selection is key to the DNA of Cheval des Andes and, along with the huge diurnal shift, produces Malbec that is fresh, precise, perfumed and delicately structured. For Clouet, the “true” Malbec is closer to Pinot Noir in style – more floral than fruit-led, vibrant and even ethereal.  In 2001, the team purchased an additional parcel in La Consulta in the Uco Valley, at higher altitude and with more gravel-driven soils, a cooler site that has an even more significant diurnal swing in temperature. While they once might have used only a fraction of the estate to produce the flagship wine, they have moved to using as much as they can – to create a pure expression of the entire property, declassifying only plots that don’t fit in the blend or meet their stringent quality standards.  All 50 hectares are farmed with the same philosophy as their vines in Saint-Emilion – employing extensive cover crops, trees scattered throughout the vineyard, and with the same incredible attention to detail and focus on sustainability. “We work with the same vision and the same conviction,” says Clouet. One key difference, of course, is that irrigation is essential in this part of Argentina – but, here again, they’ve changed tack over the last decade or so. Rather than traditional modern drip irrigation where necessary water would be eked out drop by drop over the season as needed (“too artificial”, Clouet tells me), they irrigate extensively over the winter to ensure the soils are replenished fully between seasons (as well as help protect ungrafted vines against phylloxera), then – on a plot by plot basis – when the vines are starting to suffer, they give the vines around 40mm of water (still via drip irrigation), over 24-48 hours, replicating a day or two of steady rainfall.  They’ve reduced the height of the canopy (the engine of the vine for sugar production), while using trees, cover crops and minimal leaf-pulling to avoid sunburn. They’ve started pruning each vine according to its vigour, and are now picking significantly earlier – as much as two months earlier than 15 years ago. With this detail in the vineyard, the challenge is simply to guide the fruit through the winery: “No mistakes is enough in the cellar,” says Clouet.  In some ways, the wine echoes Cheval Blanc. While the Saint-Emilion property blends Cabernet Franc and Merlot, Cheval des Andes focuses on Malbec and Cabernet Sauvignon – the Malbec bringing freshness and silkiness that complements the backbone of powerful Cabernet. And the Cheval Blanc style, one of restraint and precision, shines through in recent vintages of the wine – and especially the soon-to-be-released 2021. As Clouet tells me, “Our vision is absolutely delicacy, freshness, balance, ageing potential, complexity.” Unlike Cheval Blanc, however, which needs 10 years in bottle to start even hinting at its potential, Cheval des Andes offers an immediacy – something that Clouet is clear doesn’t inhibit its ability to last; the 2021, for example, can be drunk now, but will evolve over the next 25 years at least, he tells me.  Even the association with the Cheval Blanc name doesn’t make Cheval des Andes an easy sell to fine wine lovers; but that, says Clouet, is part of what makes it fun – a challenge for the team to be pushed. Even better, his team gets the chance to learn and make wine not just once a year, but twice, as well as gaining additional insight on how Cheval Blanc might adapt to climate change. But Cheval des Andes isn’t just an intellectual exercise (that is merely an added bonus), Clouet firmly believes in the potential of this site – something they’re now finally beginning to realise. 2022 Bourgogne Chardonnay, Charles van Canneyt The grapes for Charles van Canneyt’s Bourgogne come exclusively from the Côte d’Or this year. It is fresh, floral, elegant and crisp on the nose, while the palate feels light and crystalline. There’s bright acidity, a round structure, gentle white fruit and a touch of lemon peel, with a long persistent finish. This is easy-drinking Bourgogne which will be enjoyable young, but will age gracefully over the next few years. 2022 Bourgogne Rouge, Domaine Charles Audoin This wine is already bottled and is astoundingly good-value. Audoin doesn’t own any Bourgogne vines, so this is made exclusively with declassified Marsannay fruit, sourced from part of Longeroies (where he also makes a single-vineyard Marsannay), Herbues, Champagne Haute, Champs Forey and Es Chezots. Aged in larger, 500-litre oak, the wine is irresistibly juicy. The nose entices with sweet and dainty red berry fruit, revealing more delicate florals and crushed minerals with air. Pure and vibrant with a savoury, pleasingly bitter note to the finish. Stock up on this and you won’t regret it – astonishing value. 2022 Chambolle-Musigny, Domaine Hudelot-Noëllat Hudelot-Noëllat’s village Chambolle is a blend of 11 parcels around the appellation to provide a true expression of the village as a whole. Charles van Canneyt’s light touch works well with the vintage, creating a classical Chambolle-Musigny. Full of floral lift and delicate aromatics, this is Pinot Noir that pirouettes. But there’s plenty of muscle behind it, with creamy richness and a crunchy, red-fruited persistence to the palate. With a mouth-watering finish, it’s beautifully balanced. 