Walking into the cooperage at Ch. Smith Haut Lafitte is like stepping back in time, filled with the smell of seasoned wood, an open fire and the same tools that barrel-makers have used for centuries. Few estates have the luxury of an in-house cooper. While producers inevitably work closely with the tonnelleries (barrel-making firms, such as François Frères, Stockinger and more), having an artisan on-site, working alongside the winemaking team to craft casks exclusively for your specific terroir is different. “It’s very important for the precision of the wine,” explains Cellar Master Yann Laudeho.  Florence and Daniel Cathiard, owners of the Pessac-Léognan estate, built a cooperage on-site almost 30 years ago, in 1995, and their current cooper, Yann Dez, has been working here since 2021. The Bordeaux native’s father was a metal worker, and Dez fell into the world of barrel-making entirely by accident – having a friend who was a tonnelier, and a job opening at an opportune moment. Before he knew it, Dez had learnt the trade from some of the best coopers in the country (including one who now makes the barrels at Ch. Margaux), and spending 15 years working under Didier Fesil. Fesil was the Cathiard family’s first cooper back in 1995, who went on to create his own small tonnellerie (Tonnellerie Bordelaise), and has been named the nation’s best “Master Cooper” – twice. Indeed, Fesil is still very involved with the estate, helping choose the wood for barrels and advising on all things oak; and it was Fesil who put Dez forward for the role at Smith Haut Lafitte.  “There are no books,” Dez says, when I ask about the art of barrel-making. “It’s passed on from tonnelier to tonnelier." The first evidence of coopering as a trade dates back to 900BC – with the craft passed down the generations ever since. “I continue the tradition,” Dez says, clearly with a sense of pride in this ancient, artisanal skill. But with the dust, noise and physical labour involved, tonnellerie schools, Dez tells me, are struggling to recruit young people. It’s common for coopers to have issues with their shoulders and ears (from the non-stop hammering) – and Dez himself has broken an elbow.  In theory, the process can be mechanised – but Dez is clear on how important it is to work by hand, and not just to preserve this ancient art. “I hear the nose, I feel the resistance,” he says. Each barrel, he explains, is different – with a slightly different number of staves and slightly different shape, all adapted according to the wood he’s working with. Selecting the right wood is key – “reading” it, he explains, looking at the grain to see where potential weaknesses are, understanding where will take the most pressure and placing each stave accordingly, ensuring not a drop can seep from the finished barrel. “It’s a job that is both physical, and at the same time requires thinking,” says Dez – and this combination is much of its allure for him.  Hearing the way Dez talks about barrels is fascinating; for him, they each have a unique personality. When I ask Dez how he knows he’s made a really good barrel, he shrugs: “On le sent.” (“You feel it.”) As you toast a barrel, he tells me, the scent of the smoke changes, releasing different aromas – something I smell as he works in front of me. Knowing when it’s spent the perfect amount of time over the fire is the secret – and it’s about more than just the smell, it’s a gut instinct that he can’t quite explain.  Smith Haut Lafitte sources oak from a range of forests, and are always trialling wood from different forests, toasts and doing blind tastings, although – after over 25 years – they know what works for their wine, and terroir. Cellar Master Laudeho explains that, for him, Tronçais and Jupilles are the best – “diamonds” that flawlessly complement their site. And that balance is key; the wood works for the wine, not the other way around.  It seems like a lonely job, I comment, hammering away in his tower – but it’s not something that bothers him. “I’m a bit of a perfectionist,” he tells me. Having only himself to depend on, and knowing that he can ensure each barrel meets his exacting standards, suits him. Indeed, he doesn’t even settle for standard tools – making most himself, custom-designed to suit the way he works. He talks me through a specific hammer that he made, and how it allows him to work better and more precisely, the wooden handle almost silken from the hours of use, shaped to his hand.   The lone electronic technology to have earned a place here are noise-cancelling headphones and a Marshall speaker. He’s a musician in his spare time, and an additional perk of working alone is that he gets to spend all day listening to music. “All the barrels I’ve made,” he says, “are made with music.” He avoids anything too modern or electronic, favouring old jazz, with some reggae, ska jazz and funk in the mix, depending on the day. While he doesn’t feel the music he listens to influences his coopering, he suspects his mood does – and music is a big part of that.  Woodwork is much more than a job for Dez. I spy a beautiful chest alongside his speaker, and it’s one that he made. He has a workshop at home too, spending his free time making everything from guitar stands and toys to chandeliers – anything, he says, that isn’t straight, and therefore can’t really be done by a machine.  It’s amazing watching him work – in the same way as coopers have for centuries – with a natural intuition, ease and precision. There’s definitely something musical to it, a craft that has its own rhythm. He makes around 300 barrels a year, and they may not be soloists – but each one contributes their own note to that year’s symphony.  Explore all current listings of Ch. Schrader Cellars is one of Napa’s most decorated producers. The estate’s approach of pairing specific clones with the perfect site to produce the ultimate expression of Napa Cabernet has made it a critics’ darling – and the property is behind some of the most coveted fine wines on the market. To date, Schrader has received an astounding 35 100-point scores.  