2022 Bourgogne Blanc, Henri Boillot Henri Boillot’s Bourgogne Blanc is made with mainly declassified fruit from the villages of Meursault, Puligny-Montrachet, Saint-Romain and Auxey-Duresses. Combine that with this domaine’s skill and you get a superlative wine (especially for the price) – and particularly in 2022. Henri Boillot feels it’s the Auxey-Duresses fruit that bring the wine such energy – with incredible drive and zingy acidity that almost revs the fruit. The nose is pithy, with citrus lift and a honeyed edge, tight at this youthful stage, like the concentrated palate. Long with a mouth-watering, saline finish, this is unbeatable value. 2022 Mazis-Chambertin, Grand Cru, Domaine Tortochot The Mazis-Chambertin was a highlight in the Tortochot line-up this year. With around two-thirds new oak, it’s a wonderfully sleek Grand Cru. Polished, bright red-berry fruit dominates the nose, but there’s also a savoury edge and crushed-rock character. The tannins are glossy and smooth, with pleasing freshness. While incredibly approachable now, this has the balance and concentration to age. 2022 Morey-Saint-Denis, Premier Cru, Les Millandes, Domaine Heresztyn-Mazzini Les Millandes sits below Clos de la Roche – and is always a favourite in the line-up at Heresztyn-Mazzini, whose vines here are at least 70 years old. In 2022, Florence Heresztyn decided to do a lighter green-harvest on this plot, to avoid a wine that was too powerful, with around 80% whole-bunch fermentation and a lighter toast for the 30% new oak for its élevage. The result is delicious. The nose is intoxicating – with pepper spice, dark fruit and scented florals. There’s a swathe of chalky, velvet, almost nubuck, tannins that cloak the core of dark fruit, all refreshed by wave after wave of mouth-watering acidity. You’re left with delicate florals, lingering long on the tongue 2022 Savigny-lès-Beaune, Premier Cru, Les Serpentières, Jean Marc & Hugues Pavelot Pavelot’s vines in Les Serpentières average around 60 years in age. The wine has always been in the line-up, but until 2022, Hugues Pavelot had just 0.17 hectares – now he has over a hectare, all in the northern part of the vineyard, which generally produces a wine of finesse. It’s particularly true in 2022, with the wine a more delicate, floral and transparent expression of Savigny-lès-Beaune. Bright redcurrant and raspberry fruit fills the core of the palate, framed by grippy tannins and building to a long, mineral finish.   2022 Bourgogne Hautes-Côtes de Nuits, Louis Auguste, Domaine David Duband This wine, named in honour of David’s son, Louis Auguste, comes from higher-altitude sites and some of the domaine’s oldest vines (over 55 years in age). The 2022 is dark-fruited, high-toned and with a ripe, sweet nose. The palate is fresh – awash with a blur of black and red berries, and a more precise, chalky note that dominates the finish. 2022 Bourgogne Rouge, Jean-Marie Fourrier The fruit for Jean-Marie Fourrier’s Bourgogne Rouge all comes from the Côte de Nuits – and that shows in the quality of this impressive wine, which is an outstanding introduction to the producer’s style. Aromatic and bright, this is chock-full of crunchy, pure raspberry and cherry fruit – mouth-wateringly juicy and effortlessly balanced. 2022 Saint-Aubin, Premier Cru, Le Charmois, Au Pied du Mont Chauve Coming from a terroir neighbouring En Pimont (another of Au Pied du Mont Chauve’s sites), this east-facing vineyard is opposite En Remilly, on the other side of the combe. This terroir always retains lovely freshness thanks to its higher altitude, and this is particularly true in 2022. The Charmois spent 18 months on lees, including 10 months in oak. It has a very perfumed and expressive nose, with notes ranging from ripe peach to white flowers. The wine has great body, complex and fruit-driven with lively acidity that makes for a crisp finish. This should be approachable immediately but has enough acidity to age for at least 10-15 years. 2022 Coteaux Bourguignons, L’Eclos des Abeilles, Domaine de Bellene This wine is once again excellent for what is “just” a Coteaux Bourguignons, rivalling some top village appellations. The fruit for this cuvée comes from cooler vineyards on the limits of the Bourgogne appellation in Nantoux (where the vines are 80 years old), Saint-Romain and Nuits-Saint-Georges, classified as Coteaux Bourguignons (an appellation more often associated with reds). Honeyed, fresh and round, it has bright citrus and orange peel notes, with vibrant acidity and a long, mouth-watering finish. This absolute favourite will be delicious young, but also evolve nicely over the next six to eight years. There is around 15% new oak here. Drink 2024-2032. 2022 Morey-Saint-Denis, Premier Cru, Les Sorbès, Domaine George Lignier Benoît Stehly already had 0.19 hectares of this vineyard just in front of the village cemetery, but it has historically gone into his Premier Cru blend. As of 2022, however, he has another 0.19-hectare plot and bottled the cuvée separately for the first time, making four barrels. It’s gorgeous – with a bright, tart-fruited intensity on the nose. The palate is lush with raspberry and cherry – the fruit of impressive purity. Velveteen tannins frame the fruit, while the long finish offers a savoury, smoky note.

Burgundy 2022: top-value buys

Bordeaux has several different classification systems. While the Right Bank has only Saint-Emilion’s system (one that is a source of controversy), the Left Bank has a more complex web of rankings.   
The 1855 classification is the gold standard. The most famous and influential of them all, it lists the Left Bank’s very top estates. But beyond this crème de la crème, there are several other systems ranking properties – namely the Graves classification, the Crus Bourgeois and Crus Artisans.  
The Graves classification  
Almost 100 years after the famous 1855 classification, producers in the Graves decided to create their own equivalent. Other than Ch. Haut-Brion, the region’s properties had not been included in the 1855 classification. A draft of the classification was drawn up in 1953, then the official list ratified in 1958, with some changes in 1959.  
The Graves classification is much simpler than the 1855 classification. There is only one tier, with estates declared “Grand Cru Classé de Graves” for white wine, red wine, or both. Sixteen estates in total were defined as the region’s best. Couhins, Couhins-Lurton and Laville Haut-Brion were classified for only their white wines, while Fieuzal, Haut-Bailly, Haut-Brion, La Mission Haut-Brion, Pape-Clément, Smith Haut Lafitte and La Tour Haut-Brion were classified only for their reds.  
Interestingly,. Ch. Haut-Brion is only classified for red, however this is not because its white was not deemed worthy, but because it did not apply for classification, given production of the illustrious wine is so small. It remains one of the region’s highest-rated and most expensive whites. 
Although there have been no changes since 1959, some of the wines are no longer made under the same name. Both part of the Clarence Dillon family, Ch. Laville Haut-Brion is now bottled as Ch. la Mission Haut-Brion Blanc, while fruit from La Tour Haut-Brion is now used for the second wine of La Mission, La Chapelle de la Mission Haut-Brion (read more about the genealogy of the Haut-Brion estates here).  
The Pessac-Léognan appellation was only introduced in 1987, so some of the wines are bottled under this today.  1959 Graves classification  Ch. Bouscaut (red and white)  Ch. Carbonnieux (red and white)  Domaine de Chevalier (red and white)  Ch. Couhins (white only)  Ch. Couhins-Lurton (white only)  Ch. de Fieuzal (red only)  Ch. Haut-Bailly (red only)  Ch. Haut-Brion (red only, also part of the 1855 classification)  Ch. Latour-Martillac (red and white)  Ch. Laville-Haut-Brion (white only, now the white of La Mission Haut-Brion)  Ch. Malartic-Lagravière (red and white)  Ch. La Mission Haut-Brion (red only)  Ch. Olivier (red and white)  Ch. Pape-Clément (red only)  Ch. Smith Haut Lafitte (red only)  Ch. la Tour-Haut-Brion (red only)  The Crus Bourgeois  The term “Cru Bourgeois” has long been used casually, but it was introduced as a formal classification in 1932. There have been many changes to the classification over the years. There were 444 properties in the original group, many of whom used the term on their labels even though the classification was never officially ratified. In 2003, after three years of debate, the classification was updated and split into three tiers (with Cru Bourgeois Supérieur and Exceptionnel added), only to be annulled in 2007, with the term then banned from labels. In 2010, the Cru Bourgeois classification was re-introduced and assigned to wines rather than estates, with their status re-assessed each year, but this too was soon replaced.  
In 2020, a new version of the classification was unveiled, going back to the three tiers of Cru Bourgeois, Cru Bourgeois Supérieur and Cru Bourgeois Exceptionnel. The top rank of “Exceptionnel” includes just 14 estates, with 56 Crus Bourgeois Supérieurs and 179 Crus Bourgeois (adding up to a total 249 properties). The classification is only being assessed every five years, with the next iteration set to be announced in 2025.   
The classification is decided based on the quality and consistency of the wine (assessed via rigorous blind tasting), traceability and authentication, with sustainability encouraged and rewarded. While these wines are not as highly regarded or sought after as those in the 1855 classification, the wines generally offer good value, and all come from the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. The Crus Artisans  
The Left Bank also has the Cru Artisan classification, designed to highlight smaller operations where the manager/owner is involved in every stage of production. The term has been used for over 150 years, however its official meaning was introduced in 1989. The classification was launched in its current guise in 2006, open to estates in the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. Generally family-owned, properties must grow their own grapes, then make and sell the wines.  
There were 44 Cru Artisan estates in 2006, but the latest classification (unveiled in 2018) included only 36 – with many addresses sold/absorbed by other producers, some retiring, as well as a handful of new names added. The classification is based on a visit to the estate and blind tasting of its wines. On average, Crus Artisans have just 10 hectares of vines. 2021 Bourgogne Hautes-Côtes de Nuits, Louis Auguste, Domaine David Duband  
This wine, named in honour of David’s son, Louis Auguste, comes from higher-altitude sites and some of the domaine’s oldest vines (over 55 years in age). In 2021, it’s spicy and lifted – offering a mouthful of pure, crunchy red fruit. It’s fresh and mouth-watering, building to a savoury, smoky finish. Superb value.  


2021 Gevrey-Chambertin, Charles van Canneyt  
This village bottling is an excellent entry point to Charles van Canneyt’s range – especially if you can’t get your hands on any of his Domaine Hudelot-Noëllat wines. The 2021s may be the best vintage to date of his négociant label, with a line-up of elegant and vibrant wines that offer great value. The village Gevrey-Chambertin is a wine of such finesse – with a lifted, perfumed nose. But behind the aromatics, there’s a more serious palate, with persistent, focused fruit, and vivid acidity driving through the core of the wine. The long finish is scented with delicate florals. 


2021 Gevrey-Chambertin, Domaine Duroché  
Because yields were so low in 2021 (due to frost and hail in the north of Gevrey), Duroché’s 2021 village Gevrey includes fruit from Le Clos, Champ, En Vosne and what little survived the hail in Premier Cru Champeaux. All Duroché’s vines are old, and for this cuvée, they were all planted between 1930 and 1986. The nose is perfumed and floral, but it’s the palate that really sings – with a tight energy and ripe, round mouth-feel. A gentle toastiness (with 15% new oak) coats the sweet, red cherry fruit. This vibrates with potential – the finish long, saline and mouth-watering. A brilliant introduction to the Duroché style. 


2021 Savigny-lès-Beaune, Premier Cru, Aux Guettes, Domaine Jean-Marc & Hugues Pavelot  
This vineyard sits just below the forest, with only 30cm top-soil over the hard rock below. The Pavelot plot (a mere 0.35 hectares) shows a totally different side to Savigny – brighter and lighter, with vibrant red fruit and a creaminess (with 25% new oak). The nose is full of raspberry and cranberry, with a welcome, sublime freshness thanks to this more “traditional” vintage. The medium-bodied palate is mineral and elegant, with great tension. The oak is well-integrated, bringing extra weight to the mid-palate, building to a vibrant, long finish. This is a top wine – classic and airy, as Burgundy used to always be. 