Schrader Cellers founder Fred Schrader and the estate’s winemaker Thomas Rivers Brown are huge fans of the To Kalon vineyard in Napa’s Oakville and much of the production from Schrader is concentrated on this single site, such is the obsession with the place and conviction in its quality.   To Kalon is home to some of Napa’s oldest vines and best Cabernet Sauvignon. There are more 100-point wines to originate from this vineyard than any other on the planet and many famous names have built their reputation on it. Schrader bottles different clones of Cabernet Sauvignon from this site, highlighting the nuance and personality that Napa Cabernet can achieve.  Stylistically, Schrader’s wines are immense, opulent and plushly textured, underpinned by elegant power. Schrader is high-octane Napa at its finest. It is immediately clear tasting through the range that these are precise wines. High alcohol, high levels of oak, high levels of concentration are all potential red flags when it comes to wine faults (these wines being much more volatile), but these Schrader bottlings are as clean as a whistle.   With a total production of just 2,500 to 4,000 cases each year, this is meticulous winemaking at its finest. It means winemaker Thomas Rivers Brown and his team can keep these high-octane wines protected from potential faults throughout fermentation and élevage, never losing the fruit clarity that so clearly defines these wines.  RBS is made entirely from the Cabernet Clone 337 from Beckstoffer To Kalon. Jason Smith – Schrader’s in-house Master Sommelier – explains that this clone is their most fruit-driven; it can achieve phenomenal levels of ripeness and is known for its bright, fruit-forward style. Tasting the 2017, the wine is super intense, though the power is measured, pulsing with energy that builds beautifully on the palate. The purity of fruit is impressive and the fruit flavours mesh so well with the new oak tones, while a distinct red fruit character dominates. It is beautifully balanced, despite its opulence. Due to Clone 337’s natural style, it spends less time in new oak – around 18-19 months.  CCS is made from Clone 4 Cabernet – also known as the Mendoza clone – in To Kalon. Clone 4 is known for its density on the mid-palate and is much more tannic and extracted than the RBS. The wine really does have a denser core and more intensity compared to Clone 337. The fruit character is also darker and much more brooding. The 2018 still has more to give and is a little clenched at the moment. The warmer 2018 vintage also would potentially emphasise that, but this is also the characteristic of the clone, built for longer ageing.  The Heritage Clone cuvée is made with Clone 31 – the original clone planted by Robert Mondavi in To Kalon. The 2019 is a breath-taking wine. This is perhaps partly due to 2019 being an incredibly expressive vintage, but what is most notable is how the intensity is matched by overriding freshness. The balance of concentration and acidity from Clone 31 (at least in this vintage) really gives the wine a distinct character. It is stunning – and the length is really quite something. Old Sparky is Schrader’s top cuvée – a mix of Fred Schrader’s favourite blocks from To Kalon curated and blended differently each year. To taste the 2012 out of magnum, a wine now with some bottle age, was a rare treat, but also confirmed the precision at work at Schrader. After 10 years in bottle the wine has fully unfurled, the tannins bring structure but are open-knit. The depth is extraordinary. There are the first signs of tertiary development but the aromas are still so pure. It is a heavenly bottle and such is its balance that it is going to age effortlessly, but why resist this any longer, it is perfect now.   Contrasting the three clonal wines side by side, it is undeniable that each of the wines have quite different personalities considering they are all Cabernet from the same vineyard and made by the same winemaker. When it comes to personality, the Heritage Clone bottling really stands out, but matches the other bottlings for its plushness and amazing fruit clarity. Old Sparky, as a blend of clones, also shows how well they can work together. Understanding the effects different clones have on wine flavour, structure, concentration and ageing potential is one more aspect to a wine’s make-up that, while not often so publicly addressed as with Schrader’s bottlings, has played an instrumental part over the last 20 years in building fine wine’s complexity.  The latest vintage from Schrader is released each autumn. Calon Ségur was my first ever en primeur purchase. There was such hype around the 2005 vintage and I was desperate to get my hands on something, anything. At the time I was a delivery driver for a small wine merchant and it was a luxury, but I could just afford a 12-bottle case of Calon Ségur. That alone is proof of just how cheap this wine was at the time, and how little in demand. The château always had pedigree, however. It was classified as a Third Growth in 1855 – a ranking that may even have been an underestimation, given its reputation today. Evidence of wine-growing on the estate dates all the way back to the 12th century. Since then, the property has passed through the hands of some of the most important winemaking families in Bordeaux. By 1718, the Marquis de Calon owned not just Calon Ségur but Lafite Rothschild, Latour and Mouton Rothschild. With the exception of Ch. Margaux, all the future Médoc First Growths were under his management, but he famously said, “I make wine at Lafite and Latour, but my heart is at Calon.” The quote inspired the heart that adorns every bottle. More recently, the vintages produced under Georges Gasqueton in the 1920s, ’40s and ’50s remain legendary. So, what went wrong? How could an estate, favoured over Lafite and Latour, fall so far from grace? In modern times, the blame seems to have been lain firmly at the feet of Madame Denise Gasqueton who took over the property after her husband died in 1995 and managed it until her death in 2011. But current Technical Director Vincent Millet says this is an unfair assumption. And he should know. If