2021 Givry, Premier Cru, Clos Marole, Domaine Joblot  
Clos Marole is one of the few survivors from a catastrophic growing season at Domaine Joblot, with yields slashed by 50%. But – even if there’s not very much of it – the wine is superb. You’re instantly struck with vibrant, fresh red fruit, blackberry and crushed strawberry – possibly thanks to the old vines (on average 40 years old). The oak (35% new) needs a little more time to integrate fully, but is well-judged. Relatively light-bodied, the palate is driven by great acidity and silky tannins. The finish is long and suave. Enjoy this delicious wine young, but it has everything to keep for a decade or more.  


2021 Morey-Saint-Denis, Premier Cru, Clos des Ormes, Domaine George Lignier  
Domaine Georges Lignier is the largest owner in Clos des Ormes, with almost two hectares of the Premier Cru, all on calcaire comblanchien. The nose is pretty and perfumed with sweet spice notes courtesy of the oak (around 25% new). The fruit is bright and crunchy, yet there’s a darker, more brooding aspect on show – with a powdery tannic structure adding texture to the pure, long palate. An impressive result in the vintage.  


2021 Coteaux Bourguignons, L’Eclos des Abeilles, Domaine de Bellene  
Nicolas Potel only made 6,000 bottles of this wine in 2021 (instead of 20,000 normally) – yet it’s once again excellent for what is “just” a Coteaux Bourguignons, rivalling some top village appellations. The fruit for this great-value cuvée comes from cooler vineyards on the limits of the Bourgogne appellation in Nantoux (where the vines are 80 years old), Saint-Romain and Nuits-Saint-Georges, classified as Coteaux Bourguignons (an appellation more often associated with reds). The wine is mainly Chardonnay, however there’s a sprinkling of Aligoté adding extra zip.  The nose is honeyed, fresh and mineral, with the palate crisp at first, with clean acidity and superb balance. It rounds out with toasted almond and citrus, building to a long finish that brings a generous dimension of complexity to the wine. It is almost ready to drink now. A superb effort from Potel.  
  
2021 Puligny-Montrachet, La Rue aux Vaches, Alvina Pernot  
This was a particular highlight of our tasting – offering a very different style to Clos des Noyers Brets. Versus the soft purity of Clos des Noyers Brets, this is both more mineral and with a riper core of fruit – juicy white peach and apple, but with a bright, zesty green edge to it, and the very slightest hint of toast. The texture is richer and creamier, offering a pleasingly round yet beautifully elegant mouthful. Long and nuanced finish. This was bottled exclusively in magnum – with just 146 produced.   


2021 Saint-Aubin, Premier Cru, En Remilly, Louis Jadot 
In 2021, there is just one barrel of this Premier Cru – and it’s exclusively available from FINE+RARE. Pithy with flinty, mineral tones that complement an almost orange-zest lift. Behind the citrus and minerals though, there’s a core of fresh, white-peach fruit and toasty, spicy oak that lingers on the finish. The concentrated core is balanced by vibrant acidity, with that creaminess rounding out the lithe palate. Delicious.  


2021 Chablis, Grand Cru, Les Blanchots, Domaine Long-Depaquit  
Domaine Long-Depaquit has 1.66 hectares of this cool Grand Cru. They managed to make just 20% of a normal crop in 2021, the region’s yields drastically reduced by cruel April frosts. This was a particular highlight of our tasting – with an intense, taut, lime-and-lemon profile. Although the fruit verges on lean, there’s a brightness to the wine too. Notes of chalk, oyster shell and Granny smith apple are complemented by a creamy, round character. The finish is long and zesty – classic, pinpoint Chablis.

Domaine des Comtes Lafon’s Montrachet is remarkable. The estate’s rare, famous flagship wine comes from a tiny plot – just 31.82 ares, less than a third of a hectare–at the southernmost point of the world’s most famous white wine vineyard, with Blanchot Dessus across the road, and right next door to plots belonging to Domaine de la Romanée-Conti. In fact, the plot is so tiny that in the low-yielding 2016 vintage, the property joined forces with DRC, Leflaive, Domaine Guy Amiot & Fils, Domaine Lamy-Pillot and Domaine Fleurot, pooling together their grapes to produce two barrels of Montrachet from their combined 1.25 hectares.   The Lafon family has owned their plot since 1918, however the vines were farmed by the Morey family for a long time. Indeed it was only in 1991 that Dominique Lafon officially reclaimed it. The vines here are very old, with the vast majority planted in 1953, and a small section planted in 1972.  These old vines bask in the sunshine, facing south, their roots on deep limestone soils that preserve minerality and freshness. The wine produced is remarkable. Tasting through a vertical back to 2001 at our recent dinner, the style really shone through: it is one of the richest and most powerful Montrachets, possessing both great concentration, yet also an amazing freshness that carries it through a long drinking window.  Being fortunate enough to drink through 15 vintages really highlighted the wines’ capacity to age. The top 2017, 2014 and 2010 vintages were a masterclass in Chardonnay perfected, but it was the supposedly “lesser” years such as 2006 or 2011 that showed the sheer class of both the site and the winemaking.  While Dominique Lafon has long been the face of the estate, we were joined by his daughter Léa Lafon who – alongside her cousin Pierre – is leading the estate into a new era. The new generation is looking to the future and continuing her father Dominique’s relentless drive for continual improvement and innovation, while protecting her father’s legacy. Her mission remains the same: to produce the greatest possible expression of a year, adapting as needed to that single window in time.  It was exciting to taste with Léa, who was incredibly open about the challenges the estate faced in the past. She explained how the domaine, over the last 20 years, has made important adaptations both in the vineyard and winery that has led, she believes, to big improvements in the wines today. One significant shift has been the reduced use of bâtonnage, producing a more precise, brighter, fresher style of wine. Her desire to continually improve shone through during our dinner and conversation, and it’s clear that the future of this estate is incredibly exciting.  Vertical of Lafon's Montrachet 2017: The first vintage of the evening did not disappoint. In fact it silenced the table, truly setting the tone for the evening ahead. A remarkably powerful rich nose unfurled with ripe lemon, honey, blossom and buttery roasted nuts. It was delicate and refined, yet with deep concentration and levels of dry extract that coat the mouth. Multi-dimensional, multi-layered with extraordinary potential, this is a remarkable effort and was one of the great wines of the night. 2015: This has a ripe nose, but took a little coaxing to showcase the bright, well-defined, rich, ripe fruit. It was dense, bright and full (indicative of the vintage?), but with huge depth and potential. The salinity wasn’t quite as evident as on other vintages from the same era, with this showing a more waxy, honeyed ripeness. Very satisfying and long, with a buttery finish.  2014: As expected, the 2014 leaps from the glass, almost making itself known before any swirling has begun. It was very ripe with pungent limes, lemons and a slight hint of herbs. Smokey and mineral, there’s a touch of struck-match and slate. Once again, the harmony of all the components – weight, concentration, dry extract, acidity – is remarkable. The classic Montrachet power and weightlessness is very evident, clearly a wine for the long-term but how special to try it in an early phase of its evolution. Saline and complex. Classy and rich, simply outstanding.  2013: Considerable reduction evident here, slightly outweighing the fruit and perfume. Lots of slate and struck-match dominated at first, but with air it was rich and bright, with well-defined flavours of honey, ripe lemon, hints of smoke, minerals and an almost chalky finish.  2012: This had a bright, energetic nose of ripe lemon and lime, with a hint of apricot. Everything is aligned and seems to be in perfect proportion – deeply concentrated, but light and fresh – very harmonious and complete.  2011: This was another vintage from this remarkable line-up of triumphs that outperforms the vintage, showing an unbelievable balance of bright, dense, concentrated fruit balanced by high acidity. On the palate, it feels like this could last forever. Lime and minerality hides in the background, with a slightly waxy and tropical finish. Long and memorable.  2010: Standing up to the reputation of the vintage, the ’10 delivers in abundance. It is ripe, but with underlying slatey, chalky, smokiness; tense, but with huge concentration and a core of rich stone-fruit character. Layered and textured, it’s captivating. The wine is complex with hints of honey and nuts emerging with gentle coaxing. The oak is perfectly resolved and integrated. Hugely impressive, standout.  2009: Corked sadly! Though evidence was there behind the TCA of a brilliant wine. 2008: Wow – this was sensational, with a captivating nose of ripe lemon, lime, honeysuckle and even a hint of guava and limey, oyster water. Intense, focused and concentrated, there’s layer after layer of viscous, dry extract balanced perfectly by massive acidity, with citric bite. Very mineral and multi-dimensional, it’s complete and faultless. Hard to say how this outstanding 2008 could be improved in any way at all. Stunning.  2007: More reserved than the very pronounced 2008, this offered fleshy pears, stone-fruit, lemon rind, with slightly less concentration than some of its counterparts, but remained perfumed and charming.  2006: The consensus was the 2006 was one of the stars of the evening – show-stoppingly good, emphasised by what is a fairly ordinary vintage in the Côte de Beaune. It was ripe, almost tropical, but with the characteristic saline, mineral, high-acid backbone found in the top vintages of this extraordinary wine. It was floral, ginger and orange-zest scented, while the palate is sumptuous, multi-layered and penetrates the whole way through. Weightless and powerful, it build to a nutty, saline finish. Extraordinary, it’s surely a contender for wine of the vintage.  2005: This was apparently a tricky vantage at Lafon, with some bottle variation Léa noted, but it was another outstanding ex-domaine bottle on the night. It offered a quieter nose than the sublime 2006, with hints of honeysuckle, candied apple, hazelnuts and ginger. It has a rich core of concentrated, dense, buttery, ripe nuttiness, which follows through to an elevated, slightly floral finish. 2004: Another challenging vintage for Lafon, with some bottle variation possible, the bottle on the night, however, was outstanding. With notes of limey, fresh apples, it has the characteristic marine, saline character, if not as pronounced as other vintages. It has a soft, slightly reticent texture, but an undeniable power, reminding us of the quality on show. Perhaps slightly shorter than previous vintages, but still superb. 2003: Completely not the expected profile for such a warm vintage, this was quite lean and high acid. It’s very pure and seductive, yet still with a saline note, pears, slightly candied apple, cream and a limey finish. Exceptionally long and satisfying. 2002: A very strong showing, this was bright and alive, with a mineral nose showing fresh citrus, with a more rounded and almost silky mouth-feel. With hints of pine nuts, minerals, slate, it was dense and rich but with balancing high acidity that makes for a wonderfully fresh palate and saline finish. Outstanding. 2001: This was perhaps slightly more mature than expected (not a perfect bottle), but was the right side of oxidised, with excellent depth and freshness. Exploring Domaine des Comtes Lafon’s Montrachet