there has been one constant at Calon Ségur through its complete transformation, it is him – having started working at Calon in 2006. “Gasqueton was very traditional in her approach,” says Millet, “but her methods were not uncommon at the time.” Millet explains how the 1970s, ’80s and even ’90s were a lean era in the Médoc. Prices for the wines hit rock bottom and costs had to be cut to survive. Philippe Gasqueton – her husband – had instigated a mass uprooting of Calon Ségur’s vines, hoping to save on labour costs, which were the estate’s biggest outgoing. Although it’s hard to believe now, they pulled up every other row of vines. While Saint-Estèphe had a great reputation for Cabernet Sauvignon, it was harder to grow than the earlier-ripening Merlot, which typically produced more fruit. As Merlot gained in popularity, plantings in the Calon vineyards grew. By the time Millet joined the estate, Merlot represented 50% of the blend at Calon.  Millet is not critical of Gasqueton’s decisions. “It was necessary to survive,” he says. But he knew Merlot was not the best variety for the Médoc and he was keen to make changes. He’d spent five years working with Ch. Margaux, Mouton, Latour, Pétrus, Haut-Brion and Lafite Rothschild, examining the effects of filtration on wine. He then joined Ch. Margaux, heading up their research development department for eight years. By the time he reached Calon, he knew that changes in the vineyard would rekindle its reputation – a disappointment to Madame Gasqueton who had invested in a new winery just a few years earlier. But Gasqueton was open to Millet’s ideas and he convinced her to build a truly state-of-the-art winery at their other estate, Ch. Capbern. “Capbern became a laboratory,” explains Millet. It was their playground, providing much of the research that would inform the work at Calon. Soon before Millet’s arrival, Gasqueton started restructuring the vineyards to make sure they met the appellation’s minimum vine density. Millet then started dividing up the vineyard and identifying the best plots and replacing the Merlot. Importantly he also insisted that rather than harvesting the Cabernet straight after the Merlot, they would wait for the fruit to be fully ripe – something he remembers having to persuade Gasqueton was necessary. “We have to act when the grapes tell us to, not the other way around,” he explains. By 2008, Cabernet Sauvignon once again represented 80% of the vineyard – the same proportion as in the estate’s legendary period in the early 20th century. By the time Gasqueton passed away in 2011, the roadmap for changing Calon’s fortunes was already in place. The estate was purchased by the insurance company Suravenir in 2012. And the new owners, much to Millet’s delight, were happy to invest in the property. As the financial constraints lessened, Millet was able to implement changes rapidly. Under the new management, Millet found he could be more selective with the fruit. He could easily distinguish the best plots, as they were all now vinified separately. Amazingly, production of the Grand Vin dropped by almost half. Between 2000 and 2005 production sat at around 180,000-200,000 bottles a year. Today they make just 100,000 bottles of the Grand Vin.  The second wine Marquis de Calon became the expression of Merlot at Calon Ségur (almost a copy of Calon’s profile under Madame Gasqueton). But today Calon Ségur is distinctly Cabernet-driven and it is what Millet believes is the best interpretation of Calon Ségur and Saint-Estèphe’s terroir. There’s much more to the wine than Cabernet, however. “Calon Ségur is all about finesse,” he says. “It doesn’t have the terroir to make the powerful wines of Ch. Montrose or Cos d’Estournel. The wine would be too rustic if we tried to make it more powerful.” It’s this elegance that makes it unique in the appellation, defying Saint-Estèphe’s reputation for chunky, slightly awkward tannins. Today, the estate is firing on all cylinders and it has become the darling of Saint-Estèphe.  With its change in fortune, financial security and the capable hands of Vincent Millet, the property has rediscovered its terroir – the one thing that hasn’t changed over the centuries. I still have one bottle left of that first case of 2005 I bought – and it turns out, despite being the only thing I could afford, it was a brilliant buy. Having been able to taste through every vintage since has been fascinating, allowing me to follow the estate’s journey. Maybe with the final bottle, I will toast its 20th birthday. It will neatly mark a fascinating transformation of this once ugly duckling estate – that today has become Saint-Estèphe’s most elegant. Calon Ségur: the ugly duckling of Saint-Estèphe

Lalou Bize-Leroy is one of the wine industry’s legends – but you wouldn’t know it meeting her. 
The slim 90-year-old flings open the door of her Auxey-Duresses estate to greet me open-armed, her two dogs running out to say hello as she gushes over the flowers I’ve brought her. Just as we commented after our visit last year, despite making some of the region’s finest (and most sought-after) wines, there is nothing grandiose about Leroy – here you are treated like family. 
The reason for my visit, of course, is to taste the 2023 collection from Bize-Leroy’s négociant arm, Maison Leroy. This label is the most affordable entry-point and window into Leroy’s empire – with the rare wines of Domaine Leroy and Domaine d’Auvenay almost impossible to get your hands on. 
Although the Leroy family has owned vines for centuries, the family’s reputation was built on its négociant bottlings – with the operation dating back to 1868, when it was established by François Leroy (Lalou Bize-Leroy’s great-grandfather). While Bize-Leroy’s father Henri focused on Domaine de la Romanée-Conti (purchasing a 50% stake in 1942), Bize-Leroy joined the family business in 1955 and developed the négociant. It is only under her tenure that the company really flourished and became known for offering the very best of the best. Over almost 70 years, she has built and shaped both the Leroy reputation, and that of Burgundy as a whole. 