When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial

Montrachet, Chambertin, Richebourg: these names will send chills down the spine of any Burgundy lover. But many of the Côte d’Or’s most famous domaines are looking beyond these grand names, making wines from vineyards and appellations that might otherwise fly under the radar. With reputations at stake, the likes of Domaine d’Auvenay, Coche-Dury and Bizot put as much effort and care into these “lowly” wines as for their Grands Crus. Quality in these appellations is soaring – with better vine material, cooler sites that are benefitting from the warming climate, not to mention better winemaking and know-how all contributing. Here we offer a guide to just a handful of the treasures to be found in Burgundy if you look a bit further afield. Auxey-Duresses Right in the middle of the Côte de Beaune, Auxey-Duresses is a small, sleepy village situated above Meursault. Prior to AC regulations, the white wines of Auxey-Duresses were sold as Meursault and the Pinots sold as Pommard or Volnay. While probably better known for Pinot Noir production, some of its top wines are Chardonnays made in a specific part of the appellation directly bordering Meursault.  Here, high up on the hill, over the brow of Meursault’s highest vineyards you will find vineyards facing unusually north-west. While these vineyards are too cool to adequately ripen Pinot Noir, they have proven to be a great climate for Chardonnay, particularly in today’s warming climate. In a warm vintage, the whites can give the top Meursault vineyards a run for their money. Domaine Leroy, one of Burgundy’s most eminent estates run by Madam Lalou Bize-Leroy, has holdings in this part of Auxey-Duresses in Les Lavières, while Domaine d’Auvenay also regularly produces an Auxey-Duresses Blanc on this particular northwest-facing slope from the vineyards of La Macabrée and Les Boutonniers. Depending on volumes D’Auvenay can produce three separate Auxey-Duresses Blanc cuvées in one vintage or if volumes are down will blend into one. While these are expensive options, the quality is undoubtedly there and this is a great lesser-known spot in the Côte d’Or to source outstanding Chardonnay, particularly in warmer vintages.  Domaine Roulot, Olivier Leflaive and a Jasper Morris MW favourite Domaine Diconne (which has vines dating back to 1924) also produce excellent Auxey-Duresses Blanc on these slopes adjacent to Meursault. While stricter in style than their neighbours, they remain fantastic value. For reds, Domaine Comte Armand’s Premier Cru Auxey-Duresses is another great buy. Made from two complimentary Premier Cru sites – La Duresses (whose brown clay soil brings density and tannic structure) and Les Breterins (on lighter soil bringing fruitiness) combine to make a fabulous Auxey-Duresses well worth discovering. Monthélie Next door to Auxey-Duresses, sandwiched in between Meursault and Volnay, is another lesser-known appellation which has an impressive line-up of producers on its roster. Comtes Lafon, Coche-Dury, Philippe Pacalet, Domaine Roulot and Leroy all produce Pinot Noir from this little, oft-forgotten appellation.  Monthélie is actually one of Bize-Leroy’s favourite appellations for her Maison Leroy selection. Historically, Monthélie tended to produce Gamay more than Pinot Noir, but that is not the case today. While the village wines tend to be a little lean and err too far towards vegetal flavours, the Premiers Crus within the appellation deserve much more attention. Domaine Coche-Dury produces a Premier Cru Les Barbières, while Comtes Lafon’s Premier Cru is in Les Champs Fulliot.  Both have full south exposure, enabling the wines to ripen fully even at higher Hautes-Côtes-like altitudes. In the warmer vintages, you could be justly rewarded for sourcing wines from this under-appreciated little corner of Burgundy. Monthélie is also home to Domaine Potinet-Ampeau, whose collection of older bottlings can wow the senses, provides a fascinating and educational insight into mature Burgundy. Pernand-Vergelesses Few Chardonnay appellations in the Côte d’Or are as underrated as Pernand-Vergelesses. Proximity to Corton-Charlemagne makes this unsurprising. This winemaking enclave, tucked behind the hill of Corton, has long been a consistent appellation where you find outstanding quality at a fantastic price.  While consistent in quality, it is often inconsistent in quantity due to its position between two rising hills. The lay of the land produces natural airflow that attracts hailstorms and is also susceptible to frost as cold air sits in this natural pocket of vineyards. If the region escapes these climatic perils, the Chardonnays are linear and have a flinty, mineral character. The wines can age well, gaining richness as they mature. A top producer of particular note is Domaine Rapet – of whom Wine Advocate critic William Kelley recently noted, “It’s a mystery these wines are not better known or distributed.” Being the biggest landowner of Corton-Charlemagne, they are one of the region’s most consistent white wine producers. Domaine Chandon de Brailles (based in Savigny-lès-Beaune) is also widely recognised for producing the best Pinot Noir in the appellation.  Their Pernand-Vergelesses Premier Cru Ile de Vergelesses regularly competes with top Pinot Noirs made in the more famous appellations and is often described as one of Burgundy’s bargains given the quality. Other better-known producers such as Dugat-Py and a more recent purchase in 2012 by Domaine Jean-Claude Ramonet (one of the world’s top Chardonnay producers) – testify to the quality found here. Perennial FINE+RARE favourite, Domaine Jean-Marc & Hugues Pavelot, also produce outstanding Chardonnay from Pernand-Vergelesses. Morey-Saint-Denis While Morey-Saint-Denis can hardly be described as under the radar, it continues to be undervalued amongst its neighbours despite its obvious pedigree. Morey-Saint-Denis’s prime location in the Côte d’Or sandwiched between Gevrey-Chambertin and Chambolle-Musigny, for some reason – despite being home to five Grands Crus (Clos de la Roche, Clos de Tart, Bonnes Mares, Clos des Lambrays and Clos St Denis) – never gets the same limelight as either of its neighbours.  It’s possible to blame the autonomous nomenclature of its Grands Crus – with only Clos St Denis having a clear link to the village. It has meant that Morey-Saint-Denis as an appellation is seen as somewhat lesser in quality than its neighbours. Another reason might be that, like Auxey-Duresses, before the AC regulations came into play, the wines of Morey-Saint-Denis were either sold as Gevrey-Chambertin or Chambolle-Musigny.  Outside the Grands Crus, our excellent recent discovery is Domaine René Bouvier. Their  Morey-Saint-Denis En la Rue de Vergy is a simply stunning Pinot Noir no matter where it is from. While only classified as village, this vineyard is surrounded by Morey-Saint-Denis’s most illustrious Grands Crus – Clos des Lambrays, Clos de Tart and Bonnes-Mares – on the border with Chambolle-Musigny. In a sunny vintage, this cooler site has excelled and remains one of the great value-buys of 2019. Chassagne-Montrachet Rouge It is not simply lesser-known appellations that get missed. While its Chardonnays get all the attention today, Chassagne-Montrachet was historically a Pinot Noir appellation (as was Meursault). Today, Pinot Noir only represents about 20% of production within the Chassagne-Montrachet Premiers Crus, but until the 1960s, the appellation was dominated by the red grape. Some of the top Pinot Noir sites here were judged to be as good as Musigny, Clos de la Roche and Clos de Tart. Today Chardonnay is the better variety in the village, but there are still top examples of Pinot Noir to be found – often at a great price for the quality. The red wines from the Clos Saint Jean Premier Cru are often described as a unique expression of Pinot Noir – a wine of fantastic finesse, quite at odds with the appellation’s reputation for robust reds. It is arguably the finest site for red wine in Chassagne-Montrachet. Jean-Claude Ramonet produces a top example and Premier Cru La Boudriotte is also great, if not a little leaner in style. Marsannay Most Burgundy buyers rarely explore further north than Gevrey-Chambertin in search of the next big thing, but all indications point in that direction. Marsannay was only given appellation contrôlée status in 1987, encompassing three districts of Chenôve (on the outskirts of Dijon’s urban sprawl), Marsannay La Côte and Couchey.  Unique to the appellations of Burgundy, Marsannay can produce a rosé wine from Pinot Noir.  The foundation for the village’s reputation, many vineyards within the appellation are dedicated exclusively to rosé production. If a red wine is made in these vineyards, it must be declassified to Bourgogne Rouge). While Sylvain Pataille and René Bouvier make the most serious and age-worthy rosés in the appellation, the whites and reds are arguably the most exciting development in recent times. The village of Marsannay is arguably producing the best Pinot Noir for the money in the whole of Burgundy. Cult producers such as Domaine Bizot with Jean-Yves Bizot’s Marsannay Clos du Roy and his Bourgogne Le Chapitre, situated just south of Dijon, are already on aficionado's radars.  These wines are made in tiny quantities and has only further increased the collectability of these wines made in a distinct style (100% whole-bunch fermentations and zero sulphur additions). If sourcing Bizot wines is too painstaking and out of one’s budget, there are plenty of other exceptional growers in this region. Domaine Audoin is producing outstanding Premier Cru Marsannay that can compete with some of the top Gevrey bottlings and the wines still remain fantastic value. Domaine René Bouvier also makes exceptional wines from Marsannay. Côte Chalonnaise: Givry, Montagny and Rully Outside the Côte d’Or, to the south in the Côte Chalonnaise, Mercurey dominates the limelight compared to neighbouring appellations Rully, Montagny and Givry. When handled correctly, however, Givry, can produce fantastic, powerful Pinot Noir that also offers finesse. Rully and Montagny are also a great source of Chardonnay and remain outstanding value.  Montagny only produces Chardonnay – the top producers being Domaine Stéphane Aladame, Domaine Bruno Lorenzon and Domaine Maxime Cottenceau. Rully produces white and red, but the domaine's Chardonnay represents one of Burgundy’s best-value white wines. Producers worth looking out for include Domaine Jaeger-Defaix and Domaine Vincent Dureuil-Janthial. Domaine Joblot is the leading producer in Givry. Their wines consistently compete with those in the Côte d’Or, a beacon for the appellation’s reputation, yet remain sensibly priced. Of the estate’s 14 hectares, nine are Premier Cru, including some of the village’s finest plots such as Clos de la Servoisine and Cellier aux Moines.  L’Empreinte –  a blend of their four red Premier Cru sites (Clos de la Servoisine, Cellier  aux Moines,  Clos  Marole  and  Les Bois  Chevaux – is the property’s top wine. The white, Cuvée Mademoiselle, is a blend of  their  older-vine  Premier Cru  Chardonnay from  En  Veau  and  Clos de la  Servoisine. Joblot is rightfully praised by the likes of Clive Coates MW,  Robert Parker, Allen Meadows and Jasper Morris MW for being the leading address in Givry and one of the greatest estates in Burgundy. Hautes-Côtes de Nuits Situated over the brow of the main Côte d’Or slope and further to the west are the vineyards classified as the Hautes-Côtes (the higher slopes) of the Côte de Nuits. Typically around 100 metres higher in altitude, only the southwest and southeast slopes are warm enough to ripen grapes, but geologically parts of the region are identical to the Côte d’Or.  With warmer vintages, quality here is greatly improving and you can find some outstanding wines at a great price. Two top examples of this come from Vosne-Romanée’s Domaine Gros Frère & Sœur and Domaine David Duband. Both estates have invested heavily in the region believing in the potential of these cooler sites in a warming climate. Off the beaten track in Burgundy