The négociant project is a massive undertaking, with Bize-Leroy tasting hundreds of wines blind each year en primeur. She will know the appellation but not the grower/producer, and picks only the very best to be bottled under her family name, looking for the most typical examples, with the most beautiful definition. She is known for her incredible palate and, given her position in the region, has unrivalled access to the very best vineyards – the combination makes for négociant wines of unusual pedigree. 
The wines are then matured in the Leroy cellars, released to the world only when she deems them ready. It’s particularly important to Bize-Leroy that the wines are sold only when ready to drink – feeling that far too many wines today are consumed too young, wastefully consumed when they haven’t realised their full potential. “Waiting,” she says, “makes all the difference.” 
She talks about the Maison wines as if they’re her children, with an affection and care that is hard to describe – but makes sense given the personal relationship she has with each and every wine selected. 
The 2023 release focuses on vintages ending in three – including a host of vintages that she feels are under-rated and misunderstood. Starting with the 1983, she notes how the reds were rustic at first – with massive tannins, but the acidity was there, and the best wines have length, subtlety and a sense of completeness that is rare. 
“Everything has been written about 2003,” she tells me of this infamous year. Despite the year being known for its hot conditions – with then unheard-of temperatures and a record-breaking early harvest – she secured lots of the wines, finding that they had “une petite côté de tendresse”, showing a tenderness that was enchanting. The 2003 Savigny-lès-Beaune Les Ratausses that we taste shows this beautifully; Bize-Leroy describes it as “adorable”, which is hard to disagree with – sweet-fruited yet dainty and with a freshness that you wouldn’t expect of this warm year. 
 The 2013 vintage might not have been great for red Burgundy, with wines that were hard to taste in their youth with their tannin levels, but there are some wines “drinking beautifully now” in Bize-Leroy’s view. And this is something that I’ve seen time and again recently, with many bottles from this “off-vintage” really impressing over the last couple of years. 
As for the whites, the 1993 Meursault Perrières unashamedly stole the show. As Bize-Leroy said, it’s “une pure petite merveille” (literally “a pure little marvel”): this incredible Chardonnay kept evolving in the glass, offering such complexity that it is almost impossible to capture in words. Endless facets revealed themselves, with florals, fruit and the nutty tones from its age and a creaminess that drove a long, mouth-watering finish. Returning to the glass after five minutes, there’s a whole new layer that has opened up. It was stunning. 
Comparing a 2018 Auxey-Duresses and 2017 Meursault was a treat – the Auxey-Duresses taking more time to unravel in the glass, its delicacy needing air to emerge, while the tension of the 2017 offered more immediate pleasure. Although Bize-Leroy favours the Auxey, the Meursault won me over – a wine that made me smile with its sheer joy. 
Even for us, it’s rare to get the chance to re-taste these wines, so it was a particular treat to revisit her Bourgogne Blanc Fleurs de Vignes. This magical multi-vintage blend was first released in 2013, with the aim to craft the “ultimate Bourgogne Blanc”, partly due to the low volumes of Bourgogne made in the early 2010s. Combining Premier Cru Puligny-Montrachet (Champ Gain) fruit with village and regional plots from the vintages between 2008 and 2011, it’s an extraordinary wine that is gaining in complexity exponentially.
 Tasting with Bize-Leroy is a special experience. She’s precise in the way she tastes and talks about the wines, each word carefully considered and deliberate –that sense of familial pride shining through as she presents these newborns to the world. Once we’ve tasted, it’s on to lunch – a low-key affair, choucroute, elevated by the rest of the 2017 Meursault, for first and foremost Bize-Leroy crafts wines to be enjoyed at the table – and what wines they are.

Domaine des Comtes Lafon’s Montrachet is remarkable. The estate’s rare, famous flagship wine comes from a tiny plot – just 31.82 ares, less than a third of a hectare–at the southernmost point of the world’s most famous white wine vineyard, with Blanchot Dessus across the road, and right next door to plots belonging to Domaine de la Romanée-Conti. In fact, the plot is so tiny that in the low-yielding 2016 vintage, the property joined forces with DRC, Leflaive, Domaine Guy Amiot & Fils, Domaine Lamy-Pillot and Domaine Fleurot, pooling together their grapes to produce two barrels of Montrachet from their combined 1.25 hectares.   The Lafon family has owned their plot since 1918, however the vines were farmed by the Morey family for a long time. Indeed it was only in 1991 that Dominique Lafon officially reclaimed it. The vines here are very old, with the vast majority planted in 1953, and a small section planted in 1972.  These old vines bask in the sunshine, facing south, their roots on deep limestone soils that preserve minerality and freshness. The wine produced is remarkable. Tasting through a vertical back to 2001 at our recent dinner, the style really shone through: it is one of the richest and most powerful Montrachets, possessing both great concentration, yet also an amazing freshness that carries it through a long drinking window.  Being fortunate enough to drink through 15 vintages really highlighted the wines’ capacity to age. The top 2017, 2014 and 2010 vintages were a masterclass in Chardonnay perfected, but it was the supposedly “lesser” years such as 2006 or 2011 that showed the sheer class of both the site and the winemaking.  While Dominique Lafon has long been the face of the estate, we were joined by his daughter Léa Lafon who – alongside her cousin Pierre – is leading the estate into a new era. The new generation is looking to the future and continuing her father Dominique’s relentless drive for continual improvement and innovation, while protecting her father’s legacy. Her mission remains the same: to produce the greatest possible expression of a year, adapting as needed to that single window in time.  It was exciting to taste with Léa, who was incredibly open about the challenges the estate faced in the past. She explained how the domaine, over the last 20 years, has made important adaptations both in the vineyard and winery that has led, she believes, to big improvements in the wines today. One significant shift has been the reduced use of bâtonnage, producing a more precise, brighter, fresher style of wine. Her desire to continually improve shone through during our dinner and conversation, and it’s clear that the future of this estate is incredibly exciting.  Vertical of Lafon's Montrachet 2017: The first vintage of the evening did not disappoint. In fact it silenced the table, truly setting the tone for the evening ahead. A remarkably powerful rich nose unfurled with ripe lemon, honey, blossom and buttery roasted nuts. It was delicate and refined, yet with deep concentration and levels of dry extract that coat the mouth. Multi-dimensional, multi-layered with extraordinary potential, this is a remarkable effort and was one of the great wines of the night. 2015: This has a ripe nose, but took a little coaxing to showcase the bright, well-defined, rich, ripe fruit. It was dense, bright and full (indicative of the vintage?), but with huge depth and potential. The salinity wasn’t quite as evident as on other vintages from the same era, with this showing a more waxy, honeyed ripeness. Very satisfying and long, with a buttery finish.  2014: As expected, the 2014 leaps from the glass, almost making itself known before any swirling has begun. It was very ripe with pungent limes, lemons and a slight hint of herbs. Smokey and mineral, there’s a touch of struck-match and slate. Once again, the harmony of all the components – weight, concentration, dry extract, acidity – is remarkable. The classic Montrachet power and weightlessness is very evident, clearly a wine for the long-term but how special to try it in an early phase of its evolution. Saline and complex. Classy and rich, simply outstanding.  2013: Considerable reduction evident here, slightly outweighing the fruit and perfume. Lots of slate and struck-match dominated at first, but with air it was rich and bright, with well-defined flavours of honey, ripe lemon, hints of smoke, minerals and an almost chalky finish.  2012: This had a bright, energetic nose of ripe lemon and lime, with a hint of apricot. Everything is aligned and seems to be in perfect proportion – deeply concentrated, but light and fresh – very harmonious and complete.  2011: This was another vintage from this remarkable line-up of triumphs that outperforms the vintage, showing an unbelievable balance of bright, dense, concentrated fruit balanced by high acidity. On the palate, it feels like this could last forever. Lime and minerality hides in the background, with a slightly waxy and tropical finish. Long and memorable.  2010: Standing up to the reputation of the vintage, the ’10 delivers in abundance. It is ripe, but with underlying slatey, chalky, smokiness; tense, but with huge concentration and a core of rich stone-fruit character. Layered and textured, it’s captivating. The wine is complex with hints of honey and nuts emerging with gentle coaxing. The oak is perfectly resolved and integrated. Hugely impressive, standout.  2009: Corked sadly! Though evidence was there behind the TCA of a brilliant wine. 2008: Wow – this was sensational, with a captivating nose of ripe lemon, lime, honeysuckle and even a hint of guava and limey, oyster water. Intense, focused and concentrated, there’s layer after layer of viscous, dry extract balanced perfectly by massive acidity, with citric bite. Very mineral and multi-dimensional, it’s complete and faultless. Hard to say how this outstanding 2008 could be improved in any way at all. Stunning.  2007: More reserved than the very pronounced 2008, this offered fleshy pears, stone-fruit, lemon rind, with slightly less concentration than some of its counterparts, but remained perfumed and charming.  2006: The consensus was the 2006 was one of the stars of the evening – show-stoppingly good, emphasised by what is a fairly ordinary vintage in the Côte de Beaune. It was ripe, almost tropical, but with the characteristic saline, mineral, high-acid backbone found in the top vintages of this extraordinary wine. It was floral, ginger and orange-zest scented, while the palate is sumptuous, multi-layered and penetrates the whole way through. Weightless and powerful, it build to a nutty, saline finish. Extraordinary, it’s surely a contender for wine of the vintage.  2005: This was apparently a tricky vantage at Lafon, with some bottle variation Léa noted, but it was another outstanding ex-domaine bottle on the night. It offered a quieter nose than the sublime 2006, with hints of honeysuckle, candied apple, hazelnuts and ginger. It has a rich core of concentrated, dense, buttery, ripe nuttiness, which follows through to an elevated, slightly floral finish. 2004: Another challenging vintage for Lafon, with some bottle variation possible, the bottle on the night, however, was outstanding. With notes of limey, fresh apples, it has the characteristic marine, saline character, if not as pronounced as other vintages. It has a soft, slightly reticent texture, but an undeniable power, reminding us of the quality on show. Perhaps slightly shorter than previous vintages, but still superb. 2003: Completely not the expected profile for such a warm vintage, this was quite lean and high acid. It’s very pure and seductive, yet still with a saline note, pears, slightly candied apple, cream and a limey finish. Exceptionally long and satisfying. 2002: A very strong showing, this was bright and alive, with a mineral nose showing fresh citrus, with a more rounded and almost silky mouth-feel. With hints of pine nuts, minerals, slate, it was dense and rich but with balancing high acidity that makes for a wonderfully fresh palate and saline finish. Outstanding. 