It’s not often words fail me. But finding the right words to describe Dr Bill Lumsden to those who haven’t had the great fortune of meeting him has rendered me a little dumbstruck. Many have dubbed him the “Willy Wonka of the whisky world” for his creativity, jaunty style and flair. His latest project, a purpose-built home for innovation named the Lighthouse, where Lumsden can innovate to his heart’s content and create all manner of whacky and category-bending whiskies, somewhat perpetuates this narrative of the eccentric whisky-maker. But, I’d argue, the good doctor is far more than this. He is, first and foremost, an incredibly accomplished scientist. His work at Glenmorangie and Ardbeg over the past 26 years – maintaining the iconic distillery characters and launching innumerable products for each – is nothing short of sensational. He is a workhorse, as well as, it would seem, a bit of a clothes horse. “I’m a bit of a shopaholic,” he tells me with glee. “I love buying clothes.” This isn’t the sort of confession I expected when sitting down with the Director of Distilling, Whisky Creation & Whisky Stocks in November last year. “If something’s in fashion, I wouldn’t be caught dead in it because other people are wearing it,” Lumsden continues. “So I tend to wear things which have been out of fashion for many years or are yet to be in fashion – and it’s just a little facet of my personality, unfortunately.” This, while slightly unexpected, actually makes a great deal of sense when you cast an eye over his professional life. Lumsden has always been the trendsetter rather than the disciple. And he’s quick to assert that his avant-garde attitude extends beyond apparel. “I have absolutely no interest whatsoever in what’s in fashion and what’s not in fashion [in the whisky industry]”, he says. “When I’m doing something it really is all to do with will I like the taste at the end of the day? Will it complement that character of the Glenmorangie or the Ardbeg spirit?”. Since joining Glenmorangie in 1995, Lumsden has been charged with “maintaining and hopefully slightly improving the spirit character” and innovating. While once his role was divided equally between these two tasks, new product development and innovation now take up the majority of his time. “It’s got to the stage now where the demand for new products is almost impossible to keep up with,” he says matter-of-factly. While this might be fatigue-inducing for some, this constant pressure to innovate exhilarates the inquisitive doctor. “I’m a scientist by training,” he explains. “It’s in my blood to experiment, and I’ve always been a curious individual who gets bored very easily and likes to try new experiences, in every aspect of my life. So the move to Glenmorangie was heaven-sent for me from that perspective,” he says with unfettered glee. The decision to build Lumsden’s Wonka-esque Lighthouse was driven to a certain extent by necessity, he tells me. “The Ardbeg and particularly Glenmorangie distilleries have been running absolutely flat-out for the last 12-15 years,” he says. “For me to interrupt the production cycle to get access to the distillery for three to four weeks of a year, where I wanted to try some radically different things was proving increasingly difficult. And also some of the things I wanted to do, I just simply hadn’t been able to do that with the existing distillery plant. “So the Lighthouse has been established to allow me to experiment but while maintaining the volumes that are required for future bottlings and also to try things that I simply can’t do in the main distillery.” These things range from the smallest alteration in primary production to radical innovations, and everything in between. “Some of the time it can be a very, very simple change,” Lumsden tells me. “It can be something as simple as offering one of your expressions in a natural, cask-strength form, for example, and other times it can be something dramatically different, where you’re actually using completely new materials. I am continuing to experiment with just about anything you can think of.” For the past 10 years, this experimentation has largely focused on different aspects of production. “We’re about to see some products coming out for both the Glenmorangie and the Ardbeg brand where I’ve been playing around more with primary production – it’s been great fun,” he teases. The challenge with this approach, he says, is two-fold. “You’ve got a very long lead time until your product comes to market,” he explains. “Sometimes you’re talking 10 years’ maturation.” At the very least. If you’re experimenting with barley varieties, or looking at fermentation profiles, you have an even lengthier wait. Secondly, by the very nature of these experiments, the difference between spirits is most emphasised in the new-make. “For example, using the barley varieties, it’s not giving you black and white differences,” Lumsden explains. “It’s more shades of grey, and you really pick that up in the new spirit. “But after many years of maturation, you risk losing these differences. So you have to choose your cask type accordingly to try and make sure that you still have the point of difference coming through.” Lumsden says Glenmorangie is launching a product in 2022 that is an experiment he’s always wanted to carry out. “I did this many, many years ago. I can’t say any more about it at this stage, but I will probably bottle this [whisky] slightly younger than my original target, which was 12 years, because I don’t want to continue to minimise the difference in character, if that makes sense?”  In addition to maintaining the two distillery’s very distinct characteristics, and inventing all manner of whiskies, Lumsden sits on a number of prestigious judging panels. In this capacity, he tastes hundreds upon hundreds of whiskies and sees first-hand the changes in the industry and trends that are being adopted – good and bad. He says there has been a “real divergence” in recent years. “Some of the whiskies I taste have become much more characterful and I’m delighted to see whiskies that are non-chill filtered,” he says hopefully. On the controversial subject of chill filtration, the process whereby distillers remove esters and fatty acids to prevent the liquid clouding at low temperatures, Lumsden ardently believes less is more. He does, however, acknowledge its place in markets where drinkers might not understand that cloudiness is caused by oils coming out of suspension rather than a fault. But, he believes, producers are taking its use to the extreme. If Ardbeg and Glenmorangie whiskies are chill-filtered, it is only ever done so “very gently”, because Lumsden feels that lipids – fatty acids from the base barley that would otherwise be removed by full chill filtration – add texture and character to the spirit. Sadly, he rues, this is not true for others who are “very brutally” applying this technique to hasten up processes, and character is lost as a consequence. Corner-cutting exercises like this, speeding up distillation methods and reusing barrels too many times are becoming all too common, he says. When it comes to producing or judging a perfect whisky, Lumsden says he’s after complex harmony. “I’m looking for the flavours to be nicely integrated together and not having any one aspect dominate,” he says. “That’s what I think good quality whisky, particularly Scotch whisky, should be". “The final thing I’ll look for is the length and character of the aftertaste of the whisky,” he explains. “Because I really don’t like to see a whisky just completely fade – it shouldn’t do that. It’s a richly flavoured product and it should linger on the palate for a while.” Whether he’s sitting on a judging panel or looking out from his monstrously tall Roald Dahl-esque Lighthouse, Lumsden’s vantage point, you sense, will always be forward-facing and progressive.