2001: This was perhaps slightly more mature than expected (not a perfect bottle), but was the right side of oxidised, with excellent depth and freshness. America’s native spirit has never been in greater demand. After years in the doldrums with production at record lows of 500,000 barrels per year, Bourbon is experiencing one of the greatest Cinderella stories in the modern spirits industry era. At last count, the number of barrels maturing in the United States had swelled to 10.3 million per year, which is a whopping 436% increase since 1999.   The reasons for the pendulum swinging back in Bourbon’s favour are multiple. The introduction of the first single-barrel Bourbon from the mid-1980s, coupled with the classic cocktail revival in the late ’90s to early ’00s, started to pique interest. Within a few short years, the Old Fashioned cocktail and brands like Blanton’s and Pappy Van Winkle were appearing front and centre in some of the biggest TV shows and films in America. Drinkers and the wider whiskey world were starting to wake up to the fact that Bourbon was a seriously good spirit. Producers couldn’t fill barrels fast enough. There was new dawn for high-priced, collectable American whiskey – and bottlings were soon like gold dust.   “Right now, in Kentucky, if I go to a liquor store, I can’t find our products on the shelves,” Drew Mayville tells me. “They are all gone. People have bought them or they don’t even make it to the shelf.”  Mayville has worked in the alcohol industry for over four decades, for the first 23 years at Seagram’s (before “it was put up for sale and my bubble burst”) and for the past 18 years at Sazerac, which produces some of the most coveted Bourbons on the market (think Pappy’s, Blanton’s, E H Taylor and Eagle Rare) at its Buffalo Trace distillery in Kentucky.   “People think [the Bourbon boom] happened overnight but it didn’t,” the Master Blender and Director of Quality says.   “I would say about 10 or 15 years ago it started to make its cycle back to favour,” he adds. “Even Pappy Van Winkle, which is one of the most sought-after Bourbons that we make, didn’t happen overnight.”   Mayville has witnessed the cyclical nature of drinking trends throughout his career and seen the various booms and busts in the United States as tastes moved from dark spirits to white spirits and back again. He believes one of the reasons Bourbon is so popular right now is largely down to its approachability.   “American whiskey tends to be very palatable,” Mayville explains in his Canadian drawl. “Scotch is more of a learned taste; lots of people drink Scotch around the world because they are so used to it.  “Part of the reason that Bourbon is very palatable is the corn. It provides a lot of that sweet fruitiness,” Mayville adds.   In order to be called Bourbon, the spirit needs to be made from at least 51% corn. The second grain in 95% of Bourbon produced is rye, which gives it a spiciness. The other 5% of Bourbon has wheat in place of rye – these wheated Bourbons are softer, as the fruit notes from the corn are accentuated by the addition of wheat. (Straight rye whiskey is also made from corn and rye, but with the rye dominating, meaning it can’t be classed as Bourbon.)   Contrary to popular belief, Bourbon can be made anywhere in the United States but 95% of Bourbon is produced in Kentucky. Bourbon must be distilled no higher than 160 proof (80% alcohol) and matured in newly charred oak barrels.   Despite its current popularity, Bourbon does have a long distilling tradition; it was first produced in Kentucky in the 1780s when distillers discovered charring barrels mellowed corn whiskey. After a strong start, Bourbon struggled during the two World Wars and was heavily affected by the temperance movement and Prohibition in the United States. Sales recovered by the middle of the century and American whiskey entered something of a golden age in the 1950s.  Unfortunately, this prosperous period was short-lived when drinkers once again turned their backs on brown spirits in favour of white spirits in the 1960s and early ’70s, kickstarting the vodka revolution that has only recently started to wane. This about-turn resulted in the first American whiskey surplus – known as a lake in world whiskey and loch in Scotland. Producers were left with gallons upon gallons of surplus whiskey and inevitable closures followed.   “We kinda skipped a generation and now we’re going back that way,” Mayville says stoically.  Now, with sales more buoyant than ever, there is a rush to ramp up production – fast. Sazerac is in the process of spending an eye-watering $1.2 billion on the Buffalo Trace distillery in Frankfort, Kentucky. A new column still, cookers and boilers are all being installed to double capacity. New, 60,000-barrel warehouses – the largest in Kentucky – are also being built every four or five months, at a cost of circa $30 million. This is scale on an unprecedented level.   Buffalo Trace is not alone in this endeavour. Producers of Old Forester and Woodford Reserve Brown-Forman are increasing their distillery space, and the makers of Four Roses have spent more than $50 million on expansion. Global spirits behemoth Diageo has also invested a reported $115 million on a new distillery and four warehouses with a total capacity of 330,000 barrels for its Bulleit Bourbon and other, as yet unannounced American whiskey brands.  “We’ve been making more and more every single year but it’s just never enough,” Mayville tells me.   “It’s a lot of money and it’s a big risk because if people don’t buy the product in 10 years from now, you’re going to have a lake of whiskey,” Mayville adds with knowing caution.   It’s hard to imagine the current Bourbon boom going bust when producers are showing such confidence in the category and bottlings such as Pappy Van Winkle Family Reserve can sell on the secondary market for upwards $20,000, but there are no guarantees.   For Mayville, this change in fortunes is a real boon but his real focus is on the quality of the liquid and innovation at the stills – the sales figures are somebody else’s concern.    “The part that really excites someone who has been around as long as I have is doing new things and innovation,” he says with glee. Much to this industry veteran’s delight, this creativity is championed at the very top of his organisation.   “We can go away, do experimentations, spend money, and not even tell anyone – and it’s actually encouraged,” he says, still clearly unable to believe his good fortune.  Mayville says the American drinks market is great at keeping him honest, always expecting something that wows and excites them.  “We’re always, always trying to innovate, embrace that change, and try and make better products,” he adds.“ We run so many different experiments, trying to make better whiskeys. It’s hard to list them because there are so many. There are thousands of barrels ageing right now that are experiments.”   One of his most recent experiments was the Colonel EH Taylor 4 Grain, which was named one of the best whiskeys in the world in 2017 by Jim Murray in his Whisky Bible.    “You can’t predict exactly what’s going to happen,” the Master Blender says humbly. “We’re doing so many experiments – another one could well be one of the best whiskeys in the world.”   With creative genius like Mayville at the helm of some of these distilleries, continually striving for quality, it’s hard to see the Bourbon gold rush ending any time soon. One thing that is for sure, though, is whiskey lovers and collectors will continue to scramble for what little Bourbon there is on the market until distillers can mine their liquid gold. When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial

The Macallan has become the most collectable Scotch whisky in the world. It consistently surpasses its own records at auctions and is known the world over as a luxury brand – even by those who know have little-to-no interest in whisky. The Macallan has come an awfully long way in its 200-year history. From its humble beginnings as two stills in a wooden outbuilding, the Speyside distillery has continually grown in size and prestige. Today, the Scottish whisky-maker calls a stunning £140 million state-of-the-art distillery home and continues to release remarkable long-aged whiskies from its vast stocks. This steady supply of exceptional single malts and rare bottlings, including its fabled #263 cask filled in 1926, has secured its reputation as a collectors’ must-have. But just how has The Macallan become such a tour de force and what should you know if you’re looking to add a bottle to your whisky collection? The history of The Macallan Based in Craigellachie in the Highlands, The Macallan distillery was founded in 1824 by farmer Alexander Reid and became one of the few licensed distilleries following the Excise Act of 1923. In 1868, James Stuart took over the distillery and rebuilt it. Stuart ran the site until 1892, when Roderick Kemp, a distilling giant who previously owned the Talisker distillery, took over and led the distillery to success. Kemp’s ancestors managed The Macallan for over a century, greatly expanding the distillery – increasing the number of stills from six to 21 between 1965 and 1975. In 1986, Suntory bought out a quarter of the stocks, with Highland Distillers buying out the rest in 1994. The distillery changed hands again in 1999, when Edrington took control. The Macallan has been largely responsible for the company’s unprecedented growth. Macallan’s reputation was built on the use of Sherry casks. Indeed, until 2004 it used exclusively Sherry casks, but then introduced the Fine Oak series, which was aged in ex-Bourbon and Sherry casks. The Macallan cask programme Today, The Macallan invests more per cask than any other distillery in sourcing, crafting, seasoning and caring for its casks – all under the watchful eye of Master of Wood, Stuart MacPherson. The entire process of creating a Macallan Sherry-seasoned oak cask takes approximately six years. Today, European and American oak are both used. Once felled at the optimum age (100 years for European and 70 years for American oak), the trees are left to air-dry for at least one year before they are cut into staves and transported to Jerez de la Frontera, Spain, where they are air-dried for a further 12 months, then coopered, toasted and Sherry-seasoned. All The Macallan whiskies are natural in colour – with nothing added and the only colour imparted by the long maturation in barrel. The curiously small stills  The Macallan boasts some of the smallest stills in Speyside. At just shy of 13 feet in height, the small and squat shape of the stills enables maximum copper contact and little-to-no reflux, resulting in the characteristically rich, fruity and oily new-make Macallan spirit. The 24 stills are also run incredibly slowly – at a trickle – and Macallan only takes 16% of the final spirit from the stills to fill its casks. When the new £140 million distillery was built in 2018, The Macallan commissioned the famous coppersmith company Forsyths to faithfully replicate the existing stills, down to the last dent. The 24 stills are designed to be exact replicas and the distillery maintains the new spirit will be unchanged. Kirsteen Campbell became the first female Master Whisky Maker in The Macallan’s near 200-year history in 2019. Campbell is squarely responsible for maintaining The Macallan’s distillery character and deciding which whiskies to pull from the archives. She was instrumental in the record-breaking Red Collection – a six-whisky set of superlative single malts, including two of the oldest released by the distillery. Campbell and her team are always looking at future-proofing the distillery, and run various barley trials. Currently, The Macallan uses Concerto barley and its own exclusive strain called Momentum that is grown on the estate and in other parts of Scotland and the north of England. The new £140 million distillery  Inspired by the great wineries across the globe, the Edrington team set out to build a distillery unlike any other in 2011. The project, led by Rogers Stirk Harbour + Partners – the architects responsible for Heathrow Terminal 5 and the Leadenhall Tower, or Cheesegrater, as it has become known – took seven years from idea to launch. It involved up to 400 people specialising in more than 20 different trades and cost £140 million. The result is an architectural marvel and has increased The Macallan’s distilling capacity from 11 million to 15 million litres a year. Easter Elchies House, located on the 485-acre Speyside estate, is still the spiritual home of the brand. At present, the old Macallan distillery, complete with its original 21 stills, has been mothballed but rumours swirl that it might resume production in the not-too-distant future. The Macallan and 007  The Speyside single malt has featured in two James Bond films. It first appeared – very heavily – in the 2012 Skyfall when M and Bond are both seen drinking Macallan. There is also the memorable scene between Javier Bardem’s Silva and Daniel Craig’s Bond when The Macallan 50 Year Old (the 1962 Fine & Rare) gets an extended amount of airtime, balanced in a shot glass on Sévérine’s head. A bottle signed by Bardem and Craig was later sold at auction, raising £9,635 for charity. The Macallan 18 Year Old makes a more understated appearance in the 2015 Spectre, on a table in James Bond’s apartment. The Macallan range The Macallan produces an extensive permanent range of whiskies, which include Sherry Oak (ranging from 12 to 40 years old), Triple Cask Matured (a trinity of whiskies aged 12, 15 and 18 years in European and American Sherry-seasoned casks), Rare Cask (single malts from the distillery’s library of Sherry-seasoned casks), the Masters Decanter Series (including M, M Black, Reflexion and No 6) and the Fine & Rare Collection. Limited releases (Edition, Anecdotes of Ages, Tales of The Macallan) The Macallan is arguably best known for its limited releases. These are one-off bottlings, often collaborations with artists and experts in their fields, and whiskies that are inspired by various stages in the distillery’s 200-year-history. Some of the most interesting limited releases include the 13-bottle Anecdotes of Ages collection. Each bottle of 1967 single malt features imagery of The Macallan Estate, created by British pop artist Sir Peter Blake and photographed by Mary McCartney. Only 322 bottles are available worldwide. The Archival Series is also worth highlighting. First released in 2015, with Folio 1, the series includes 24 individual bottlings that commemorate the distillery’s iconic advertising campaigns from the 1970s to 1990s. Today, a single Folio bottle can fetch upwards of £1,500. The Macallan has unveiled two highly anticipated limited releases over the past two years: the sixth and final Edition, and the first Tales of The Macallan. Prices for the complete Edition series (1-6), and individual Edition bottlings, have been steadily rising. The forecasted price for one of the 350 Lalique-designed Macallan Volume I decanters is £60,000. The Macallan also releases more experimental limited releases, like the Harmony Collection and A Night on Earth. The first Harmony Collection, unveiled in 2021, was the Rich Cacao expression, combining two of life’s pleasures: Sherry-matured whisky and chocolate. The same year, the distillery released its first A Night on Earth whisky, honouring Scotland and its legendary Hogmanay festivities. The seasonal release features illustrations from Japanese-French artist Erica Dorn. Cask #263 Without doubt, the most coveted bottles from The Macallan come from one hallowed cask: #263. The Sherry-seasoned cask, filled in 1926, slumbered for six decades until the precious liquid was filled into a mere 40 bottles in 1986. Of these, 12 were filled into bottles designed by pop artist Peter Blake and 12 were bottled in labels designed by Italian artist Valerio Adami; two were auctioned in blank bottles – one of which was later hand-painted by Irish artist Michael Dillion; and 14 were sold as part of The Macallan’s Fine & Rare Collection. Sporadically, and to great furore, these bottles have appeared at auction. One of the Blake bottles sold for £6,375 in 1991, an Adami fetched almost double that five years later, and another went under the hammer for $75,000 in the late 2000s. After this, things went quiet and speculation about the whereabouts of the bottles was rife – until a bottle of Blake and Adami sold for $1.2m in 2018. Unsurprisingly, this set in motion a veritable maelstrom of activity, and nine bottles have since changed hands. The Fine & Rare Collection The Macallan first launched the Fine & Rare Collection back in 2002, with a modest 37 different expressions. In the years that have followed, this collection has swelled to 57 different vintage bottlings from eight decades in the distillery’s history – making it the largest vintage-dated single malt collection in the world. The oldest bottling in the impressively vast Fine & Rare Collection is from the legendary 1926 vintage. The Macallan Red Collection The Macallan Red Collection is widely seen as the pinnacle of the distillery’s portfolio. Three of the six single malts are the oldest whiskies ever released by The Macallan – or any Scotch whisky distillery, for that matter. The entire collection – named after a colour that has a long association with The Macallan – is aged in Sherry-seasoned casks. The three oldest ongoing expressions (40 Year Old, 50 Year Old and 60 Year Old) join the three guest releases, which are the oldest in the distillery’s history (71 Year Old, 74 Year Old and 78 Year Old). Occasionally a lone bottle or an incomplete set of The Macallan Red Collection becomes available, but to find all six bottles is truly rare and exciting. Collaboration with Lalique on the Six Pillars Collection Over the course of one decade, The Macallan partnered with acclaimed French crystal maker Lalique on some truly memorable and collectable whiskies. In 2016, the Six Pillars set drew to a magnificent close with The Macallan in Lalique 65 Years Old . Only 450 individually numbered bottles were released worldwide. The first release in the collection, which began in 2005, was the 50 Year Old, followed by the 55 Year Old (in 2007), 57 Year Old (in 2009), 60 Year Old (in 2011) and 62 Year Old (in 2014).
